The acidity of Mandheling coffee is very low, but you can still detect it if you taste it carefully. Richness is the strongest impression of Mandheling coffee on Front Street. The jumping slightly acidic flavor is mixed with the fragrant herbal and dark chocolate flavors. It is indeed the best coffee.

So, let’s learn about Mandheling now with FrontStreet Coffee!

History of Mandheling coffee cultivation in Sumatra

Sumatra is the second largest island in Indonesia with a permanent population of approximately 55 million, but it is one of the largest production areas on the island. The Sumatra production area accounts for approximately 74.2% of Indonesia's coffee production, while Indonesia's second largest production area accounts for only 12% of the country's production. However, Indonesia was not originally the origin of coffee, but was imported to the island by the Dutch government after the Portuguese conquered it in the early days of Dutch colonization. Two centuries later, World War II was in full swing. In order to solve the food and clothing problem of the local people, a large number of coffee crops were replaced by rice, corn, cassava and other such crops. In 1950, local coffee production was only one-eighth of what it was before the war. But since then, coffee crops have become the mainstay of the local economy.

 Mandhelingorigin of name

Talking about SumatraMandheling coffeeI have to mention the origin of the name Mandheling. Mandheling is not the name of a production area, a place, a port, or a coffee variety, so how did its name come from?

In fact, the name Mandheling was originally the name of a small place in Sumatra, and later gradually evolved into the name of an ethnic group - Mandheling. Many people know about Mandheling coffee and have heard the story of the origin of the name Mandheling, but few know that it was actually first discovered and named by the Japanese, which is why it is famous today. The coffee shop owner in the story was the one who exported the first batch of Mandheling coffee beans to Japan. He discovered the business opportunity of Mandheling coffee and established PWN Coffee Company in 1957. Pawani Company mainly purchases local coffee batches with higher quality and has developed a strict multiple screening system to ensure that the coffee beans sold are neat and even, and the particles are large and full.

What is Mandheling?

Strictly speaking, coffee beans produced in the Lake Toba region (located in northwest Sumatra, Indonesia) are called "Mandheling". The best coffee in Sumatra comes from two places. One of them is the Mandheling coffee in the Lintong area, which is located in the area near Lake Toba on the island of North Sumatra. Famous coffee, the coffee planting height in Lintong area averages between 1,200 and 1,500 meters in the production area. The coffee is grown by small tenant farmers under the shade trees, and uses the wet peeling processing method to show a unique flavor and a lively and rich flavor.

That coffee merchant is now the famous Pwani Coffee Company (PWN). Indonesia’s local PWN Company (Pwani Coffee Company) is also the first green coffee merchant to cooperate with Japan.

PWN Golden Mandheling Coffee

Indonesia's Pawani Coffee Company is the processing company of Golden Mandheling. Since "Golden Mandheling" is registered as a trademark by it, Golden Mandheling has become exclusive to PWN.

What is the difference between Golden Mandheling and Mandheling? Mandheling is the finest among Indonesian coffees, and Golden Mandheling is the finest among Mandhelings. The Golden Mandheling produced by PWN Company is characterized by a strict screening system, large and uniform beans, and a cleaner taste. The Mandheling coffee, which is carefully selected by hand and has full grains and bright color, is definitely the role beauty in coffee. In fact, in order to improve the problem of high levels of Mandheling defective beans, the Japanese began to adopt careful quality control a long time ago, and after four manual selections, defective beans were eliminated.

The quality of PWN Golden Mandheling is also reflected in the price. In order to obtain higher profits, some merchants will purchase a batch of ordinary Mandheling coffee beans, select suitable coffee bean particles according to the specifications of Golden Mandheling, and even use four manual hand selections to remove defective beans, so that they can be as close as possible to PWN Golden Mandheling in appearance, thereby selling them at a good price.

Some friends are worried that what they are buying is not authentic PWN gold Mandheling coffee beans. In fact, they can ask the merchant to provide relevant certificates. FrontStreet Coffee stores also have relevant certificates hanging on the walls. One is a certificate provided by PWN; the other is a sack certificate of golden Mandheling green beans, with the PWN logo printed on it.

