The hanging ear coffee is popular among everyone because it is very convenient to carry and can easily make a cup of delicious black coffee without complicated operations. Although because of "prefabricated"(pre-ground powder)Because of this, it does not have as rich aroma as freshly ground coffee, but as long as it is brewed properly, hanging ear coffee is also quite delicious. So people often joke that it is the "instant noodles" in the coffee world, which is both convenient and delicious. But do you know? Just like instant noodles, hanging ear coffee also has many different cooking methods. In addition to traditional drip brewing, we can also use other methods such as soaking and cold brewing to make black coffee with different flavors. Not only that, we can even use the hanging ear to brew a cup of coffee with a higher concentration, and then add milk to make a cup of fragrant and delicious milk coffee.(It just can’t be compared with milk coffee made by a coffee machine)! These "recipes" have all been shared in detail by Front Street in the past, but recently many friends have reported that it is troublesome to search, so Front Street will gather together today to share with you the different "cooking" methods of hanging ear coffee~First of all, the production method that Front Street wants to share with you is drip brewing, which is to extract coffee through artificial water injection. This is the most traditional brewing method for hanging ear coffee. The advantage of drip brewing is that it can quickly brew coffee with rich layers and outstanding flavor in a short period of time. However, this has a prerequisite, that is, we need to grasp the parameters: the water must be hot enough, the time must be long enough, and the hot water must be the right amount. Otherwise, it will be easy to fail to brew the taste of coffee, and the final result will most likely be a cup of coffee-flavored water.Although it seems complicated, it is actually not that difficult. Because the grinding degree of the coffee beans has been fixed, we can basically use a fixed set of parameters to brew all the coffee beans, but the water temperature needs to be adjusted according to the degree of roasting of the coffee beans. And this is also the convenience of ear-mounting.In this article, Front Street will use the Front Street Essai Oiran hanging ear to demonstrate most of the brewing methods of the hanging ear. When brewing it using trickle brewing, the water temperature will be in the range of 90~93°C(Darkly roasted coffee beans can be brewed with 88~90°C water); The ratio of powder to water is 1:15; the extraction time is two minutes(i.e. the time the water and coffee powder are in contact)。Because Front Street’s hanging ears come in a pack of 10g, so according to the ratio of 1:15, the amount of water that needs to be injected is 150ml. The 150ml of hot water will be injected into the front street in five sections. The average hot water in each section is about 30ml. The purpose of this is to allow the water and coffee powder to have more sufficient contact time, and the final brewed coffee will have a richer taste.
After many experiments on Front Street, if a pack of 10g ear-hanging ears is filled with half of the water each time, the water volume will be about 30~40ml. In other words, when the water is filled halfway into the ear-hanging bag, the water volume is exactly our target water volume for each section. Through such visual inspection, we can estimate the total water volume without a scale.ThatWithout further ado, Front Street will share how to make a good cup of hanging ear!
① First, we inject a section of hot water to half of the ear-hanging bag (about 30ml), and then wait for 20 to 30 seconds before starting to inject the next section of hot water. The purpose of this is to expel the gas in the coffee powder, so that we can make delicious hanging ear coffee more easily.②. Subsequently, we inject four more sections of hot water according to the planned water volume. Each section of hot water is poured into half of the ear-hanging bag, and then the next section of hot water is started after all the hot water has dripped.③. After the last section of hot water is filled, we can take out the ear-hanging bag and enjoy delicious ear-hanging coffee. The total time is 2 minutes and 05 seconds. The Oiran coffee brewed in this way tastes just like Front Street said. It is not only rich in layers, but also has outstanding flavor. We can clearly taste the sweet and sour aroma of citrus, cream, strawberry, and berry. The taste is light and the aftertaste is that of oolong tea~Compared with the drip filter method, the second method Front Street wants to share is very simple! Because it is an immersion extraction, we only need to pour the coffee powder and hot water in the hanging ear into the same cup and steep it for a period of time to get a cup of hanging ear coffee with a rich and balanced taste! When using this method to make hanging coffee, there are only two extraction parameters we need to pay attention to: time and water volume. As for the water temperature, just use boiled water for brewing. Because the fault tolerance rate of immersion extraction is relatively high, the bitterness in the coffee powder will not be easily dissolved, so the water temperature requirements are not that high. Water temperatures above 94°C can be used~If you want to drink stronger coffee, you can use a powder to water ratio of 1:14 or 1:15, that is, a 10g pack of hanging ears, brew with 140ml or 150ml of hot water; and if you want to drink a less strong coffee, you can use a powder to water ratio of 1:16~17, that is, 10g of powder with 160~170ml of hot water. The extraction time is between 7 and 9 minutes, depending on the water temperature used. The higher the water temperature, the shorter the time, and vice versa.① First, we tear open the hanging ear bag, then pour the coffee powder into the prepared container (preferably a container with a diversion opening), and set the ear hanging bag aside for later use.