Coffee Varieties|Why is Caturra called “exposure coffee”? What flavors does Caturra coffee exhibit after brewing? What are the pros and cons of Caturra coffee?

Caturra is one of the varieties under the Arabica branch and is a descendant of the ancient variety Bourbon. Due to its high yield and good flavor, it is currently widely planted in Central and South America. Among the many bean lists of Front Street Coffee, such as Front Street Guatemalan Flower Goddess, Front Street Honduran Lychee Orchid, Front Street Colombian Rose Valley, Front Street Panama Flower Butterfly, etc., all contain the Caturra variety.
Caturra was first discovered between 1915 and 1918. Bourbon in a plantation in Minas Gerais, Brazil, had a set of gene mutations that caused the plants to become smaller (similar to dwarfism). This new coffee species expressed in a new biological form is called "Caturra" by the locals in Guarani, which means "small". Sometimes called "Nanico".

Because Caturra can be grown compactly and densely, it is very convenient for growers to take care of and harvest. Unlike other fragile Arabica varieties that require shade trees, Caturra is exposed to the sun and is not afraid of long-term exposure to the sun. It is also known as "Sun Coffee".
Caturra has strong adaptability and can be grown at an altitude of 700 to 1,700 meters. The higher the altitude, the better the flavor, but the yield will also decrease. Kadura grown in areas with an altitude of 1,200 to 2,000 meters and an annual rainfall of 2,500 to 3,500 ml performs best, with good quality and yield guaranteed. In terms of flavor, Caturra has bright acidity, a taste full of fruity taste, and after medium-dark roasting, it presents chocolate and nutty sweetness. It is a consistent winner in many coffee competitions.
Caturra also has shortcomings. Under higher-density planting, high-yielding plants are easily crushed, and in order to ensure that they can produce coffee cherries, growers need to invest more fertilizer and management costs. In addition, Caturra's disease resistance is weak, and its resistance to diseases such as nematodes and coffee leaf rust is not high, so it is also prone to disease and wilt.

According to the color of the fruit, katura can be divided into three types: red, yellow and purple. Red Caturra Velmelho is the most common, and its flavor varies depending on its origin, processing, and roasting. Yellow Caturra (Caturra Amarello) and Purple Caturra (Purple Caturra) are relatively rare and are derived from recessive gene variants.
If you want to know the flavor characteristics of this variety, Front Street recommends the Front Street Colombian Whelan ration beans, which are naturally washed Red Cadura varieties. The washed Front Street Huilan ration beans have a soft acidity, but also have a suitable mellowness and sweetness. Front Street hopes to present the classic Colombian nut flavor and retain some acidity, so they choose medium-dark roasting. Before every coffee bean launched by Front Street, it will be cupped and evaluated at least once. Cupping allows us to more objectively reflect the advantages and disadvantages of coffee.

Considering that the Front Street Whelan ration beans are roasted medium-deep, the flavor tends to be nutty, rich and mellow like chocolate. The deeper roasting makes the texture of the coffee beans looser and the coffee powder more absorbent, so a medium grinding degree is chosen. In order to avoid extracting too many impurities, Front Street will lower the water temperature a little to a medium temperature of 90 degrees Celsius and use a KONO filter cup for extraction.
Different from the V60 filter cup, the only exhaust part of the KONO filter cup is the quarter rib. When the water level passes through the rib part, the water volume in the filter cup continues to rise, and the pressure is increased by the weight of the water. Since the outlet is relatively small, the time of contact between the coffee particles and the water can be extended. With the injection of water flow, soluble substances can be brought out more effectively, thus improving the mellow and rich taste of the coffee. Therefore, it is suitable for brewing mellow-tasting coffee beans such as Front Street Golden Mandheling, Front Street Jamaica Blue Mountain Coffee, Front Street Brazilian Queen Manor.

Brewing parameters: KONO filter cup, water temperature of 90 degrees Celsius, No. 20 standard sieve sieving rate 75% grinding degree, 1:15 powder to water ratio, powder amount: 15 grams, three-stage extraction
Pour the coffee powder into the V60 filter cup, moisten the powder bed with twice the amount of coffee powder, form a drum, and steam for 30 seconds. Then pour water in a small circle from the inside to the outside until it reaches 125g. When the powder bed drops to half of the filter cup, continue to pour the same thin stream of water into the third section to 225g until all the coffee liquid is filtered and take out the filter cup, which takes about 2 minutes.
