Every year, around the time of the Green Coffee Bean Competition, the coffee circle begins to get excited. Rub your hands together excitedly, wait for the latest results, and then immediately go looking for a chance to taste the beans on the list. In addition to classic production areas such as Ethiopia and Brazil, an upstart production area has emerged in recent years. Panama is famous for Geisha coffee, and the annual Best of Panama Competition (BOP) has become a carnival for coffee lovers around the world, in order to taste and own a Gesha champion flavor of that year.

As popular as Gesha coffee is now, Gesha coffee used to be cold. In the 1930s, the Gesha coffee variety was discovered in the Geisha forest of Ethiopia, and then picked and sent to agricultural research institutes in many countries in East Africa. After several twists and turns, in the 1950s, the Geisha variety moved from Africa to CATIE in Costa Rica and was labeled as the T2722 variety. Until the 1960s, the Gesha variety was considered a coffee variety resistant to coffee leaf rust and was distributed to Panama for planting.

Anyone who has an in-depth understanding of Gesha coffee varieties knows that Gesha coffee varieties have low yields and plant fragility defects. Coffee farmers do not pay too much attention to Gesha coffee varieties. They only plant them on the periphery of plantations as windbreaks to protect the more valued varieties of Caturra, Kaduai, Typica and other varieties in that era.

It was not until 2003 that the Emerald Manor in the Buquet region of Panama discovered the potential of Gesha coffee and sent it to participate in the BOP competition that year, gaining a little fame. When you discover something good, of course you have to share it with the world. Emerald Manor continued toGeisha coffee beansHe was sent to participate in the BOP competition in 2004, but eventually won the championship and even broke the highest auction price for green coffee beans. Since then, Geisha coffee has become the object of praise from many stars.

Anyone who has been to the Front Street store knows that the Front Street Coffee list includes Gesha coffee from multiple production areas, including Ethiopia, Costa Rica, Colombia, and Panama. There are more and more producing areas where Geisha coffee is grown, but only Geisha coffee from Panama has such an outstanding flavor.

The main Geisha coffee varieties in Panama are the Green Top Geisha varieties. Green Top Coffee has the best green bean quality among Geisha coffee beans. Geisha varieties grown in Central and South America may be able to trace their genealogy back to the original T2722 variety labeled by CATIE in Costa Rica. But what’s interesting is that the situation in each coffee estate is different, and cross-pollination may occur. In addition, not every manor’s Gesha variety seeds come from CATIE. They may be obtained from transactions between manors.

In the book God in a Cup: The Obsessive Quest for the Perfect Coffee, Price from the Peterson family Peterson even agrees with the possibility that the Gesha variety in Emerald Manor may be different from the T2722 variety. He also explained: "Early botanical descriptions indicate that the Gesha cultivar has new bronze leaves, inferior cupping performance and considerable fungal resistance. Panama Gesha has bright green leaf buds, good cupping flavor, and is resistant to leaf rust, but it is not the coffee leaf spot disease (Ojo de Gallo) that coffee farmers in Central and South America fear most."

Many cafes will have two kinds of Geisha coffee on their menu, one is Gesha coffee from Panama, and the other is Gesha coffee from Gesha Village Estate in Ethiopia, and Front Street is no exception.

Friends who don’t know the truth often ask the barista at FrontStreet Coffee what the difference is between Gesha Village and Panama Gesha. In fact, Gesha Village is the name of a coffee estate in the Bench Maji region of Ethiopia, close to the Gesha Forest, the birthplace of the Gesha variety. However, the Geisha coffee varieties in Geisha Village are very different from the Geisha coffee varieties in Panama. The flavor of Gesha Village’s coffee is closer to everyone’s impression of Ethiopian coffee. Since Geisha Village’s coffee cultivation management and green bean post-processing technology are equally advanced, even if the Geisha coffee from Gesha Village does not have the flavor of Panama Geisha coffee that everyone wants, it is still worth a try.

As for Panama’s Geisha coffee, I believe Front Street needs no introduction as he has already heard about it. Jade Manor’s Gesha represents the most classic Gesha flavor in Panama, but Front Street would like to talk to you about a Panamanian Gesha coffee estate that has only become popular in recent years.

On the bean list on Front Street, there are only two Geisha coffee estates in Panama, Emerald Estate and Deborah Estate. One of the beans from Deborah Manor purchased by Front Street is the Deborah Manor Savage series of coffee beans.

Manor: Deborah Manor

Owner: Jamieson Savage

Altitude: 2000m——2350m

Variety: Geisha

Grade: SHB

Treatment method: anaerobic sun treatment

Deborah Manor is located in the Waucon region, a well-known specialty coffee producing area in Panama. The manor's Gesha coffee is planted in an area above 1,900 meters. Deborah Estate is one of the highest and most remote coffee estates in Panama. In such a high-altitude environment, low temperatures cause a delay in the maturity of coffee berries, which is about one month later than the normal maturity period. Secondly, the fertile volcanic soil provides sufficient nutrients for the coffee. In addition, the Baru volcano brings a unique micro-climate, which is often filled with rain and fog. Therefore, the Gesha coffee of Deborah Manor can repeatedly win good results in various cupping competitions.

The Savage series is a coffee project initiated by Jamieson Savage, the owner of Deborah Manor. Members of the Savage Coffee Project include Gesha coffee growers in the Boquette and Wauken areas. The Savage series of Gesha purchased by Front Street was obtained by Jamieson Savage from high-quality Geisha coffee berries at the same altitude (2,000 to 2,350 meters) near Deborah Manor. It is then processed using Deborah Manor’s green bean post-processing technology.

In order to highlight the floral and fruity aroma of Panama Geisha coffee and the sweet and sour taste of fruit juice, the roasters at Front Street use a light roasting level. When brewing, Front Street recommends using a V60 filter cup, a medium-fine grinding level, and a water temperature of 92 degrees Celsius.

After being brewed with three stages of water injection, Qian Street's Savage Series Geisha has a distinct white floral aroma in the mouth, a sweet and sour taste like pineapple and lactic acid drinks, a full mouthfeel, and an overall clean and balanced taste.
