The recent weather is really heating up people every minute. In this kind of weather, meeting each other happily in a cafe is definitely a life-long friendship! However, even in such a hot weather, you can’t go without drinking coffee, right? So, if you don’t want to go out, can’t afford an ice dripping pot, and can’t afford to wait for several hours for cold brew, can you still take a quick sip of refreshing iced coffee to extend your life?
When it comes to what are the top ice drinks in summer cafes, apart from the "star players" such as Ice American, Cold Brew, and Ice Drops that have always been at the top of the list, Ice Hand Brew is undoubtedly the most popular one. It is not only refreshing and pleasant, with a soft sour taste, sweet and clear, but also refreshing and quenching thirst with the help of ice cubes. It is definitely a good drink to relieve the heat in summer.

After getting into Pour over(V60) coffee, many friends also know that a pot of delicious coffee is about finding the right extraction rate and concentration. Usually, the grinding degree, water temperature, powder-to-water ratio, water injection method and equipment are adjusted to coordinate with each other.
When we have the same type of coffee beans, we don’t actually have to “move” all the parameters home. If we want to make the iced hand brew we drink in the store, we only need to learn a “universal formula”:
Ice hand brewing = coffee powder (finely ground) + 10 times hot water + 5 times ice cubes.

Compared with hot hand brewing, ice hand brewing has more ice cubes as a key element. To ensure that the final coffee is strong, flavorful and ice-cold enough, we must find a way to move some hot water to replace the ice cubes to achieve the above purpose. According to the extraction principle of hand brewing, which is strong in the front and light in the back, the less water is injected, the richer the coffee liquid will be, and the coffee liquid will not be too dilute when added to ice cubes.

Due to the addition of ice cubes, not only is the concentration of ice hand brew inferior to that of hot hand brew, but the stimulation brought by low temperature also reduces our perception of flavor, so it is best to choose beans with outstanding aroma.

If you like a refreshing taste, give priority to medium-light roasted coffee, and recommend Front Street Fruit Ding Ding and Front Street Oiran; if you like iced coffee with a full fruit aroma, buy Front Street Strawberry Candy and Front Street Claw; if you want a mellow taste, low acidity and richness, the first choice is Front Street PWN Golden Mandheling and Front Street Queen's Manor.

However, you should know that the less hot water injected, the time of the entire extraction process will be shortened. The most common situation is from the original 2 minutes to 1 minute and 20 seconds. This also means that there is no chance for the later flavor substances to be released, so the entire cup of iced coffee will most likely be under-extracted. In other words, although the concentration is enough, the flavor is not enough! Therefore, in order to coordinate the release ratio of aroma substances, we need to finer the grinding, which will extend the extraction time.

Technique: three-stage

Before filling the water, first put ice cubes into the sharing pot (adding ice first/adding ice last will not have much impact on the flavor), and pour 15 grams of coffee powder. First, pour 30 grams of water in a small circle from the center outward with a small flow of water and steam for 30 seconds. In the second section, use the same method to pour 60 grams of water. When the water in the filter cup is about to be filtered, pour the remaining 60 grams of hot water. The final extraction time should be between 1 minute 50 seconds and 2 minutes.

Seeing this, some friends may be thinking that it’s still too much trouble. Isn’t there a more direct and rough ice bathing plan that doesn’t pay attention to techniques? Don't worry, there really is one. It is the "one-pitch ice hand punch" developed by Mr. Tetsu Kasutani.

Grinding degree: EK-43s scale 7 (C40 falls approximately on the 18th to 19th scale)

Finally, remove the filter cup and shake the sharing pot vigorously until all the ice cubes melt into the coffee liquid, then pour it into an ice cup and drink (if you think the concentration is too high, you can add 1 to 2 ice cubes according to your taste).

This one-pour extraction of iced hand brew has a round taste, not obvious sourness, and a strong aftertaste, which also gives this cup of coffee the aroma of blueberry, sweet orange, peach, and Darjeeling black tea.
