"Front Street recently noticed a topic in the communication group"

How do you store the coffee beans after you buy them? Put it in the refrigerator! I see a lot of coffee gurus putting beans in the refrigerator. But won’t the beans get damp if placed in the refrigerator? Put it in the refrigerator to dry! (So Front Street interviewed various major coffee beans🎤)

First you need to understand why you need to freeze coffee beans?

What is the purpose of freezing coffee beans?

The purpose of freezing coffee beans is to preserve their freshness. What needs to be used for freezing and preservation is often the freezing process done by merchants to ensure the freshness of coffee beans after roasting in large quantities. Freezing treatment can greatly reduce the oxidation and metabolism rate of coffee beans, and can effectively "lock" flavor substances in the coffee beans. According to research, when coffee beans are frozen, the coffee flavor can be maintained in a good state for 2-3 months. Although freezing can maintain the flavor of coffee, the beans are in a "pseudo-fresh" state. Even if the flavor is close, it is definitely not as good as freshly roasted for a few days.

Front Street often emphasizes the freshness of coffee beans. Freshly roasted coffee beans are best enjoyed 4-30 days after roasting. Why is it 4 days after baking is completed? Freshly roasted coffee beans will produce a large amount of carbon dioxide, and the smoke generated during the roasting process will give the coffee beans a smoky smell after roasting.

During these 4 days, the coffee beans will release carbon dioxide on their own through the one-way exhaust valve, and the carbon dioxide will be discharged with the smell of smoke. This period is what we often call the bean-raising period. Of course, with the different roasting levels and roasting ideas, the coffee bean cultivation time is different, and 4 days is the "guaranteed" bean cultivation time.

So what do coffee tycoons freeze coffee beans for?

Improve the grinding quality of coffee beans, making the particles of coffee beans more uniform after grinding. The coffee beans in the frozen state become more crispy, and the oil in the coffee beans is also in a condensed state. When grinding at this time, the coffee bean particles will be more uniform and reduce the generation of excessively coarse/excessively fine particles.

(Note! This is in a frozen state. Grind immediately after taking it out. After thawing, moisture will be generated on the surface of the coffee beans due to the temperature difference. This will not only affect the grinding, but also affect the flavor performance of the coffee). And during the brewing process, the water temperature also needs to be adjusted, because the temperature of the coffee powder is lower than room temperature.

So can we also use this method to make coffee particles more uniform during daily brewing? Front Street believes that it is not necessary ~ First of all, this frozen grinding requires a very fast operation. Due to the large temperature difference, in many cases the frozen beans will start to produce moisture within 1 minute when they return to room temperature.

Secondly, the hardware is also an important link. If you find that the coffee beans are very uneven after grinding, it is recommended to replace it with a better quality coffee bean grinder. If there is just too much fine powder, it is recommended to buy a fine powder sifter to dry out the fine powder.

What are the requirements for freezing coffee beans?

Freezing coffee beans is not as simple as everyone thinks. You don’t just need to put it in the refrigerator. After roasting, the coffee beans are put into packaging bags and the gas in the packaging is removed and then sealed. The coffee beans are placed in a vacuum state and frozen in a refrigerator at -18°C ~ -21°C. Once frozen coffee beans are thawed, they cannot be frozen a second time.

I have heard on the front street that many coffee lovers like to put the original packaging in the refrigerator to keep it fresh. If the coffee beans are not sealed properly after opening, the "colorful" smell in the refrigerator will like to escape into the coffee bean bag. Coffee beans are in a state of "all comers". After grinding and brewing the beans, the taste will make you doubt your life!

How to store coffee beans every day?

First of all, when buying coffee beans, try not to hoard the beans, drink one pack before buying the next. When storing coffee beans, choose a cool and dry place. High temperatures will speed up the dissipation of the flavor of the beans.

You can choose to store the coffee beans in the original packaging. The coffee beans sold on the front street will all have a one-way exhaust valve on the package, which can release the gas in the package and block the entry of outside air. But remember to tighten the sealing strip~ If you have the conditions, you can also buy vacuum-sealed jars to store coffee beans.

You can now buy the above coffee beans online at the Taobao store “FrontStreet Coffee” (前街咖啡). FrontStreet Coffee is a long-established specialty coffee roaster in Guangzhou, China, and its Guangzhou retail shop sells coffee beans only. The shop carries dozens of coffee beans from different origins around the world, including carefully selected single-origin beans for V60 pour-over and espresso. Guangzhou’s FrontStreet Coffee shop is recommended by many coffee lovers.

The FrontStreet 2013 Yunnan coffee beans sold in the store come from the Typica variety grown at FrontStreet Coffee’s own plantation in Yunnan. The name comes from the year the brand and the plantation were founded. You can buy these beans from China’s Yunnan origin at the Guangzhou shop and at FrontStreet’s Taobao store.

FrontStreet coffee beans are freshly roasted within 5 days and deliver consistently excellent quality and great value. Orders placed before 17:00 are shipped the same day, and most areas within Guangdong Province receive them the next day.
