IndonesiaMandheling coffeeIt conquers the world with its rich and mellow taste, caramel, and dark chocolate-like flavors. This is also the reason why everyone thinks Mandheling coffee is delicious. This kind of medium-dark roasted coffee beans has very low acidity and obvious bitterness. It is very suitable for coffee friends who like a mellow taste. Of course, Japanese people also enjoy it! Speaking of Japan, there is a story about Indonesian Mandheling coffee. Let Front Street tell it to you!

Coffee was first planted in Indonesia in 1696, when the Governor of Malabar gave Arabica as a gift to the Dutch Governor in Batavia (today's Jakarta, Java). The first bean seedlings planted were washed away by floods. In 1699, the governor of Malabar, India, sent a second batch of bean seedlings. The first coffee harvest was in 1701, opening a new era of Indonesian coffee.

Why is it called Mandheling?

MandhelingThis ethnic group was originally located in the Lindong area of Aceh Province. It was rich in rubber and did not grow coffee trees. So today'sMandhelingHow did the name come from? I’ll explain it to you below.

A Japanese soldier drank a very delicious coffee during the colonial period, so he entrusted the rubber production department in northern Jiangsu (then pwn company) to help him find this kind of coffee. The person in charge of pwn went to many producing areas to collect many high-quality coffee beans and sent them to Japan for tasting. This is the origin of the name Mandheling.

Indonesia is a traditional coffee-producing area with a long history, and the coffee here has formed a unique regional flavor. Mandheling coffee beans are the classic representative of Indonesian coffee. In Front Street’s ration bean series, Front Street chose Mandheling from the Lindong origin as the flavor representative of Indonesian coffee.

[Front Street Grain Series is a group of cost-effective wines from production areas. It may not be as good as the wines from well-known estates in some aspects, but from this group, you can drink the main flavors of major production areas in a cost-effective way, thus making coffee new. You can determine the production area you like at a very low price. In the same production area, water washing is the main factor for the same production area. For flavor, sun-drying increases the flavor on the basis of water-washing. Therefore, Lanshan recommends drinking water-washed grains, and it is recommended to drink dried-flavored grains, such as Gesha. Front Street Grains express the basic flavor of the production area, so except for half-drying in Basin, they are all water-washed. Water washing is the most basic flavor of a place of origin, which is why the food grain series are all water washed. 】

Characteristics of Lin Dong Mandheling
Lintong Mandheling is produced in the Lintong Mountains in north-central Sumatra, near Lake Toba. FrontStreet Coffee's entry-level beans from the Mandheling production area in Indonesia come from here. Lin Dong Mandheling also uses a unique wet planing method, which creates its characteristics of low sourness and high alcohol content.

Indonesia has high temperatures and humidity all year round, lacks long-term sunlight, and the humidity is as high as 70-90% all year round. Therefore, it is obviously unrealistic to rely on pure sunlight for processing. For Sumatra, where the weather is changeable, even if the coffee beans are washed, it is difficult to spare a week of sunshine for drying, so the humidity The planing method came into being. After the previous washing process, the coffee beans with the sheepskin are exposed to the sun for 1-2 days, so that the moisture content of the coffee beans reaches 30-50%, and then the sheepskin is removed for sun drying. This can speed up the drying speed of the coffee beans and greatly shorten the drying time.

Mandheling coffee is very easy to identify in terms of flavor and bean phase, because the wet planing process removes the sheepskin of the coffee beans that are still in a semi-soft and semi-hard state. Under intense sun drying, the coffee beans are prone to bursting and forming a "sheep's hoof" shape. Therefore, they are also called sheep's hoof beans and are not defective beans.

Mandheling hand washing method suggestions

Mandheling coffee beansUsually dark roasted, showing a mellow and fragrant taste. Therefore, Front Street recommends choosing a Kono filter cup. Because this can improve the mellow taste of coffee beans, if you don’t have one, you can use a V60 filter cup instead.

The amount of powder is 15g per person. It is recommended to keep the coffee beans for 4-7 days (the roasting date is the first day), so that the coffee brewed will have a better flavor.

In terms of coffee grinding, the grinding degree for brewing Mandheling coffee is slightly coarser than that of light-roasted coffee beans. This is because the deep roasting used by Golden Mandheling has a looser structure and is easier to absorb water and release coffee substances. If it is ground to the thickness of light-roasted beans, it is easy to produce a burnt and bitter taste; if it is ground coarser, the coffee will become thin and tasteless, and the taste will be as thin as water. The thickness is 70% for No. 20 screen.

In terms of water temperature, Front Street recommends using a water temperature of 87-88°C for brewing. Many reasons for the burnt and bitter taste come from the water temperature being too high. Of course, water temperature that is too low will also make the coffee tasteless.

In terms of brewing powder to water ratio, Front Street recommends using 1:15, although some brewing methods recommend using 1:13 or a smaller powder to water ratio, so that the drink will taste richer. However, part of the reason for reducing the ratio of powder to water is to avoid the bitter taste at the end. Correspondingly, it will also have an impact on the aftertaste. Front Street believes that as long as the relationship between water temperature and grinding degree is properly grasped, using a powder to water ratio of 1:15 can better reflect the overall flavor of Mandheling.

The brewing method uses the commonly used three-stage water injection method. The three-stage water injection can better express the mellow taste of Mandheling coffee and the sweetness of caramel. The specific amount of water injection is divided into 30ml of steaming water in the first stage. This stage of water injection fully wets the coffee powder and exhausts it. In order to better extract the flavor substances of the coffee later, 100ml is injected in the second stage. This stage mainly flushes out the golden foam of Mandheling.

The last section is filled with 95ml of water in the soft center, which can enhance the sweetness of the coffee and give it a thick and mellow taste as a whole, with the sweetness of caramel and the flavors of chocolate and nuts.
