There are many factors that affect the taste of coffee. During the brewing process, the factors that affect coffee include the ratio of powder to water, degree of grinding, water temperature, etc. Among them, the degree of grinding can be said to be very important. There is a saying in the industry that "you can buy a poor coffee machine, but the grinder must be the best." It has to be that grinding really has a very important impact on the taste of coffee.

If the coffee powder is ground too coarsely, the surface area of the coffee powder is small, and it is difficult to extract enough flavor substances and the coffee will appear tasteless; if the coffee powder is ground too finely, the surface area of the coffee powder is too large, and too much bitterness will be extracted, so it is very important to choose a suitable grinding degree.

So how to distinguish the thickness standards of Pour over(V60) coffee powder? FrontStreet Coffee uses freshly roasted coffee beans as an example. Experienced hand-brew enthusiasts all know that Pour over(V60) single-origin coffee beans are divided into medium-light roasting and medium-dark roasting.

Among them, medium and light roasted coffee beans will have a sour taste, and the caramelized substances are difficult to extract from the cup, so Front Street recommends them.Medium to fine grinding(The passing rate of the 0.85mm No. 20 sieve is 80%, which is the size of fine sugar). Medium-fine grinding can slow down the time for water to pass through the powder layer, and better extract the sour substances, sweet substances, and caramelized substances in the coffee to balance the coffee flavor.

The recommended brewing water temperature for medium-fine ground coffee is 90-91°C. If the water temperature is too high, caramelized substances will be extracted too much, resulting in bitterness. If the water temperature is too low, the extraction will be insufficient, and only some sour and sweet substances will be extracted, making the coffee flavor bland and boring.

Generally speaking, the flavor of medium-dark roasted coffee beans tends to be low in acidity and has obvious mellowness, which means that the caramelized flavor will be richer. Therefore, Front Street recommends the use of medium-coarse grinding (70% passing rate of No. 20 sieve with 0.85mm, which is the size of coarse sugar). Medium-coarse grinding can speed up the time for water to pass through the powder layer, so that the caramelized substances will not be over-extracted, so that the flavor and taste of the coffee will be sweet and mellow without producing unpleasant bitterness.

The recommended brewing water temperature for medium-coarse ground coffee is 88-89 degrees Celsius. If the water temperature is too high, the coffee will taste bitter and difficult to swallow. If the water temperature is too low, the coffee will have a dull flavor.

The above is the grinding standard for Pour over(V60) coffee. This is also a standard that FrontStreet Coffee has obtained through many practices and has a scientific basis. So how to sift the powder specifically? FrontStreet Coffee is here to tell you.

How to use 0.85mm No. 20 mesh?

Regarding the grinding degree, FrontStreet Coffee uses the sieving method to determine it. According to the grinding recommendations provided by the Specialty Coffee Association of America (SCA) for Pour over(V60) coffee, FrontStreet Coffee combines it with actual operations to verify. If you don’t have a sieve at home, FrontStreet Coffee recommends observing the water flow speed to judge. If the water flow is too fast, the powder will be coarse, and if the water flow is slow, the powder will be fine.

First, prepare 10g of coffee beans for grinding. Preliminarily determine a grinding degree based on the size of fine sugar and coarse sugar. Then pour it into the sieve, cover the lid, and shake it left and right so that the coffee powder falls through the sieve into the powder tray below. The sieving is not completed until no more coffee powder passes through the sieve. Then prepare an electronic scale and zero the container, pour the sifted coffee powder into the container and weigh it. If the sifted coffee powder reaches 8g01, it is medium-fine grinding. If the sifted coffee powder reaches 7g01, it is medium-coarse grinding. If the pass rate is too high, adjust the grinding degree to coarser. If the pass rate is too small, finer the grinding degree.

How finely should espresso be ground?

The base of Italian coffee is espresso, which we often call espresso. The extraction of espresso is carried out quickly under the high pressure of 9bar in the coffee machine. The extraction time generally does not exceed half a minute, so this requiresItalian coffee grinding sizeIt will be much finer than Pour over(V60) coffee, so that enough flavor substances can be extracted to support the espresso coffee.

The standards of each grinder are also different. Take FrontStreet Coffee's Pegasus 900N grinder as an example. The average grinding degree of FrontStreet Coffee is in the range of 1.8 to 2.0. Of course, it is not absolute. Every day, the barista will conduct debugging before opening the door and adjust the extraction parameters, including the grinding degree, based on the state of the Italian coffee beans, the weather of the day, and the taste of the final coffee at the entrance.

For example, today’s extraction plan for FrontStreet Coffee is 20 grams of coffee powder.Grinding degreeAt 1.8, 40 grams of coffee liquid is extracted, and the time is between 27 and 28 seconds. The ratio of 1:2 was chosen in the hope of retaining a more complete coffee flavor, and the flow rate was chosen to highlight the dark chocolate and aroma of the Front Street Sunflower Warm Italian blend coffee beans used in the store.

Moka pot grind size

The Moka pot is also a type of Italian coffee. It is a coffee appliance targeted at families. When the Moka pot brews coffee, it will generate a pressure of 1.5-3bar. If used properly, it can also press out the grease.

Many friends are concerned about the grinding degree of the Moka pot. The grinding degree will be slightly coarser than that of the espresso machine. The powder diameter is about 0.3-0.55mm. You can have two methods to measure it. The first is to buy a powder diameter ruler or Moka special powder for reference; the second is to use After continuous debugging, usually not many times, you can basically feel it out after 3-5 tests. If the powder is thick, the coffee liquid will spurt out quickly, and it may be like a fountain. If the powder is fine, you will hear the whine of water boiling. If the coffee liquid has not come up, it means it is fine. It is recommended that you turn off the heat as soon as possible. Remember to take safety measures when doing such debugging.
