It can be said that Pour over(V60) coffee is an extraction method that combines the advantages of quality, speed and convenience. It only takes a short time to fully express the flavor of the beans. This is the most popular “dish” in many coffee shops!

Whenever a customer chooses Pour over(V60) coffee at the Front Street store, Front Street will always ask the customer whether he wants it to be cold or hot. If guests want to drink the flavor of beans, Front Street will recommend hot brew. Many customers are puzzled by this: why do you need to drink hot Pour over(V60) coffee if you want to enjoy the flavor? Can't it be cold?

Why do you have to drink hot food if you want to drink flavor?

In fact, this matter is easy to understand. We only need to know the brewing logic between the two, and we can figure out why we need to drink hot brew if we want to drink flavor~

Just like most Italian coffee, Pour over(V60) coffee is brewed first hot and then iced. In the production of ice brew, the most widely spread is Japanese ice brew, which is the cooling method of adding ice and cooling that we use today. You know, Japanese ice hand brewing is an improved brewing method based on hot hand brewing. We can first take a look at the difference between the two brewing parameters. Take the parameters for brewing light roasted beans in Front Street as an example:

The parameters for hot brewing coffee are: 15g powder; coarse sugar grinding (10 scale of Ek43; 80% sieving rate of No. 20 mesh); 92°C water temperature; 1:15 powder to water ratio (that is, 225ml hot water for 15g powder); brewing time is about 2 minutes.

The parameters for iced coffee are: 15g powder; grinding of fine sugar (9.5 scale of Ek43; 75% sieving rate of No. 20 mesh); 92°C water temperature; 1:10:6 ratio of powder to water and ice (that is, 15g of powder will be paired with 150ml of hot water and 90g of ice); the brewing time is about 1 minute and 30 seconds.

It can be seen that the parameter used in hot brewing is a golden cup extraction golden ratio, which can extract the flavor substances in the coffee relatively completely. Compared with hot brewing, ice brewing will be ground finer. At the same time, it adds ice cubes and uses less hot water, so its brewing time will be relatively shorter.

The reason for this difference is to achieve a rapid cooling effect on the coffee. However, if you brew according to the original proportion and add ice cubes, it will obviously reduce the powder to water ratio and dilute the coffee concentration.

Therefore, the Japanese used a high-concentration and low-extraction method to improve the extraction efficiency by finer grinding and increasing the powder-to-water ratio, thus obtaining a cup of high-concentration coffee. Then add an appropriate amount of ice cubes to dilute it, so that you can get a pot of iced Pour over(V60) coffee with the same concentration as hot brewing!

But doing this is to build up concentration. In order to release the flavor substances in the coffee as completely as possible through brewing, sufficient water volume and time are indispensable. Even if the grinding is finer and the extraction efficiency is higher, the entire brewing cannot proceed to the later stage because there is too little hot water. Without the support of the later material, the performance of flavor and finish will obviously be slightly weaker.

Therefore, the flavor performance of ice hand brewing is weaker than that of hot hand brewing. If you want to drink the complete flavor expression of the beans, hot hand brewing is the best choice~ The advantage of hot hand brewing is not only the complete flavor expression, but also its aroma will be more prominent. In addition, the taste and flavor of coffee are in a constant changing process from the time when the coffee is just extracted at 70°C until it cools down. In other words, we can enjoy a very rich level of changes during this period, which is also a major advantage of hot brewing coffee.

Of course, Front Street is not saying that ice brewing is inferior to hot brewing, but that in terms of the flavor expression of beans, hot hand brewing will be better. There are also many advantages to brewing with ice. Although the flavor, layering, and aftertaste are not as good as those of hot brewing due to the abandonment of the final substances, it will taste cleaner and sweeter because there are no final substances added. The most important thing is that the feeling brought by low temperature will be very refreshing! Have a bite in the summer and it won’t be too comfortable!

Finally, Front Street found that many friends like both the richness of hot coffee and the refreshing cleanliness of iced coffee, so they asked if there are any coffee beans that can produce a full flavor. The answer is yes, and we recommend them in two categories.

If you like coffee with rich floral and fruity aromas, give priority to purchasing the three Pour over(V60) beans, Front Street Xipaw (passion fruit, grape, apricot), Front Street Oiran (guava, strawberry cream), and Front Street Strawberry Candy (rose, raisin, berry), which are very popular among home users;

If you don’t like sourness, then Front Street believes that you can start with medium-dark roasted coffee beans. If it is not sour at all, buy Front Street PWN Golden Mandheling; a little sour with a nutty aroma, we recommend Front Street Queen’s Manor and Front Street Bird of Paradise.
