Compared with the rich acidity of Central and South American coffee, most Asian coffees have woody, herbal, spice and other flavors, and the low flavor is much higher than the rising fruit acidity. Among them, coffeeIndonesian Mandheling coffeeThe most representative.

Mandheling coffeeThe origin of

Indonesia, the "Country of Thousand Islands", is a coffee-producing country with a long history. Coffee planting originated in 1696. After 300 years of development, coffee planting is still produced by small farmers, mainly using organic planting, and hand-picking and selecting coffee beans to ensure the quality of coffee. Coffee is grown all over the islands in Indonesia, and the flavor has its own characteristics due to different geographical environments. Arabica with elegant flavor is mainly distributed in northern Sumatra, Sulawesi, and higher altitudes of Java Island. Although it only accounts for about 10% of Indonesia's coffee production,Mandheling、Golden Mandheling, Sulawesi coffee, aged Mandheling, etc. have made Indonesian coffee famous in the fine industry for decades.

Indonesian coffee originated from the island of Java. At present, coffee has been mainly distributed in other islands. Sumatra, Bali, and Sulawesi, which we often hear, are all important local coffee-producing areas. Sumatra coffee is a legend in the coffee world. It is one of the earliest large-scale coffee planting areas in the world. Most of them come from Aceh Province in the north and North Sumatra Province (referred to as North Sumatra) south of Aceh Province. The two main production areas surround the famous local volcanic lakes, Lake Toba and Lake Tawa, which are traditionally called the Lindong production area and the Aceh production area. Volcanoes have brought fertile soil to Sumatra. The coffee here usually has aromas of cream, chocolate, and earth. It was discovered by the Japanese many years ago.

It is said that during the Japanese occupation of Indonesia during World War II, a Japanese soldier drank extremely fragrant coffee in a cafe, so he asked the shopkeeper. The boss mistakenly thought he was asking where you were from, so he replied: Mandaining. After the war, the Japanese soldiers recalled the "Mandheling" they had drunk in Indonesia, so they asked local people to transport 15 tons of it to Japan. It turned out to be very popular, and the name of Mandheling spread.

What creates the unique flavor of Indonesian coffee

Sumatra is located on the equator and has a typical island tropical rainforest climate. It is rainy and humid all year round, with frequent typhoons, and fresh water resources are scarce. Local people cannot process large batches of coffee beans using the traditional washing method, let alone drying them in the sun for a long time. Therefore, in order to adapt to such extreme environment, local coffee farmers developed a shorter processing method - wet planing method. The so-called wet planing means "forcibly" planing away the parchment covering the green beans before they are completely dry, so the green beans complete the final drying in a "bare" state.

The wet planing method differs from the traditional washing method from the beginning of fermentation. The wet planing method requires less water and a short fermentation time. After this short fermentation, a small amount of pectin will remain on the bean shell. When the green beans are dried for the first time and reach a moisture content of 35/40%, the coffee farmers will sell the coffee beans to the buyers. The purchaser will directly shell the purchased semi-dry shelled beans to remove the pectin and shell to obtain green beans. Although the time of each step is greatly shortened, the "naked beans" still absorb moisture from the hot and humid air, so the Mandheling coffee produced has a dull aroma of wood, herbs, and spices. Two items on the Front Street Bean listMandheling coffeeThey all use the wet planing method. After baking, they present rich chocolate, brown sugar, and nuts, and the aftertaste presents a herbal tone.

Indonesian coffee beans classification

Wet planing brings a unique flavor spectrum to Indonesian coffee. At the same time, the rough processing method also makes the coffee beans have a higher defect rate. If you want to reach the grade of Indonesian export, you must go through screening and remove irregular particles.

Indonesian green beans are graded according to the number and size of defective beans. Indonesia's general quality requirements are beans without live insects, mold or rancidity, and a maximum moisture content of 12.5%. The impurity rate is less than 0.5%. According to the defect rate grading (based on 300g), the grade standard is mainly divided into 6 grades, namely G1-G6. PWN Company, which has done the best in the screening process, strictly follows one machine selection + three manual selections of G1 grade Mandheling to ensure that defective beans are completely eliminated and the defect rate is greatly reduced. In addition, PWN Company will also put the green beans in a machine for density and color screening before packaging to make the golden Mandheling coffee uniform and translucent.

After Front Street bought the high-quality Golden Mandheling coffee, I couldn’t wait to taste it through cupping after roasting. The coffee tasted super clean in the mouth, with clear and thorough aromas, obvious sweetness, and mellow and solid coffee.

Brewing recommendations:

Brewing water temperature: 87 to 88 degrees

Coffee powder: 15g

Pink to water ratio 1:15

Filter cup: KONO filter cup

Grinding degree: medium-coarse grinding (Chinese standard No. 20 screen pass rate 70%)

The brewing method uses a three-stage water injection method. The three-stage water injection can better express the mellow taste of golden Mandheling coffee and the sweetness of caramel.

In the first stage of steaming, 30ml of water is injected. This stage of water injection fully wets the coffee powder and exhausts it, so as to better extract the flavor substances of the coffee later.

In the second stage, 100ml is injected. This stage is mainly to flush out the golden foam of Mandheling and raise the powder layer.

The last section is filled with 95ml of water in the soft center, which can enhance the sweetness of the coffee.

Is Mandheling coffee suitable for making espresso?

First of all, Front Street needs to emphasize that Mandheling coffee is a single-origin coffee with outstanding flavor and can be extracted in various ways. Espresso coffee refers to coffee beans that are finely ground and properly powdered, using a semi-automatic or fully-automatic coffee machine, using high temperature and high pressure to extract strong coffee in a short time.

Although single-origin coffee can express a rich taste in hand brewing, it is not so easy to operate when it comes to espresso extraction. Since espresso amplifies various flavors, slightly adjusting the parameters will affect the flavor of the coffee. For example, the bright and moderate acidity in Pour over(V60) coffee can easily become sour in espresso, and the mellow taste of Pour over(V60) coffee can easily become bitter in espresso. Therefore, for different extraction methods, Front Street recommends using the corresponding coffee beans for production to avoid excessive negative taste and waste. For hand brewing, buy hand brewed single products, and for espresso, use Italian roasted blends or soe coffee beans.
