When it comes to sun-dried coffee, many people will first think of the Front Street Oiran Coffee with a particularly beautiful name. It has a good flavor and an affordable price, so it has become everyone's daily ration.
During the coffee harvesting period, coffee farmers in the Sidamo region only pick ripe red fruits and put them into baskets one by one. After picking, the coffee fruits are uniform in size, similar in maturity, and contain no other impurities. During the processing process, defective coffee beans and immature or overripe coffee cherries must be manually screened. Then spread the coffee berries flat on a raised wooden frame or a whole shelf to dry in the sun. This can avoid the risk of the beans being placed on the ground and contaminated with odor.

During the exposure process, they are constantly turned to ensure even drying so that the coffee beans can be evenly exposed and lose water; every three to five days, coffee farmers will manually screen out defective and moldy beans. After the peel has dried and hardened, use a peeler to remove the dry and hard peel. After obtaining the green coffee beans, in order to pursue the perfect taste, the coffee farmers will do a final screening.

What is "Oiran Coffee"? Why is it called "Oiran"?
Before "Oiran Coffee" became "Oiran", it was actually a competition-level award-winning coffee from Ethiopia. In February 2017, when Ethiopian DW Coffee Company participated in the TOH (Ethiopia National Taste of Harvest competition) organized by the African Specialty Coffee Association, it selected a sun-dried coffee bean from the Buku Abel Processing Plant in Hambera, Sidamo, and won the crown in the sun-dried category that year with its rich berry aroma and creamy texture.

In the same year, the winning batch was picked up by a green bean trader in Beijing. Because of its status as the champion, it was named "Oiran" and launched into the domestic market, which means "the leader of a hundred flowers, the most beautiful one." Immediately afterwards, this "Oiran" was used as a competition bean by a coffee brewing competition contestant (China region). He defeated all the opponents who used Geisha and won the runner-up that year. This was also the first time that the Oiran "became famous" in China.
As the popularity of the competition continues to soar, this traditional sun-dried coffee from the Buku Abel Processing Plant has also successfully made its "debut". With its affordable price and pleasant flavor, it has quickly become a high-quality Ethiopian coffee widely recognized by people in the industry.

Oiran, if we look at it literally, we might think it is a cup of coffee that is "overflowing with floral fragrance". In fact, this is not the case. The floral aroma of Oiran is not particularly strong, but the aroma of fruits is particularly prominent, such as creamy strawberry, mango, jackfruit, citrus, blueberry, etc. It has the unique ripe tropical fruit flavor of Sidamo sun-dried beans, which often leaves a deep impression on people. Moreover, it was this fragrant berry fragrance that allowed "Oiran" to win the first place in the TOH green bean competition that year.

But everyone knows that coffee is essentially an economic crop. The yield and quality of that year will first be affected by climate rainfall, altitude soil, fertilization and weeding, and other factors. Then, depending on the details of the processing process (sunshine time, temperature, humidity), it will show different flavor tonality, and Oiran is no exception. Therefore, the taste of Oiran beans produced each year will be more or less different from that of the previous year.
Are sun-dried Oiran coffee beans suitable for making soe?
Front Street Oiran has become the daily ration of many players because of its full fermented fruity aroma and the unique mellow sweetness of sun-dried coffee. It also makes players who have espresso machines at home eager to try it. They can personally reproduce a cup of Oiran SOE Latte or SOE Americano of the same style in the coffee shop. Just thinking about it is already satisfying.

According to Front Street, choosing a coffee bean suitable for SOE extraction will not only make delicious espresso easily, but also add water or milk to make Americano or latte coffee with twice the result with half the effort.
Front Street Oiran coffee has two styles, corresponding to different roasting curves. One is a medium-light roasted Oiran for cold brewing and hand brewing, and the other is a medium-roasted Oiran suitable for espresso machines and moka pots. For example, if someone likes simplicity and convenience and prefers cold brewing, or pursues a sense of ritual and extracts by hand, then they can choose medium-light roasting; if you prefer coffee creme, or want to create delicate patterns on your latte, Front Street recommends SOE’s roasting curve.

Extraction parameters of SOE Oiran espresso
Coffee beans: Ethiopian Oiran 8.0
Amount of coffee powder: 20g
Coffee liquid volume: 40g
Powder to liquid ratio: 1:2
Extraction time: 26~32 seconds
Grinding scale: Galileo 2.0 grid

The coffee machine used in Front Street has a double powder bowl capacity. It requires 20 grams of coffee powder each time. The powder-to-liquid ratio for extraction is 1:2, which means that 40 grams of coffee liquid can be produced within a reasonable time. Generally, the single extraction time will be controlled between 20 and 35 seconds.

Before extraction, we need to dry the powder bowl first, turn on the grinder, grind out a double portion of coffee powder, place it on an electronic scale and measure the increase or decrease until it weighs 20 grams. Then use a powder spreader to spread the coffee powder, and use the tamper to press vertically downward to fill the coffee powder cake tightly to ensure more stable coffee extraction.

Then turn on the extraction switch and let in water for 1 to 2 seconds to moisten the brewing head and take away the coffee grounds stuck on it. Place an electronic scale under the cup where the Espresso is connected, return the weight to 0, and place it under the brewing head during extraction.

Gently snap the handle onto the brewing head and start turning down the extraction switch. Observe the changes in the extraction liquid. When the electronic scale shows that 40 grams of coffee liquid has been extracted, and the time is about 30 seconds, pull down the extraction switch.

Extracted oiranSOE concentrate has dense oil foam and the fragrant sweet and sour tropical fruits of the underlying coffee liquid, as well as a soft light floral aroma., add 160g of ice water or warm water at a ratio of 1:4 to become a refreshing SOE Oiran Americano; friends who like milk coffee can also add 240g of whipped warm milk at a ratio of 1:6 to soften the taste of the espresso, and finally get a cup of SOE Oiran Latte that is like a creamy strawberry cookie.
