After drinking too much traditional dark roasted Italian coffee, you will inevitably want to change the taste. As a result, most people will replace the dark roast blend in the bean warehouse with SOE coffee beans that highlight the flavor, thereby making sour coffee with a prominent flavor. This type of beans is often lightly roasted. If we use the same parameters for extracting dark roasted beans to extract SOE, it will be difficult to extract good-tasting coffee. Therefore, for this type of lightly roasted coffee beans, we need to develop a new extraction plan.
How to set up the extraction plan?Generally speaking, Front Street will recommend that you first design an extraction formula based on the Italian coffee extraction idea. That is, how much powder is used and how much liquid weight is extracted in how much time. Under the constraints of such a formula, we can first find the appropriate grinding degree. After all, for coffee extraction, the appropriateness of the grinding degree has a great impact. But in the end, the taste of coffee must be determined by tasting. The formula only shortens the scope of adjustment, but does not directly determine the quality of the taste.
The SOE extraction formula commonly used in Front Street is a powder-to-liquid ratio of 1:2, and the time is controlled at 30 to 35 seconds. Compared with the espresso extraction formula, the time will be 5 seconds longer, because the lighter roasted SOE coffee beans require higher extraction efficiency. The specific amount of powder depends on the capacity of the powder bowl!It is worth mentioning that with proper grinding and the same weight, the volume of light roasted coffee powder will be smaller than that of dark roasted coffee powder. So you need to make your own judgment here. Just control the coffee powder below the horizontal line of the powder bowl! It doesn’t matter even if it exceeds the recommended amount of powder bowl~
If the original grinder grinds dark roasted coffee beans, then when you change the beans to light roasted beans, the grinding often needs to be adjusted 3 to 5 steps toward the finer scale. Only in this way canIncrease the surface area of coffee powder and improve extraction efficiency. Otherwise, relying on the original grinding degree, lower extraction efficiency and more gaps will cause hot water to gush down, easily resulting in insufficient extraction.
When your extraction time reaches the set range, you can then taste the coffee to feel the overall taste. If there is a problem with the taste, you need to make corresponding adjustments. The coffee is sour and has no aftertasteThe most common negative problem with using an espresso machine to brew light roasted coffee is that it has an overly sour taste and almost no aftertaste. Then this situation is insufficient extraction! The lack of sweet and bitter substances causes the sour taste to be amplified, thus causing the negative feeling of sour taste stimulation. In this case, we can first observe the flow rate of some coffee!
Generally speaking, the normal dispensing time of concentrate is 7 to 8 seconds. If the coffee is squeezed out in 4 to 5 seconds, then the problem is insufficient extraction efficiency caused by too coarse grinding! We can solve this problem by finer grinding! And if the liquid discharge speed is normal, it is likely that too little material has been extracted. Then at this time we can lengthen the extraction appropriately and increase the extraction liquid volume by about 5~10ml (it doesn't matter even if it exceeds the formula). In this way, the flavor substances of the coffee can be fully extracted, the sweetness and sourness can be balanced, and the coffee tastes better. The coffee tastes very burnt and bitterThen another common problem is over-extraction, and the coffee has a more obvious burnt and bitter taste. The simplest way is to reduce the amount of extraction and avoid over-extraction by reducing the extraction of 2 to 4 ml of coffee liquid. But sometimes, this method may not work very well, and despite your adjustments, the coffee is still bitter. In this case, over-extraction is caused by grinding too finely.
We can test this problem by dividing one portion of concentrate into three portions! For example, if the coffee we extract is 40ml, then we can use three cups to catch 13ml of coffee liquid respectively during extraction to see if all three cups have an unpleasant bitter taste. If so, then we need to adjust the grinding. If not, just reduce the amount of extracted liquid~
The grease is thin or even non-existentNo matter what degree of roasting the coffee beans are, as long as they are still in a fresh state, the oil will be "pressed" to a greater or lesser extent. But if the oil is too thin, then it is likely that the grinding degree is not enough, the extraction efficiency is low, and the carbon dioxide cannot be released and pressed out in one breath.
The above are the production details of SOE. In fact, if you look at it as a whole, you will find that it is not much different from extracting traditional dark roast espresso! As long as we understand the principle of extraction and the reasons for the negative taste, we can easily solve the problem and extract delicious SOE!
