Australian white coffee "Flat White"
It is also called Aorui white coffee, small white coffee, Fuli white coffee and other names, originating from Melbourne, Australia. After the Italians introduced espresso to Australia in the 1980s, the milk coffee drink was modified to suit local tastes. Because the thin milk foam was flush with the cup surface, it was named Flat White.

Like latte and cappuccino, Australian white coffee is only a combination of espresso and fresh milk. It is a very popular Italian coffee drink in recent years. Compared to a latte with a balanced taste, Australian White Coffee pays more attention to the rich aroma of the coffee itself and highlights the coffee flavor in its production. Compared to cappuccino with rich milk foam, Australian White Coffee has a thin and delicate milk foam layer and a smooth taste, making it easier to drink the coffee liquid.
Where does Australian white coffee come from?
Regarding the invention of Australian White, Australians and New Zealanders have different opinions, insisting that the drink comes from their countries, and the recipes for making Australian White coffee produced by baristas in the two countries are also different. Although we really cannot know which country Australia White comes from, what is certain is that this drink stems from everyone's pursuit of higher quality coffee.
Before the 1970s, Australian coffee shops used methods such as French presses and manual drip filters to brew black coffee. In the early 1970s, the Italians brought espresso machines to Australia, officially starting a new wave of coffee trends. Compared with traditional latte and cappuccino, Australians are pursuing milk drinks with thinner milk foam and stronger coffee flavor. So milk coffee began to be continuously "improved" in Australia, New Zealand and other regions. When the milk foam on the milk coffee became flatter and flatter, until it became a thin layer, the full cup was completely flush with the cup rim, so it was named Flat White. Flat means "flat", and white refers to white coffee with milk added.

Since the 1980s, Australians have put Flat White on their regular menus, and soon it spread to cafes in Europe, the United States and other countries. Flat White has become a popular product in China because Starbucks introduced it in 2015 and named it "Flat White" as one of its flagship drinks, which means that this milk coffee has become mainstream.
Back to the drink itself, Obai highlights the flavor of coffee by adding milk. Coffee is the protagonist and milk is only an auxiliary. Therefore, in terms of taste, the coffee flavor is more abundant and richer. In addition, the upper layer of milk foam is light and thin, so that every sip of espresso liquid has a velvety dense foam layer. The moderate temperature and small cup size can quickly drink up the milk foam before it is separated. In addition to the difference in cup size and the thickness of the milk foam, in order to more perfectly express the better aroma of the coffee beans, the barista replaced the base with a double Ristretto and incorporated milk foam that is about the same thickness as a latte into a 150ml cup.

Proportion parameters of Australian white coffee
In order to present a richer coffee flavor, Australian white coffee needs to start from three aspects: milk foam, milk ratio, and espresso base.
1.Milk foam
The "Flat" in Australian white coffee means flat, which means that the prepared Australian white coffee must be so thin that it is flush with the rim of the cup, and the milk foam layer cannot be allowed to bulge. Under normal circumstances, the milk foam of latte coffee will have a bulge of about 1cm, while the milk foam of Australian white coffee can only be about 0.5cm, otherwise it will be difficult to achieve a "flat" liquid level. Regarding the specific thickness of the milk foam, each coffee shop is different. In order to allow customers to taste the upper layer of coffee oil to the greatest extent, some baristas will directly heat the milk without foaming it and inject it into the espresso.

2. Espresso base
The espresso base used in Australian white coffee is not the common Espresso, but the Ristretto, which has a richer taste. Australians believe that the back section of Espresso will "dilute" the coffee flavor, so they only extract the middle and front sections and "limit" the extraction of the back section, so it is called Ristretto. The front and middle part of Espresso reduces the extraction of macromolecular carbohydrates and highlights the acidity and roasting aroma of coffee.

For example, Espresso produced by Front Street will use 20 grams of coffee powder to extract 40 grams of coffee liquid as the base, while Ristretto will use the same 20 grams of powder to extract 28 to 30 grams of coffee liquid, "discarding" the subsequent extraction.
3. The proportion of milk
The Australian white coffee that pursues a rich taste will add a smaller proportion of milk to the espresso. The specific amount of milk depends on the cup size produced by the store. Imagine if you use the same milk ratio as a latte, the overall taste is more like coffee-flavored milk. For example, the ceramic cup of the Australian white coffee produced at the Front Street store is 200ml. If two portions of Ristretto are 30g as the base, 170g of hot milk needs to be added to present a richer and fuller coffee flavor.

Make a cup of Australian white coffee
Now that you understand the major characteristics of Australian White Coffee, let’s make a cup of Australian White Coffee in front of the street according to the process produced by the store.

First, dry the powder bowl of the handle with a clean towel, turn on the grinder, grind 20 grams of coffee powder into the powder bowl, and pat it flat.

Use a powder spreader to spread the powder layer evenly, and then use a powder hammer to evenly compact it into a compact powder cake.

Turn on the extraction switch and release water, moisten the brewing head and take away the stuck coffee grounds. Gently buckle the handle onto the brewing head and start brewing and extracting. Pay attention to the extracted coffee liquid weight and time. When the electronic scale shows that 28 to 30 grams of coffee liquid has been extracted, and the time is about 27 to 28 seconds, you can pull the extraction switch. Pour two portions of Ristretto into the preheated Australian white cup.
Pour 170ml of fresh milk into the milk vat. The dense milk foam after whipping will be about 5mm. Gently shake the Ristretto base in the cup to evenly and fully incorporate the whipped hot milk.

The flavor expression of Australian White Coffee is based on the coffee beans used in each store. The espresso produced in the Front Street store uses the "Front Street Sunflower Warm Sun Blend Coffee Beans" roasted by Front Street itself. The extracted Espresso presents the aroma of whiskey, vanilla, cream, and berry-like acidity. After being fused with milk, the Australian White Coffee has the taste of chocolate milk and whiskey-filled chocolate. It has a mellow and mellow mouthfeel and a long-lasting aftertaste.
