I don’t know if you still remember, but Front Street shared an interesting topic with you last year - "Why do some coffee shops charge extra for ice cream drinks?"
The reason is that the price of iced hand brewing in some coffee shops is more expensive than hot hand brewing, so recently some customers and friends always cautiously ask when ordering: "Does it cost extra to make iced hand brewing?" Front Street believes that this is a very interesting phenomenon, so he also gave a corresponding answer.

The reason why many coffee shops sell iced coffee is more expensive, not because the ice brewing process is more complicated, but because it requires the use of more coffee beans. Therefore, in terms of selling price, the price of Bingchong has increased due to the increase in costs. Immediately afterwards, the guest friend asked the second question:
"Then why does it need to add powder to make ice cream?"
Good question! The purpose of adding powder to ice brewing will vary depending on how the coffee is made, but we can all summarize it as making the iced coffee served to customers more delicious!
Because Front Street often shares tweets about Bing Shou Chong in the past two days, I believe that all of my friends are somewhat familiar with the practice of Bing Shou Chong. Conventional ice brewing is what Front Street has always shared. By directly adding ice cubes to cool down the coffee, you can quickly and easily get a cold and refreshing pot of hand brewed coffee.

But one disadvantage of this approach is that we cannot use a large amount of hot water to completely dissolve the flavor substances in the coffee like hot hand brewing. Instead, reduce the amount of water and increase the ratio of powder to water to obtain a pot of highly concentrated coffee. Only in this way will the texture of the coffee not be reduced due to the melting of the ice cubes. The picture below shows the hot and ice brewing parameters used by Front Street. You can take a look at the difference between the two.
Hot hand brew | Ice hand punch | |
Amount of powder used | 15g | 15g |
Brewing water temperature | 92°C | 92°C |
Grinding degree | 10 scale of ek43 | 9.5 scale of Ek43 |
Pink to water ratio | 1:15 | 1:10 |
Use ice cubes | 0 | 100g |
Brewing time | 2 minutes | 2 minutes |
Although they both use 15g of coffee powder, the amount of water used for hot brewing and iced brewing is completely different. The ratio of powder to water for hot brewing is 1:15, and we need to inject 225ml of hot water during brewing; while for ice brewing, the ratio is 1:10, and the hot water that needs to be injected is 150ml, and then mixed with about 100g of ice cubes.

Compared with hot brewing, the amount of water injected in ice brewing is reduced by 75ml, so the amount of coffee liquid brewed will be smaller, but the concentration will be relatively high. After being diluted by ice cubes, it will become a cup of iced coffee with normal concentration and suitable extraction rate. The cup size is about 200ml, which is exactly a cup of coffee for a single person.
However, the ratio of Front Street is relatively small, because the ice cubes used by Front Street are larger and harder, and their melting speed will not be very fast. Therefore, a relatively small ratio can be used to make the coffee flavor as complete as possible.

The ice cubes in some coffee shops are not that thick and are smaller, so they melt faster. If you use the same powder-to-water ratio as Front Street for brewing, the resulting coffee will be over-diluted due to the rapid melting of ice cubes after a short period of time, and it will taste bland and thin, just like a cup of coffee-flavored water. If you don't want such a negative situation to occur, the store must use a larger powder-to-water ratio when brewing, and brew stronger coffee to balance the dilution of the ice cubes. For example, 1:7 or 1:8.
A larger powder-to-water ratio means less water is injected, which means less coffee is produced in the end. When the liquid volume is too small, the coffee can easily be finished by the customer in two sips. Therefore, some coffee shops will increase the liquid volume of coffee by adding powder to maintain the cup size within a certain range so that customers will not finish it in two sips.

Of course, in addition, there are also businesses that increase the amount of powder purely to give the coffee a better texture. By adding powder to increase the dissolved flavor substances, the taste of coffee will be richer and the taste will be fuller. The overall texture of iced coffee will be improved as the amount of powder increases.

If you haven’t tried it before, Front Street recommends that you try it, that is, fix the ice brewing parameters except the amount of powder, and then increase the amount of powder by 2~3g for brewing~
Finally, I would like to share with you a purchasing guide for iced Pour over(V60) coffee beans:
Theoretically, all coffee beans are suitable for making iced hand brews. Among them, those who want outstanding flavor should first choose single-origin coffee, that is, beans from a single origin country such as Front Street Blue Mountain, Front Street Gesha, and Front Street Oiran. Since there are so many varieties to choose from, if you place an order hastily, it will easily lead to us buying a lot, so we must first determine a rough taste.

If you like iced coffee with fresh floral aroma and bright acidity, you should buy Front Street Fruit Ding Ding; if you want Pour over(V60) beans with full juice, the first choice is Front Street Cherry Tomato; for those who can accept the fermentation feeling, we recommend buying Front Street hope Jiao and Front Street Strawberry Candy; if you don’t want any acid, the first choice is Front Street PWN Golden Mandheling.
You can now buy the above coffee beans online at the Taobao store “FrontStreet Coffee” (前街咖啡).