② Next, we pour hot water and mix it with coffee powder. The ratio used in Front Street here is 1:15, so the amount of water injected is 150ml.③. After filling the water, we take out any tool, stir the coffee (10 turns is enough), and start timing.④. After 5 minutes, we take out the tools and stir again.(10 laps is enough), and then wait again.⑤. When the time reaches 8 minutes, we can take out the ear-hanging bag and put it on another cup.⑥. Finally, we only need to pour the brewed coffee into the ear-hanging bag, filter out the coffee powder, and remove the ear-hanging bag after filtering. In this way, a cup of ear-hanging coffee is completed.Compared with brewed coffee, although the brewed coffee is not as rich in layers, the body and taste are more balanced. At the same time, this cup of Oiran has a higher sweetness and a longer lasting aftertaste. Because I use Front Street Esai Oiran’s earrings, the flavor performance is still dominated by the aroma of citrus, berries, strawberries, and cream, which is very good~I believe everyone is familiar with Front Street’s cold brew method, because Front Street just shared it not long ago. We only need to prepare a sealable bottle, then pour the coffee powder and room temperature water in the hanging ear, seal it, and put it in the refrigerator to refrigerate overnight. When you get up the next day, you will have a delicious pot of cold brew coffee~Similarly, the coffee beans used for hanging ears are Oiran, and the extraction parameters are as follows: powder amount 30g, powder-to-water ratio 1:10, and refrigeration time of more than 8 hours. Since cold brew coffee uses a larger ratio of powder to water, we need to use at least 30g of coffee powder to make a cup of cold brew. You can also decide how much coffee powder to use according to your own needs.Step 1: We take out the hanging ear and pour the coffee powder into the sealed bottle. RemembermustKeep the ear hanging bag.Step 2: Inject an appropriate amount of normal temperature water. Because Front Street uses 3 packs of hanging ears with a total of 30g of powder, according to the ratio of 1:10, the amount of water injected is 300ml.Step 3: Use any tool to stir the coffee powder and water until all the coffee powder is fully in contact with the water.Step 4: Seal the bottle, then put the bottle in the refrigerator for 8 to 12 hours. (The longer it gets, the stronger it gets)Step 5: When the time is up, take out the coffee, and then prop up the ear-hanging bag you saved yesterday on a cup.Step 6: Pour the coffee into the ear-hanging bag and filter out the coffee grounds. After the filtration is completed, place it in the refrigerator to ferment for 2 hours (or not). At this point, the cold brew coffee is complete.Oiran coffee extracted using cold brew tastes completely different from the first two! Both in taste and texture. In addition to the flavors of citrus, strawberry, and berry, the cold brew version also has a charming wine aroma after fermentation. Combined with the original fruit flavor of Oiran, it is like tasting a glass of fruity wine. The taste is very refreshing, and the aftertaste is both oolong tea and wine, which is very good~Finally, let’s share a cup of rich milk coffee using hanging ears! There are two ways to make this "dish". The first one is the cold brew above, which just replaces the water during cold brewing with milk. In other aspects, the parameters and methods are exactly the same and very simple. Because I just shared it some time ago, Front Street won’t go into too much detail here.Another way is to brew a stronger black coffee with hot water and then add milk. Although the operation is more complicated than the former, it can get a cup of milk coffee faster~This method will use the second method shared in this article on Front Street: soaking. However, there are very strict requirements for the amount of water, powder, and water temperature. Otherwise, it will be difficult to brew strong coffee, and the resulting milk coffee will have a heavier watery feel. Then the roasting degree of the coffee is best to be dark roasted, so that the taste of the coffee is not so easily masked by the milk. Therefore, this time Front Street will use the PWN·Golden Mandheling earrings from the Front Street Bean List to make it. There are two packages in total, that is, 20g of coffee powder is used, and then the ratio of powder to water is 1:5, the water temperature is 100°C, and the extraction time is 2 minutes. The production steps are as follows:①. Pour the 2 bags of coffee powder in the hanging ears into the same container.②、Then we poured in 100ml of 100°C boiling water and started timing.③. Take out a spoon or other stirring tool and stir the coffee in the pot for 30 seconds. The purpose of stirring is to speed up the dissolution of flavor substances so that we can make a cup of rich black coffee in a short time.④. After stirring, let it sit for 1 and a half to 2 minutes. After that, you can take out the ear-hanging bag and put it on the cup.⑤、After pouring all the coffee in the pot and filtering out the coffee grounds, we will have a cup of high-concentration hanging ear coffee.⑥. Finally, we only need to add an appropriate amount of milk to the coffee, and a cup of fragrant and delicious milk coffee is completed! Here in Front Street, 180ml of hot milk is added, the ratio is 1:3. If you are using lightly roasted beans, the ratio can be larger.Although the milk coffee made in this way is not as rich and mellow as espresso, it is! It can also be said to be very good. When you drink it, you can not only taste the flavors of chocolate, nuts and other coffee, but the taste is also quite smooth. Under limited conditions, it can be regarded as a pretty good cup of milk coffee. So, the above are the different "recipes" for the four kinds of hanging ear coffee shared by Front Street. Friends who are interested may wish to try it, and they can make pretty good hanging ear coffee~
