Iced Pour over(V60) coffee is actually a "quick-cooled Pour over(V60)", which is hot coffee brewed normally. The coffee liquid is turned from "hot" to "cold" in a short time through ice cubes (adding ice to quickly cool down).
Of course, just like going to a coffee shop to drink coffee and learn at the same time, it is difficult to reproduce the exact same taste just by observing the barista's movements. The difficulty lies in the parameters. No matter which coffee extraction method is used, the parameters that need to be paid attention to are grinding degree, water temperature, powder-to-water ratio, and time. If you use the method of brewing hot Pour over(V60) coffee and put it directly into iced Pour over(V60) coffee, the final coffee will become very weak and lack of flavor.

Therefore, the first parameter to be changed is the ratio of powder to water. According to the principle of making it thicker before brewing by hand, if you add less water, the coffee liquid you get will be richer, and after adding ice cubes, it will not be too light. But at this time, the second problem arises. The amount of water is insufficient, that is, the substances that should be extracted in the later stage are not extracted, and the extraction rate is insufficient. In this way, the concentration is enough, but the flavor is insufficient.
At this time, there are two parameters that can be adjusted, namely grinding degree and water temperature. By adjusting the grinding degree, the coffee particles can more easily release coffee substances; by increasing the water temperature, the extraction efficiency can also be improved. You can choose to adjust the grinding degree, the water temperature, or both according to the actual situation. Front Street recommends adjusting the grinding speed first. Adjusting the grinding speed will affect another passive parameter - prolonging the extraction time, which is in line with the purpose.

The principle is almost explained. As for how much to reduce the ratio, how fine the grinding is, and how much ice to add, there is no standard answer, but you can refer to the answer sheet on Front Street. When we have the same type of coffee beans, we don’t actually have to “move” all the parameters home. If we want to make the iced hand brew we drink in the store, we only need to learn a “universal formula”:
Ice hand brewing = coffee powder (finely ground) + 10 times hot water + 5 times ice cubes.

Regarding the filter cup, if you like rich and bright fruit acidity, you can choose a conical filter cup, such as V60; if you like the round and balanced tone of coffee, you can give priority to a flat-bottomed cake filter cup to improve the effect of soaking and extraction. In addition, try to choose large ice cubes so that they are not easily melted by the hot coffee too quickly.
As the saying goes, choosing the right coffee beans means half the battle is won. For iced hand brewing, Front Street will prefer light to medium roasted fruit acid type. The production areas are Ethiopia, Panama, Colombia, and Costa Rica. This type of coffee is mostly processed by sun exposure, honey treatment or anaerobic fermentation. The iced coffee can often show a good aroma and a refreshing taste.

If you want to drink iced hand-brew with a tea-like aroma, buy Front Street Flower Butterfly; if you want to drink floral aroma, buy fruit diced; if you want to drink iced hand-brew with ripe fruit aroma, choose Front Street Xizhao and Front Street Strawberry Candy; if you can't stand the sour taste, I recommend Front Street PWN Yellow Mandheling. The rich and mellow taste is also very suitable for making iced coffee.

For today’s demonstration, Front Street chose the recently popular Front Street Alo Hattesa. This bean is produced in Bansha Town, Ethiopia and is sun-dried. Regardless of whether it is hot or cold, it always presents an elegant magnolia floral fragrance, a tropical juice flavor, and a candy aftertaste. Front Street’s light-roasted iced Pour over(V60) coffee uses the following parameters:
Amount of powder: 15g
Water injection volume: 150ml
Ice cubes: 100g
Grinding degree: EK43s scale 9.5 (pass rate of No. 20 screen 85%)
Water temperature: 92 degrees Celsius
Filter cup: V60
First, put ice cubes into the sharing pot, then put the filter cup and filter paper on it, and pour in the coffee powder. First pour 30ml of water and steam for 30 seconds.

Inject 60ml of water into the second section. The water injection method is to circle outward from the center and then return to the center. When the water in the powder layer is almost finished filtering, start the third stage of water injection, inject 60ml, and the water injection method is the same as above. Extraction time is 1 minute 30 seconds - 1 minute 50 seconds.

By shaking the ice cubes and coffee liquid, you can feel the temperature with your hands. When it is cold enough, you can start enjoying it.

Front Street Sunshine Alo, which is brewed in this way, first tastes the sweet and sour taste of yellow peach, sweet orange, preserved fruit, and dried mango. The overall aroma tends to be yellow stone fruit. Due to the stirring action, the coffee is not only rich in fruit acid, but also has a refreshing sweetness. When cooled by ice cubes, it is like drinking a glass of refreshing grape juice.
