Many friends will give priority to hot brewing when ordering Pour over(V60) coffee in a coffee shop, because as we all know, if we want to feel a more complete flavor experience in Pour over(V60) coffee, then hot brewing is definitely the best choice.

But when the weather is too hot, it is always difficult for us to take a sip of warm coffee, and many friends don’t want to give up the complete flavor experience, so they will come up with this idea:
“Can you make a pot of hot coffee first and then add ice cubes to cool it down?”
图片
This is a question that many customers and friends often ask Front Street in the summer, in order to have the most complete flavor experience while drinking iced coffee.
Without exception, Front Street’s answer is: “Yes, but not recommended.” The reason why it is possible is because Front Street can meet the needs of customers, but it is not recommended because not only will the coffee taste less delicious, but the flavor performance will also be greatly reduced, and this is the main reason why various parameters need to be adjusted when making ice brew!

Why is it not recommended to add it to hot Pour over(V60) coffee?ice cubesCool down?
You can take a look at the case below on Front Street Street, which uses conventional parameters to brew a pot of hot coffee normally, and then adds ice cubes to lower the temperature to a good entrance.
The coffee beans used in Front Street here are the very popular Front Street Divide Manor Xizhao in the bean list. The coffee brewed with it has a very prominent and highly recognizable flavor. The extraction parameters are: powder amount 15g, powder-water ratio 1:15, water temperature 92°C, grinding degree of fine sugar, No. 20 sieve 75%~80% screening rate, three-stage brewing method, extraction time 2 minutes.

The concentration of the Cicada brewed in this way is 1.49%, and the extraction rate is 22.08%. It tastes balanced and has a solid taste. It has the flavor of grape, passion fruit, apricot, and floral. The overall concentration is suitable and the taste is outstanding.

Front Street then added 100g of ice cubes to the coffee until the temperature dropped to the same level as ice brewing, then measured the concentration and drank the coffee again. Through measurement, the concentration obtained was 1.09%, and then the taste and texture were greatly reduced compared to before.
Because the original coffee temperature is higher and the liquid volume is larger, a large amount of ice cubes need to be melted to reduce the temperature of the coffee to ice cold. As a result, the overall performance of the coffee becomes mediocre because the concentration is overly diluted. Not only has the taste become very thin, but the taste has also become very bland. Only a few originally strong flavors such as grape and passion fruit can be felt, and the rest are difficult to capture because they are overly diluted.

So to sum up, you can see that although the coffee after adding ice cubes is indeed cold enough, both the texture and taste are far from delicious. That’s why Front Street does not recommend that you add ice cubes to hot coffee to cool down. This is also why we need to adjust the parameters when brewing iced coffee.
But to be fair, if you really can’t drink hot drinks, Front Street would still recommend that you just choose iced drinks. Although the flavor experience of ice brewing is indeed not as complete as that of hot brewing, through parameter adjustment, the difference between the two will not be too great. Not only that, just like hot hand brewing has some experiences that ice hand brewing does not have, iced hand brewing coffee also has some experiences that hot brewing coffee does not have. For example - a very full and juicy feel.

Let’s take Front Street as an example. When Front Street uses the Front Street Boundary Manor Xizu in the bean list to make ice hand brew, the brewing parameters will be slightly adjusted on the original basis: the grinding degree will be changed from the original No. 20 sieve 75%~80% sieving rate to 80%~85% sieving rate, and then the original 1:15 powder-water ratio will be changed to a 1:10:6 powder-water-ice ratio. The remaining parameters remain unchanged, including 15g of powder, 92°C water temperature, three-stage brewing, and 2 minutes of extraction time.

If you are a friend who often watches Front Street, you should be very familiar with the Xizhao prepared with this set of parameters. After all, Front Street often uses Xizhao to share ice cream, because it is really delicious!
The taste of Xizhao brewed with this set of parameters is refreshing and full, with transparent and round acidity, and the entrance has the flavor characteristics of grape, passion fruit and apricot. Since there is not enough hot water to be extracted to the later stage, the overall bitter substances in the coffee will be much less, and the taste will be mainly sour and sweet, just like drinking a glass of delicious grape juice.

Since the brewing plan and process of ice brewing are often shared on the street, I will not go into details in this article. Interested friends can search and read by themselves.
The concentration of ice hand brewing produced by this formula is just right. If you are pursuing a richer and more prominent flavor expression, you may wish to further increase the concentration of coffee by adding powder and increasing the ratio of powder to water. For example, increase the amount of powder to 20g, and then use a 1:8:6 ratio of powder to water to ice. In this way, the flavor of the coffee will be more prominent due to the increase in concentration, and the taste will become fuller and rounder~
