Mandheling is not the name of a production area, a place, a port, or a coffee variety. The origin of its name is actually a mispronunciation of the Mandheling ethnic group in Indonesia. Mandheling Coffee During the Japanese occupation of Indonesia during World War II, a Japanese soldier drank extremely fragrant coffee in a cafe, so he asked the shop owner the name of the coffee. The boss mistakenly thought he was asking where you were from, so he replied: Mandheling. After the war, Japanese soldiers recalled drinking "Mandheling" in Indonesia. So I asked Indonesian Coffee Passengers to transport 15 tons to Japan, and it turned out to be very popular. This is how Mandheling's name spread.

"Golden Mandheling" is often seen. What is "Golden Mandheling"?

Mandheling coffee became famous because Pwani Coffee Company (PWN) successfully launched Mandheling for sale in Japan. The owner of pwn company is the owner of the cafe mentioned at the beginning of Qian Street. Unlike many local green bean merchants in Indonesia, PWN is the exclusive supplier of high-grade gold Mandheling coffee. It has contracted the best Mandheling coffee producing areas in Indonesia, and the Mandheling beans produced are all of the highest quality. The golden Mandheling coffee that is always ranked in the upper right corner of the Front Street Bean List is produced by PWN Company. The sacks used for packaging green beans and certification certificates are also displayed in the Dongshankou store.

The wet planing method saves a lot of time and labor costs for green bean processing. However, the fast process also brings a high defect rate. Therefore, only strict hand selection can eliminate defects that cannot be screened by the machine. PWN Company will conduct one machine selection and three manual selections on the purchased Mandheling green beans. The quality is much higher than the highest G1 grade in Indonesia. It meets the PWN gold Mandheling production standards and needs to meet the following points:

1. The number of green beans is: one hand selection18-19Above the eyes

2. 300The number of defective beans in Kesheng bean samples is less than3a

3. The grade of green coffee beans isG1level

4. Dark green in color, uniform in size and neat in shape

Before Front Street launches a coffee bean, it will taste the coffee in the form of cupping. Cupping is an evaluation of the quality and flavor of coffee beans. Unified standards can more objectively find out the advantages and disadvantages of the flavor presented by the beans, as well as their characteristics. After cupping on the front street, Lin Dong Mandheling ration beans showed a rich nutty tone, with a hint of melon aroma in the back. After the temperature dropped, the herbal flavor emerged, with a mellow taste and saturated aroma. PWN Golden Mandheling not only has the aroma of dark chocolate, nuts, and caramel, but also has the flavor of herbal spices and pine wood. It has a sweet aftertaste of dark chocolate, a full aftertaste, high cleanliness, and a gentle fruit acidity after the temperature drops.

What kind of Golden Mandheling is it?

There are many varieties grown in Indonesia. The original coffee variety grown in Indonesia was Typica, which was recognized as having a good flavor. It was introduced by the Dutch at the end of the 17th century. In 1877, almost all coffee trees in Indonesia were seriously affected by leaf rust, and large areas of Typica trees withered. In order to solve this dilemma, the Indonesian government introduced Robusta varieties with stronger disease resistance from Africa and other places. Until now, Robusta is still the main variety in Indonesia.

In order to increase coffee production, Indonesia continues to introduce various disease-resistant varieties from other countries. Among them, Tim Tim, Bor Bor, and Catim series Ateng, which are a mixture of Robusta and Arabica, have good disease resistance and have adapted to the terroir of Sumatra, showing a unique aroma of cedar. At present, Ateng and Tim Tim account for 70% of Sumatra coffee. The Indonesian Lindong Mandheling ration beans on Front Street are Tim Tim mixed with Ateng, and the Golden Mandheling is selected from Ateng, which is what we call Katim.

Sumatra style semi-washed method——wet planing

The year-round humidity in Indonesia is between 70% and 90%. If water is used to process coffee, the green beans will become moldy and spoiled in the humid air before they are completely dry. So they developed a semi-water washing method that greatly shortens the processing time. In the wet planing method, a peeling machine is used to remove the outer skin of the coffee cherries, and then the coffee cherries are poured directly into a pool to ferment briefly for a few hours. At this time, a small amount of pectin will remain on the bean shells, and the pectin is removed by scrubbing. The shelled beans are then dried in the sun. When the green beans are dried for the first time and reach a moisture content of 30 to 40%, the coffee farmers will sell the green beans to buyers. Buyers will shell the purchased semi-dry shelled beans directly to accelerate drying and remove pectin and shells to obtain green beans.

Obviously, wet planing shortens the fermentation period of the coffee beans, reduces the acidity, increases the mellowness, and increases the grassy and herbal flavor. The "naked beans" will still absorb moisture in the hot and humid air, forming the unique "muffled aroma" of earth, herbs, and cedar wood in the Sumatra region. After roasting, it has a rich burnt aroma of dark chocolate, caramel, and nuts. FrontStreet Coffee baristas will taste its aroma in the form of hand brewing.

Front street hand brewing suggestions

Brewing water temperature: 87~88 degrees

Coffee powder: 15 grams

Pink to water ratio 1:15

Filter cup: KONO filter cup

Grinding degree: medium-coarse grinding (Chinese standard No. 20 screen pass rate 70%)

The brewing method uses a three-stage water injection method. The three-stage water injection can better express the mellow taste of golden Mandheling coffee and the sweetness of caramel.

In the first stage of steaming, 30ml of water is injected. This stage of water injection fully wets the coffee powder and exhausts it, so as to better extract the flavor substances of the coffee later.

In the second stage, 100ml is injected. This stage is mainly to flush out the golden foam of Mandheling and raise the powder layer.

The last section is filled with 95ml of water in the soft center, which can enhance the sweetness of the coffee.
