Ice-drip coffee has always been very popular. When entering a store in the hot summer, many people will choose to have a cup of ice-drip coffee. Take a sip of ice-cold coffee, and the clean and smooth feeling in your mouth is really satisfying. So how does Front Street make iced drip coffee? Are there any tricks? What coffee beans are made from? This time Front Street is here to compile some tips on ice-drip coffee.
What is iced drip coffee? Characteristics of low-temperature extracted coffee
This is a kind of coffee that takes time to brew. The coffee brewed by choosing different water temperatures will taste different, and the astringent substances in coffee are not easily dissolved at low temperatures. Low-temperature extraction involves long-term contact between water and coffee powder at low temperatures. Only flavor substances with smaller molecules, such as floral and fruity aromas, are extracted. Flavor substances with larger molecules, such as smoked and roasted flavors, are difficult to extract. Therefore, cold-brew coffee can better enjoy the flavor of the coffee beans themselves, and the taste is smooth, layered and sweet.

Use ice water to extract for a long time, and after the extraction is completed, put it in the refrigerator for fermentation. The slightly fermented ice-drip coffee will have a light fermentation aroma and will have a thicker taste.
Why does ice drip coffee need to be fermented? In fact, it is an oxidation process.
Many friends who come to Front Street will ask why Bingdi cannot be drunk immediately after dripping. It must be placed in the refrigerator overnight before drinking? In fact, this step is not so much called fermentation as it is an oxidation process. Just like freshly roasted coffee beans, about 2% of the weight is carbon dioxide, and these large amounts of carbon dioxide are emitted with the storage environment, equipment or methods, making the pressure in the packaging higher than one atmosphere. The pressure helps the fusion of aromatic substances and oils, allowing all the aromatic substances inside the coffee beans to reach a state where they can be easily extracted.

The same is true for ice-drip coffee. Due to the long-term extraction, many flavor molecules are extracted, but not well released. Therefore, after the ice-drip coffee is extracted, it is placed in a sealed bottle and placed in the refrigerator for 12-24 hours, so that the carbon dioxide produced in the bottle and the pressure of the carbon dioxide release the flavor molecules. This is why the longer the ice-drip coffee is left in the refrigerator, the richer it will taste. Of course, Front Street does not recommend keeping the ice drops for a week. After all, there are bacteria in the air or the bottle, and it is difficult to ensure the condition of the coffee after being stored for a long time. The drinking period of the ice drops is recommended to be within 72 hours. You should smell it for any spoilage before drinking.

FrontStreet Coffee ice drip production parameters
Ratio: 1:10 (60g coffee powder 600ml ice water)
Ice water production: 1:1 edible ice and edible water
Grinding degree: coarse sugar size (just a little coarser than medium roasting hand grinding)
Steps for making iced drip coffee at FrontStreet Coffee
1. Place a piece of circular filter paper at the bottom of the coffee cup, wet it with water and fit it to the wall of the cup, add 60g of ground coffee powder, and then smooth the surface of the coffee. You can also use the weight of the powder hammer to lightly press the powder layer to make the surface smooth.

2. Place a piece of filter paper on top of the coffee powder. Because the tension of the filter paper can make the water evenly distributed on the surface of the coffee powder layer for extraction, if there is no filter paper, long-term water droplets will drip out of the powder bed into a pit.
3. Use ice water to moisten the entire powder layer. This step is like hand steaming, which can improve the extraction effect and the consistency of the finished product.
4. Add a 1:1 mixture of ice water to the dripping bottle and adjust the speed at which the water drops fall. Front Street recommends a dripping speed of 7 drops per 10 seconds.

5. After the preparation is completed, pour it into a sealed, clean, water-free and oil-free bottle and place it in the refrigerator for oxidation, so that the flavor molecules of the ice-drip coffee can be released before tasting.
What coffee beans does FrontStreet Coffee use to make iced drip coffee?
Front Street found that if you only use one kind of bean to make ice drops, you can't fully experience the aroma, sweetness or smoothness of this bean. Therefore, when FrontStreet Coffee makes ice-drip coffee, they use two kinds of coffee beans to blend to make ice-drip coffee. The purpose is to make the coffee highlight the characteristics of a certain flavor. One bean provides the aroma, and the other bean provides the flavor.
This time, Front Street uses cherry blossoms from Colombia’s Paradise Manor and sun-dried red cherries from Ethiopia to blend this time’s iced coffee beans. The ratio is 40 grams of cherry blossoms and 20 grams of red cherries. The cherry blossoms in Paradise Manor provide this coffee with the aroma of basil, mint tea, and berry jam, while the Ethiopian red cherries provide the acidity of citrus and berries, and better reflect the fermentation of this iced drip coffee.
