Introduction

The V60#01 filter cup is used to brew coffee for 1-2 people. It is most suitable to use 15-20g of powder for brewing. Some friends will drink less when they can't drink so much alone, and some will drink more when sharing with friends. So when using the same size filter cup to brew coffee with different powder amounts, do we need to adjust the parameters?

Brewing experiment

Front Street next uses Ethiopian Yirgacheffe sun-dried red cherries as the brewing object. The brewing parameters are: V60#01 filter cup; 90°C water temperature; powder to water ratio 1:15; medium-fine grinding (Chinese standard No. 20 screen pass rate 80%), circular water injection method, brewing powder amount is 10g, 15g, 25g respectively.

"Before you start brewing, wet the filter paper with hot water. This will allow it to better fit the filter cup and also preheat the filter cup and the sharing pot."

Brew 10g coffee powder

Pour 20g of water into the first section and steam for 20 seconds. Then add water to 90 grams and perform segmentation. When the water level drops and the powder bed is about to be exposed, continue to add water to 150 grams and stop injecting water. When the water level drops and the powder bed is about to be exposed, remove the filter cup. (Start steaming and time) The extraction time is 1’35”.

Brewing flavor: citrus acidity, honey aftertaste, overall bland, lacking the full taste brought by the sun-dried process.

Brew 15g coffee powder

Pour 30g of water into the first section, then steam for 30 seconds. Then add water to 125g and perform segmentation. When the water level drops and the powder bed is about to be exposed, continue to inject water until 225g and stop injecting water. When the water level drops and the powder bed is about to be exposed, remove the filter cup. (Start steaming and timing) The extraction time is 2 minutes and 00 seconds.

Brewing flavor: The sour and sweet notes of berries are the main notes, with the aroma of fermentation and almonds. The aftertaste is sweet of honey, with rich layers and a full and smooth taste.

Brew 25g coffee powder

Add 50g of water to the first section, then steam for 40 seconds. Then fill in water to 160 grams and perform segmentation. When the water level drops and the powder bed will be exposed, continue to pour water until 375 grams and stop injecting water. When the water level drops and the powder bed will be exposed, remove the filter cup. (Start steaming and timing) The extraction time is 2 minutes and 36 seconds.

Brewing flavor: the bitterness of almonds, the acidity of citrus, the taste of tea, no layering, and a bitter feeling.

It can be seen from the brewing flavor that the amount of powder will have a certain impact on coffee extraction. From the picture, we can notice that when brewing 10g of coffee powder, the amount of powder is too small, and the bowl-shaped powder layer after brewing is unevenly thick. Some water flows into the sharing pot and dilutes the coffee liquid without fully extracting the coffee flavor. Therefore, the coffee flavor appears bland.

When brewing 25g of powder, the increase in the amount of powder causes the density between coffee particles to increase and the water flow channel to narrow. The impact of the water flow during brewing cannot effectively tumble the powder layer, and a uniform bowl-shaped powder layer cannot be formed after brewing. The powder layer at the bottom is too thick, which prolongs the extraction time, resulting in a bitter taste.

And we can also see that when brewing 25g of powder, the liquid level is frantically testing the edge of the filter cup! If the water flow is not careful, the liquid level will overflow.

How to brew 10g of coffee powder using V60#01 filter cup?

Adjust the size of the water flow! When brewing 10g of coffee powder, in order to ensure that the powder layer is evenly distributed on the wall of the filter cup, we should choose a thin water flow for brewing. Smaller water flow injection can reduce the powder layer because the impact of water injection causes large tumbling, causing the coffee powder to sink to the bottom of the filter cup. How small should the flow be? Front Street recommends that the injection amount of medium fine water flow is 4-5g per second, while the injection amount of fine water flow is 7-8g per second.

How to brew 25g of coffee powder using V60#01 filter cup?

Adjust the grind! Since the water flow channel is narrowed because the space between the coffee powder particles is reduced, we can increase the space between the particles by making the grinding a little coarser. certainly! We also can't adjust the coarseness significantly. The grinding degree selected for this brewing is a Chinese standard No. 20 sieve pass rate of 80%, so the adjusted grinding degree is recommended to be a Chinese standard No. 20 sieve pass rate of 75%.

but! For the No. 01 filter cup, 25g of powder is not what its size should bear. If you are brewing so much powder for a long time, Front Street recommends buying a size 02 large filter cup. Only with enough space in the filter cup can you ensure that the coffee powder can be extracted better and more evenly.
