Many friends think that freshly ground coffee represents freshness, but it is not. In fact, in order to drink the aroma of coffee, not only must it be freshly ground, but also the roasting time of the coffee beans must be certain. FrontStreet Coffee has always emphasized the freshness of coffee beans. High-quality coffee beans must be fresh first. Because coffee beans basically lose any flavor more than 50 days after they are roasted, we will remind customers that the tasting period of coffee beans is within 30 days for every package of coffee beans sold, and the best tasting period is within 14 days after the bean raising period. This time, FrontStreet Coffee will talk about how we choose fresh coffee beans. Why do coffee beans need to be cultivated? How long is the shelf life of coffee and how to preserve coffee beans.

How to choose fresh coffee beans?

First of all, choose products from professional coffee roasters that clearly indicate the roasting date (not the expiry date or shelf life), have a good brand reputation, and emphasize fresh roasting. In addition, good coffee packaging bags usually have a "one-way exhaust valve" (a small button-shaped hole on the top of the coffee bag) design to allow the coffee beans to discharge naturally occurring carbon dioxide. Aim the one-way exhaust valve at your nose, gently squeeze the coffee bean bag, and smell the squeezed out gas. If it has a charming and fragrant coffee aroma, the freshness is not a problem. On the contrary, if the smell is not strong enough or even smells of stinky oil, it means that the bag of coffee has already deteriorated and stale, and you should avoid buying it. Every package of coffee beans sold by FrontStreet Coffee is packaged with a one-way exhaust valve, ensuring that each package of coffee beans reaches the hands of enthusiasts in the freshest state.

Why do coffee beans need to be cultivated? What is bean cultivation?

Approximately 2% of the weight of freshly roasted coffee beans is carbon dioxide, and these large amounts of carbon dioxide are emitted with the storage environment, equipment, or methods, making the pressure in the packaging higher than one atmosphere. The pressure helps the aromatic substances and oils fuse, allowing all the aromatic substances inside the coffee beans to reach a state where they can be easily extracted. Cultivation of beans is the process of "gas release", which is also commonly known as waking up beans, raising beans or ripening.

Because each roaster has different roasting techniques, different roasting depths, and different damage to the structure of the coffee beans, you can ask the store when purchasing. The recommended cultivation time for coffee beans sold by FrontStreet Coffee is: 5-7 days for light roasting; 3-4 days for medium-light roasting; 2-3 days for medium-dark roasting; if it is Italian beans for making espresso, the general cultivation time is about 15 days. Because espresso beans are deeply roasted, if the beans are raised for insufficient time, a certain amount of exhaust will occur when encountering hot water, which will affect extraction and cause unstable extraction. To grow beans, you only need to let the beans remain unopened in their original packaging in a cool, moisture-proof place so that the coffee beans can release carbon dioxide.

What is the difference between the tasting period and the shelf life of coffee beans?

Generally speaking, the best tasting period of coffee is after the coffee is roasted. After the beans are raised for 3 to 7 days, the flavor reaches its peak. After that, it will be lost over time, and only the woody flavor will remain. The first flavor substances to be lost are mainly volatile compounds such as floral and fruity aromas, while water-soluble compounds such as sugar, nuts, chocolate, etc. are relatively less volatile.

Therefore, the general coffee tasting period is recommended to be from the 4th to the 30th day after the roasting date. The expiration of the tasting period does not mean that the coffee cannot be drunk, but the flavor will be slightly inferior. This should be distinguished from the shelf life of coffee. Generally, the shelf life of cooked coffee beans is between half a year and one year.

How to store coffee beans?

1.Sealed moisture-proof tank

Place the raised coffee beans in a sealed, moisture-proof and light-proof jar and store them in a cool place. Be careful not to expose the coffee beans directly to the sun or place them in a humid place. Light will accelerate the volatilization of aromatic substances and shorten the tasting period of the coffee. If the storage place is too humid, a moisture-proof can will not be of much use. The coffee beans will easily become damp and produce an unpleasant flavor. In severe cases, they will become moldy. Most of the time, coffee shops put them in transparent sealed cans because of the beauty and display, and the coffee beans are consumed quickly, so it won't have much impact.

2.One-way exhaust valve tank

The one-way exhaust valve canister has the same principle as the one-way exhaust valve packaging mentioned above, expelling carbon dioxide while blocking outside air from entering.

3.Keep in original packaging

When there are no other containers to store, the original packaging is the best choice. The original packaging has a one-way exhaust valve and sealing strip. but! ! ! Be sure to pay attention to moisture-proof, moisture-proof, moisture-proof, the original packaging is very weak in moisture-proof function. It is recommended to consume coffee beans stored in the original packaging within 14 days.

Note: Do not store in the refrigerator

Coffee beans cannot be stored in the refrigerator! Because coffee beans absorb odor, they can easily absorb the smell in the refrigerator, and the moisture in the refrigerator can easily enter the packaging of the coffee beans, affecting the storage of the coffee beans.

Note: Do not grind coffee beans into coffee powder and store them

After being ground into coffee powder, the contact area between the coffee beans and the air increases, the oxidation is faster, the aromatic substances evaporate quickly, and the flavor disappears quickly, making the coffee mediocre.
