Ice-drip coffee and ice-brewed coffee are also called water-drip coffee, and are called Ice Drip coffee in English. They are a way of making coffee drinks. Cold brew coffee, as it is generally referred to, is brewed by soaking ground coffee beans in room temperature water for up to ten hours. After that, special filter paper or filters are needed to separate the water and coffee components. There is also a kind of ice-drip coffee that uses ice cubes to naturally melt into ice water, and then drips it into the coffee powder drop by drop to extract the coffee. This process is very slow and often takes several hours. Therefore, the price of ice-drip coffee is more expensive, but the taste is excellent. They are two completely different coffee brewing methods from the Pour over(V60) coffee we commonly use.
Ice-drip coffee, as the name suggests, is coffee brewed with low-temperature water. The Pour over(V60) coffee we usually drink is brewed with high-temperature water. The two are completely different operations! The advantage of high-temperature extraction is that it can quickly extract the flavor substances of coffee, causing the tannic acid in the coffee to quickly decompose into pyroacid, resulting in sweetness and sourness, which is the process of releasing the flavor of coffee that is often said on the street. The disadvantage of high-temperature extraction is that it easily causes the coffee flavor to be completely released, and then begins to release the taste of the woody fiber of the coffee beans, which is what we often call unpleasant flavors such as miscellaneous flavor and woody flavor.

Low-temperature extraction of coffee is to use near-zero ice water extraction to reduce the volatilization of the coffee flavor under low temperature conditions, and store the coffee aroma in the coffee liquid as much as possible. When you drink it into your mouth, the temperature of the coffee liquid rises, and the aroma contained in the coffee liquid suddenly explodes, allowing coffee drinkers to feel the strong aroma at the back of the tongue in the mouth. This sudden burst of aroma will give people a great sense of happiness. The disadvantage is that it takes a long time to make, and the filtered ice-drip coffee cannot be drunk immediately. It needs to be kept in the refrigerator for more than 8 hours, so that the flavor molecules extracted at low temperature can be fully released.

Slightly fermented ice-drip coffee has a faint fermentation aroma and a thicker taste. Since it is not extracted through high temperature, the impurities in the coffee are extracted relatively less, and the caffeine is slightly lower; but some friends say that because the extraction time is longer, the caffeine will be higher. In fact, this statement is also recognized by Front Street. After a long time of extraction, caffeine cannot be underestimated. Therefore, if those friends who are affected by caffeine are afraid of not sleeping well after drinking iced coffee, they can choose decaffeinated coffee. The Colombian Swiss washed decaffeinated coffee on Front Street is also very good!
Origin of iced drip coffee
Iced coffee originated in Europe. Since the coffee distiller was invented by the Dutch, some people call it Dutch Coffee, espresso or drip coffee. "In the 1600s, Dutch sailors were carrying coffee back to Europe from the then-colonial Indonesia. They couldn't drink hot coffee because there was no hot water on the ship, so they came up with ice-drip coffee. Coffee extracted with cold water has a soft, smooth taste and fragrant aroma. Not only the crew, but also ordinary people like it."

Although iced coffee is called Dutch coffee, it has no deep connection with the Netherlands. On the contrary, it has a deep connection with Japan, so it is also called Kyoto coffee. When the owner of Kyoto Hanabusa Coffee was reading a coffee book, he read about the local people's method of brewing coffee in Indonesia, a Dutch colony at that time, and was very interested in this method. Based on the description in the book at that time, he developed an ice-drip device with the help of a chemistry student at Kyoto University and a medical device company. He wanted to reproduce the Indonesian brewing method, and thus invented ice-drip coffee. Later, it became popular in Europe and the United States. Because Europeans and Americans were not aware of this history, they simply called it Kyoto coffee.
In Western countries, including the Netherlands, they mainly use the so-called "Cold-Brew" immersion method (soaking coffee powder in cold water for a long time) instead of the Japanese drip method (extraction method in which ice water is dropped drop by drop). Moreover, there is no so-called Dutch Coffee in the West.

Drinking coffee mainly means drinking the flavor you like. If you brew it yourself, you will definitely choose the coffee beans you like. There are many kinds of coffee beans. Although all coffee beans can be used for hand brewing, can all coffee beans be used for ice dripping? Front Street believes that it is possible under normal circumstances, but if some coffee beans are used for ice dripping, the taste may not be as good. Front Street believes that when making ice-drip coffee, it is better to choose some representative single-origin coffee beans. Ice-drip coffee is extracted by infiltration and extraction of cold water for a long time, such as beans with strong characteristics such as Kenya and Yerga. The coffee extracted in this way will be very personalized. Of course, Front Street sometimes chooses two or more blended beans to make iced coffee. Ice-drip coffee has more aroma and a more delicate and subtle flavor than cold-brew coffee.
How to choose coffee beans for iced drip coffee
This is Front Street’s introduction to several types of coffee beans with more typical flavors. You can refer to them:
1. Tropical fruit and fermented wine aroma types
Specially processed coffee beans: For example: Front Street Mozart coffee, which has the sour and sweet taste of dark berries, plus the wine aroma produced by being matured at low temperature, which makes the overall taste better; Front Street Colombia’s Huayueye Coffee, Honduras’sherry coffee, Costa Rica’s strawberry sugar coffee has a very distinct aroma, and it can also be made using ice hand brewing or cold brewing methods.

