Why does Yunnan coffee become the raw material for instant coffee? Yunnan coffee initially planted Typica coffee beans. Later, in order to repay the debt of the Soviet Union, Yunnan planted a large number of Typica coffee beans, and had a unified department to purchase and ship them to the Soviet Union. Later, due to the low domestic demand for coffee, coffee farmers cut down coffee trees and planted crops with more economic value.
But Yunnan is a treasure land for growing coffee. Not only is it between the Tropic of Cancer and the Tropic of Cancer, but the altitude of the region also meets the growth needs of coffee trees. So Nestlé Coffee fell in love with this treasure land, and established the Coffee Agriculture Department in 1992 to specifically guide and study the improvement and cultivation of Yunnan coffee. It also introduced high-yielding and disease-resistant Catim and purchased coffee at the price of the US spot market.

In 1959, the Portuguese moved the Brazilian Bourbon mutant Catura to East Timor and mixed it with Timor with Robusta ancestry. They actually succeeded in breeding Catura with strong disease resistance and high productivity. Since leaf rust has affected coffee-producing countries around the world, with the assistance of international organizations, various producing countries have vigorously promoted Catim to resist leaf rust and increase production capacity.
Catim is not a pure Arabica blood. It is a hybrid between Timor (a hybrid of Arabica and Robusta) and Caturra (a variant of Bourbon), so Catim has 25% Robusta blood, and its Robusta blood also determines its taste defects: the aroma is not rich enough, and the overall taste is bitter.

At present, the coffee varieties commonly grown in Yunnan are Catim and its improved varieties. It is what people often call Yunnan arabica coffee on the market. It now appears that most of the crops planted in Yunnan are Catim, which is a hybrid of Catura, a branch of the Bourbon strain of Arabica, and Robusta. The reason for planting this variety is that Cattim has the Robusta gene, so it is more disease-resistant than a single old variety and has better yields. Compared with the delicate old varieties, it has poor disease resistance and low yields. Farmers naturally prefer to plant Cattim, so now there is a trend of Catim in Yunnan. This is why when people mention Yunnan coffee, they think of the raw materials for instant coffee.

However, with the widespread popularity of specialty coffee culture and the increasing demand for coffee by domestic consumers, Yunnan coffee has received the attention of the government in recent years, and everyone has a more scientific approach to the planting of coffee trees and the processing of coffee beans.
