Adding sugar and milk is a coffee drinking habit that has been formed in the past hundreds of years. The reason is that Mandheling, Brazil, Colombia and the Blue Mountains all traditionally use dark roasting. Yirgacheffe beans are small, and the fruity and sour taste of lightly roasted coffee opens up a new world of coffee.

The African continent is vast, with an average altitude of 750 meters, and is known as the "Plateau Continent". Africa has many mountains, volcanoes, lakes and rivers. Because it straddles the equator, it is mainly tropical, with an average annual temperature of above 20°C. Africa, which has rich natural resources, has a developed agricultural industry. Many countries are famous for producing coffee, such as Ethiopia, Kenya and Tanzania. Among them, Ethiopia is also recognized as the birthplace of coffee and is also the largest producer of Arabica coffee in Africa.

Ethiopian coffee has a very high reputation in the global coffee market. The country has countless native coffee varieties. Coffee can grow in Ethiopia because the country provides an ideal geographical environment and climate for coffee cultivation.

Ethiopia is located in the northeastern part of Africa. Its territory is dominated by mountainous plateaus, most of which belong to the Ethiopian Plateau. The central and western parts are the main body of the plateau, accounting for 2/3 of the country. Moreover, the Great Rift Valley of East Africa runs through the entire territory. The average altitude of the mountains is nearly 3,000 meters, while the average altitude of Ethiopia is 2,450 meters.

Affected by the high altitude, the country has an average annual temperature of 16°C and a large temperature difference between day and night. The country is roughly divided into a dry season and a rainy season, with an average annual rainfall of 1,237 mm. Ethiopia has nearly 50 volcanoes, abundant water resources and high-altitude mountainous areas, making it an ideal coffee growing area.

At present, Ethiopia is divided into 12 states and 2 autonomous administrative regions, and is divided into 10 coffee producing areas, including many world-renowned coffee producing areas, such as Sidamo, Jima, Harrar, Guji and Yirgacheffe. Among them, Guji and Yirgacheffe originally belonged to the Sidamo producing area, but became an independent coffee producing area due to their unique flavor.

In terms of administrative division, Yirgacheffe is currently a small town in the Southern Nationalities State. The terrain of this area is rugged and complex, bordering Abaya Lake to the west. It has been a wetland since ancient times, with abundant water resources, a humid and mild climate, and abundant rainfall. The coffee planting altitude is 1,750-2,200 meters. The fertile land and sufficient sunlight make the area very suitable for coffee cultivation. Front Street Coffee has a washed Ethiopian Yirgacheffe coffee bean. As an entry-level selection, it has a jasmine fragrance, lemon-like acidity, orange, berry and other fruit flavors, and a refreshing and silky taste.

But the Yirgacheffe coffee producing area not only includes the small town of Yirgacheffe, but also includes Wenago, Kochere, Gedeb and other sub-producing areas. Among them, Wenago is located about 26 kilometers north of Yirgacheffe town, while Kochere is located in a small production area about 25 kilometers south. Gede is also a township, 60 kilometers away from Yirgacheffe town.

Ethiopia's economy is dominated by agricultural industry, so the scale of coffee planting is mostly small-scale farmers such as courtyard coffee (field coffee). Coffee and other crops are grown near the coffee farmers' residences. The farmers take care of them on a daily basis and pick them themselves during the harvest season. They are then purchased by middlemen or sent to nearby processing stations by the farmers themselves. Therefore, the coffee here is mostly sold under the name of the sub-production area or the name of the processing plant (usually the name of the village where it is located), such as the Yirgacheffe Kocher coffee beans of Front Street Coffee and the Yirgacheffe Tintin Cooperative coffee beans.

In the early days, the Yirgacheffe production area mainly used the more traditional sun-drying method.

In 1972, in order to improve the quality of coffee, the Ethiopian government introduced the washing method commonly used in Central America and opened a washing treatment plant in the Yirgacheffe region. The washed Yirgacheffe coffee has a very prominent flavor, with unique flavors such as white floral aroma, citric acidity and fresh green tea flavor. It is similar but significantly different from Sidamo coffee beans, so Yirgacheffe has become an independent production area.

At present, the region also pays attention to the production of washed coffee beans. However, with the continuous development of specialty coffee, the Yirgacheffe region has also begun to try other processing methods, such as refined solarization, anaerobic slow solarization, etc., which also have good performance.