Lam Tung Mandheling Coffee

Lam Tung Mandheling is a high-quality Mandheling produced in the Lam Tung region. It represents the flavor of regular Mandheling, with larger beans and harder beans. If you are trying Mandheling coffee for the first time, you can start with Lin Dong Mandheling coffee. FrontStreet Coffee's bean list has more than half a hundred varieties of single-origin beans. Many friends who are new to specialty coffee will feel dazzled and even have no idea where to start. Front Street has launched a series of ration beans, which basically cover the main production areas in the "golden coffee growing belt". Most of them adopt the water-washing method, allowing coffee novices to quickly understand the flavor of the production area at a very high cost performance.

Mandheling coffee processing method

Mandheling's unique wet planing method, also known as Wet Hulling, also known as Giling Basah in the local language, is a traditional Indonesian coffee processing method. Judging from the names alone, wet planing and wet processing (washed processing) are very similar. However, the cupping flavors of these two processing methods are completely different. Coffee processed by wet planing is usually mellow and strong, with a very distinctive personality.

What breed is Ateng?

It sounds like Ateng is a very unfamiliar type of coffee bean, but attentive friends have long seen Ateng on the label on the golden Mandheling bag on our front street. FrontStreet Coffee’s golden Mandheling bean variety for the 2020 new production season is “Ateng”.

ateng

In fact, Ateng is also called Katim. Only Katim grown on the mainland islands of Sumatra and Indonesia can be called Ateng. Katim is not a purebred Arabica bean as we often say, but a cross between Tim, a Robusta species, and Catura, a variant of Bourbon species. It was originally developed in 1959 and began to be promoted in Brazil in the 1970s and 1980s. With its disease resistance and high yield, it occupies a place among Central and South American coffee varieties. The coffee leaf rust crisis that breaks out from time to time in Central and South America has also fueled the application of Katim coffee beans. It is characterized by high yield, short plants, can be planted densely, and new leaves are reddish brown, making it very suitable for planting and flavor development in the Aceh region. However, due to its fast maturity and high yield, adequate fertilizer supply and shade must be required. According to Front Street, its lifespan is very short, with an average of only ten years.

Mandheling coffee flavor characteristics

Mandheling has a rich, sweet, pure bitter, mellow flavor with a little sweetness. Since Mandheling coffee beans themselves do not have much acidic properties, they will not have an unpleasant sour taste after being kept warm for a long time or brewed into iced coffee. After roasting, the coffee beans have larger particles. The green beans are brown or dark green, with a special caramel-like aroma and a mellow and rich taste. Most coffee lovers in general like to drink single-origin coffee, but it is also an indispensable variety for blending coffee.

AndGolden MandhelingDue to the removal of defective beans, the taste is very clean and the sweetness is obvious. Front Street has purchased a number of non-PWN gold Mandhelings. Front Street’s baristas can clearly identify PWN gold Mandhelings during cupping. This is becausePWN Golden MandhelingThe clean taste and obvious sweetness are unmatched by other "Golden Mandheling".

Front Street recommends how to brew Mandheling coffee

Filter cup: KONO

Amount of powder: 15g

Gouache ratio: 1:15

Grinding degree: Chinese standard No. 20 screen pass rate 70%

Water temperature: 88℃

Steam with 30g of water for 30 seconds. Slowly add water to 125g with a small flow of water for segmentation. Then slightly increase the flow of water and slowly brew to 225g. Total extraction time: 2 minutes.

Of course, some friends are curious, because Mandheling coffee is so bitter, what grinding level should be used to brew a delicious cup of Mandheling coffee. When Front Street determines the grinding degree of a coffee bean, it uses a Chinese standard No. 20 sieve. Mandheling is a medium-dark roasted coffee bean. In order to avoid over-extraction, the Chinese standard No. 20 sieve is generally used with a passing rate of 70%.

Some friends who do not have grinding equipment at home, or who are unable to determine the degree of grinding, will also mention grinding powder when buying coffee beans on the front street. After the coffee beans are ground into powder, the exhaust activity becomes more active and the coffee flavor substances are lost faster. Front Street recommends buying whole beans and grinding them freshly. In addition, the coffee beans sent to our friends by Front Street were roasted within 5 days. When they were received, they had already gone through the bean-raising period of 4 to 7 days, which is when the flavor is at its best.

Finally, you may ask: Who is suitable for drinking Mandheling coffee beans? In fact, drinking coffee is a very subjective matter. People with different taste preferences will have different feelings. Whether it tastes good or not depends on personal preference. If possible, try as many times as possible~
