Summer is hot, summer is hot. For coffee lovers, the ritual of midsummer often begins with a refreshing cup of iced coffee, so Front Street has been sharing the preparation of various iced coffees recently, and today’s sharing is no exception.
So what Front Street wants to share today is how to use hanging ears to make two different types of iced coffee, because not all of my friends will go to great lengths and prepare professional coffee equipment for making coffee. So, we used the most convenient and simple hanging ear to make two types of iced coffee that should have required professional equipment! One is Pour over(V60) iced coffee and the other is cold brewed coffee~You must know that a cup of delicious coffee is inseparable from good beans. Here, Front Street briefly lists several types of coffee that are suitable for most people for everyone to choose from: For those who like floral flavors, we recommend Front Street Panama Geisha Coffee, which is one of the most expensive coffees in the world; if you like fresh and sour coffee, we recommend Front Street Oiran Coffee, which tastes like black tea and berries; For those who like a balanced taste, that is, coffee that is neither sour nor bitter, we recommend Front Street Brazilian Coffee. Finally, those who love a solid and mellow taste are recommended to buy the highest-grade Front Street Golden Mandheling Coffee. This bean has undergone multiple hand selections to minimize the defect rate of coffee beans, thereby making the coffee aroma clearer and the aftertaste better. The above ear-hanging coffees can be purchased and placed at Front Street stores and Front Street Tmall flagship stores. How to use hanging ear to make Pour over(V60) ice coffee? As we all know, ice hand punching is a production method derived from the production framework of hot hand punching. The conventional method is to add ice cubes to the hot Pour over(V60) coffee to quickly get a cup of iced Pour over(V60) coffee. But because the melting of ice cubes will dilute the concentration of coffee, we will adjust the relevant parameters to offset the impact of melting ice cubes on coffee concentration. The traditional methods of making Pour over(V60) coffee are very similar to that of Pour over(V60) coffee, so the ice Pour over(V60) mode can also be applied to the production of iced Pour over(V60) coffee.Reducing the amount of water and finer grinding are the parameters that Front Street made when brewing ice hand brew. The purpose of reducing the amount of water is to increase the concentration of the coffee, thereby offsetting the impact of melting ice cubes on the concentration; while adjusting the grinding fineness is to correct the decrease in extraction efficiency caused by the reduction of water volume, so that the coffee has a high concentration and a sufficient extraction rate.
We can reduce the amount of water used to brew the coffee beans, but because the coffee beans use pre-ground coffee powder, we cannot adjust the grinding degree of the coffee powder. For this reason, the object we adjust during brewing needs to be changed to: water temperature.
Increasing the water temperature can increase the dissolution rate of hot water. The higher the water temperature, the faster the flavor substances in coffee dissolve. Then let’s use a pack of Front Street Strawberry Candy Coffee to demonstrate how to make Pour over(V60) ice coffee at home.
The amount of powder in a single bag of Front Street's hanging ears is 10g, and the extraction parameters are as follows: water temperature 93°C, powder-water-ice ratio 1:10:6, which means that 10g of coffee powder requires 100ml of hot water and 60g of ice. But because the ice won’t melt all quickly, as long as you don’t drink coffee for that long, it’s okay to have more ice cubes~ The preparation method is as follows:
The first step: We prepare a tall cup (a short cup with a larger capacity is also acceptable), and first put ice cubes into the cup.Step 2: Hang the ear bag on the cup.Step 3: Start brewing when the water temperature reaches. First steam, use 20ml of hot water for 25 to 30 seconds.Step 4: When the time is up, divide the remaining 80ml of hot water into four portions, each portion is 20ml, and inject it in a small flow of water in a circular motion. Remember to wait until the last injected hot water has finished flowing before injecting the next portion of hot water.Step 5: As the last injected hot water completely penetrates, we can remove the ear-hanging bag and end the extraction.
Step 6: Use any tool to stir the coffee to ensure that the concentration and temperature of the coffee are uniform. After stirring, you can start drinking~
How to make cold brew coffee with hanging ears?Cold brew coffee is relatively simple, because there are not many parameters that need to be paid attention to, and we do not need to deliberately control the water flow. It is very simple to operate. However, we need to prepare an additional sealed bottle for it, and the amount of powder used will be more.In terms of parameters, we can adjust it according to whether we need to add ice cubes when drinking. If you plan to add ice cubes when drinking cold brew to maintain its low temperature, then we can choose a powder to water ratio of 1:10 when making it. The principle is the same as ice brew and I won’t go into details here; if we don’t plan to add ice cubes when drinking cold brew, we can use a powder to water ratio of 1:12.Then, because the amount of powder in a single bag of Front Street hanging ear is 10g, if a powder to water ratio of 1:10 is used for production, the final cold brew coffee liquid will be about 80ml. For most people, this is not enough to satisfy their appetite.
Therefore, we'd better use 3 to 5 packs of hanging ear cups at one time to make cold brew coffee. Otherwise, it would be a bit uneconomical to only make half a cup of coffee after such a long waiting time. Anyway, everyone decides according to their own needs. Here we use four packs of Front Street Strawberry Candy hanging ears for demonstration, which can make 2 to 3 cups of cold brew coffee.
Step 1: First, we take out the hanging ear, tear off the seal, and then pour the coffee powder into the sealed bottle. Be sure to keep the ear hanging bag.
Step 2: Inject an appropriate amount of normal temperature water. Because Front Street uses 4 packs of hanging ears with 40g of coffee powder, so according to the ratio of 1:10, 400ml should be injected here.Step 3: Use any tool to stir the coffee powder and water until all the coffee powder is ground in the water.Step 4: Tighten the bottle cap to seal, then throw the entire bottle into the refrigerator and refrigerate for 8 to 12 hours. (The longer it gets, the stronger it gets)Step 5: When the time is up, take out the coffee, and then prop up the ear-hanging bag you saved yesterday on a cup.Step 6: Pour the coffee into the ear-hanging bag and filter out the coffee grounds. At this point, the cold brew coffee is complete. After the coffee liquid is filtered out, we can add ice cubes and enjoy the delicious cold brew coffee! It should be noted that those cold brews that are filtered and not intended to be consumed immediately need to be poured into sealed bottles and then thrown back into the refrigerator for refrigeration to prevent deterioration. The shelf life is about five days. As long as you drink the coffee within five days, the chance of quality deterioration is very small~