2. Refreshing and clean type
The refreshing and clean type of coffee beans must be from Africa, such as: coffee from the Yirgacheffe producing area in Ethiopia,Kenya Azalea Coffeeetc; but Panama's washed flower butterflyGeshaThe blended beans also have a unique flavor!

3. Sweet and delicious type
The above two types of coffee beans are medium-light roasted, and dark roasted coffee may be more used for Italian coffee. But Front Street tried to get Indonesian onesGolden MandhelingLet's make ice-drip coffee. After adding ice cubes, it will have a rich chocolate sweetness and a fermented aroma, without being bitter at all. If you can't accept the "heavy flavor" Mandheling coffee, Front Street believes that Brazil's Queen's Manor can also present the flavor of nuts and chocolate, and it also has a smooth creamy taste when diluted with ice cubes.

4. Flavor blending types
Italian coffee is mostly made by blending, so ice-drip coffee can also be used. In addition to using single-origin beans with clear flavors, iced drip coffee can also choose to blend two or more single-origin beans. For example, Front Street tried to combine Honduran lychee orchid coffee and Geisha Village Red Label coffee. The lychee orchid processed in wine barrels is combined with the Geisha Village Red Label coffee processed in the sun. It has a light brandy aroma, plum-like acidity and the sweetness of maple syrup. When made into ice drops, you will feel the faint aroma of brandy, and the rich fruit acid leads to the sweetness of honey and smooth creamy taste.
How to use an ice drip coffee maker
We can usually see a variety of ice dripping pot devices on the Internet, with different materials and shapes, but they are generally inseparable from the upper, middle and lower parts, and are also divided into four main structures: upper pot, valve, powder cup, and lower pot.

The upper container is mainly used to hold ice cubes and water. There is a metal object attached to the bottom. This is a valve that can adjust the water outlet diameter to change the speed of water droplets, so that the ice water drips evenly into the coffee powder. The cup-like glass pot in the middle is used to hold ground coffee powder. There is a filter hole in the middle of the bottom, which can drip out the extracted coffee liquid. The large pot below is to collect the extracted coffee.
The front street here chooses a store that is more popular in Costa Rica.mozart coffeeTo make, Mozart coffee beans are processed with raisin anaerobic honey. The flavor is the sweet aroma of raisins, osmanthus, and fruit fermentation. Ice-drip coffee can make the fermentation feeling more obvious.

In terms of grinding degree, Front Street generally chooses the same grinding degree as ice hand brewing. Since low-temperature water reduces the extraction rate, the coffee will be ground finer to improve its extraction. This bean uses China's No. 20 standard sieve with a 85% sieving rate. According to the grinding degree of the Front Street store, it is ground on the 9-scale of the ek-43s grinder.
Generally, we first calculate the extraction parameters. Using a powder-to-liquid ratio of 1:10, 60 grams of coffee extracts 600g of coffee liquid. The ratio of ice-water mixture is 1:1. The flow rate of the valve is controlled at 7 drops every 10 seconds. Drip filtering is usually completed within 6-8 hours. (Usually the ratio of ice drops is 1:10-1:12, you can adjust it according to your own taste)

Place a round filter paper on the bottom of the medium pot and cover it with water. Then grind the coffee beans into powder and pour it in. Pay attention to spreading it evenly to ensure even extraction. Also put a round filter paper on the surface of the powder layer to prevent water droplets from dispersing the powder layer. The powder layer needs to be moistened with cold water before dripping, which can save extraction time and avoid uneven extraction in the early stage.

Place the powder cup on the rack and begin filling it with a mixture of ice and water, usually half ice and half water. Adjust the flow rate of the valve to 7 drops/10 seconds, and align the water droplets of the main drip filter with the position where the coffee liquid is filtered out. After the trickling filtration is completed, pour the contents of the lower pot into a sealable container, such as a glass bottle used in Front Street, and place it in the refrigerator for fermentation for more than 12 hours. You can usually drink it the next day.

After being refrigerated overnight, Mozart coffee will have a fermented feel like wine, with the sweet and sour taste of tropical fruits such as berries and pineapples. The taste is rich but not bitter. After diluting it with ice cubes, it will feel like drinking a glass of refreshing fruit wine.
Front Street Brewing Coffee Suggestions:
Regarding coffee brewing, Front Street has always believed that the freshness of coffee beans has a great relationship with the flavor of coffee. Therefore, the coffee beans shipped by Front Street Coffee are all roasted within 5 days. The purpose of Front Street Roasting is "freshly roasted and good coffee", so that every customer who orders receives the freshest coffee. The bean-growing period of coffee is about 4-7 days, so the flavor is at its best when customers get it.

For those who need to grind the coffee beans, Front Street would like to remind you that if the coffee beans are ground in advance, there is no need to raise the beans. Because during the transportation process, the pressure generated by the carbon dioxide in the packaging can also make the coffee flavor mellower, so you can make a cup of coffee immediately after receiving the coffee powder. But the coffee powder needs to be brewed in time, because the coffee powder oxidizes quickly when exposed to air, which means that the flavor of the coffee will dissipate relatively quickly, and the flavor of the coffee will not be so good. Therefore, Front Street recommends buying whole beans and grinding them freshly, so that you can better taste the flavor of the coffee.
