In the past, when we bought food, we would pay attention to the production date and then the shelf life, because it is common sense to try not to eat food that has passed its shelf life.

But when it comes to coffee beans, the production date also refers to the roasting date, which is the time when the green coffee beans are roasted. But we pay attention to the roasting date, not because we are afraid that it has expired, because the shelf life of cooked coffee beans is mostly between six months and one year. Under normal circumstances, a pack of coffee beans cannot be kept until it expires (unless it itself does not taste good).

So why do we still look at the baking date? To get the best flavor out of this bean, of course. Nowadays, most single-origin coffee beans are freshly roasted. This is related to the current roasting degree being lighter. The flavor of lightly roasted coffee beans dissipates much faster than dark roasted coffee beans. Generally, a comfortable aroma like flowers, fruits, cookies, etc. will begin to appear 1 week after baking. The comfortable aroma of lightly roasted coffee beans after 2 months has obviously weakened a lot, and is also accompanied by the smell of smoke, almonds, and grass. Therefore, for single-origin coffee beans used for hand brewing, a fresher roasting date will be pursued.

However, coffee beans that are closer to the roasting date are not necessarily the best tasting. There are two reasons. The first is to eliminate an appropriate amount of carbon dioxide, and the second is to reduce the "dry" feeling caused by baking. The biggest characteristic of freshly roasted coffee beans is that they have strong exhaust gas, and this "gas" actually refers to carbon dioxide. After the coffee beans are roasted, they will also begin to evaporate a large amount of carbon dioxide. The presence of carbon dioxide actually hinders our extraction of coffee.

Carbon dioxide in roasted coffee beans exists in the loose structure of the coffee beans. During the extraction process, the presence of carbon dioxide will prevent water from entering these fiber structures to dissolve the flavor substances in the coffee. The greater the carbon dioxide content, the stronger the obstruction to water.

Generally, the best tasting period of coffee is after the coffee is roasted. After the beans are raised for 4 to 7 days, the flavor reaches its peak. After that, it will be lost over time, and only the woody flavor will remain. The first flavor substances to be lost are mainly volatile compounds such as floral and fruity aromas, while water-soluble compounds such as sugar, nuts, chocolate, etc. are relatively less volatile.

Therefore, it is generally recommended that the tasting period of light roasted coffee beans is from the 4th to the 40th day after the roasting date. The cultivation time of dark roasted coffee beans or espresso beans takes longer, about 1-2 weeks. Therefore, the coffee beans shipped by FrontStreet Coffee are all roasted within 5 days. This way, it takes 1-2 days by express delivery to ensure that the coffee beans arrive at the customer's hands just after the bean-growing period, which is when the flavor is best.
