With the rise of the specialty coffee trend, coffee culture has been continuously spread, and the sales volume of both coffee utensils and coffee beans has been rising. As a shop specializing in specialty coffee, Front Street not only brews a delicious cup of coffee for every customer, but also wants to spread coffee culture. If you follow the Front Street official account, you will find that it is updated every day about the coffee culture. The latest coffee information and the coffee information you see are all articles carefully written by every barista on Front Street Street. The purpose is to spread coffee culture to more people. In addition to the taste, a delicious cup of coffee contains more humanistic stories.

FrontStreet Coffee stores have at least two hundred kinds of coffee beans, with different processing methods, different roasting levels, and different origins. Where do you start drinking them? There are very few customers who can finish the coffee beans on the bean menu of FrontStreet Coffee stores. How to select the right coffee beans for each customer who comes to FrontStreet Coffee is also our homework.
Recently, many customers have come to inquire about the related knowledge of ear-mounted coffee. Which type of ear-mounted coffee is the best? How to brew delicious ear-mounted coffee? Can ear-mounted coffee be brewed multiple times? This article will talk about ear-hanging coffee from the above issues.
1. The origin of hanging ear coffee
The history of hanging ear coffee originated from the invention of hanging ear coffee by UCC Shangdao Coffee in Japan. This kind of hanging ear coffee is very simple and efficient. Nowadays, no one has extra time to go to a coffee shop to drink a cup of Pour over(V60) coffee carefully prepared by baristas. Therefore, as soon as hanging ear coffee was promoted in the market, it has been favored by many coffee lovers. Many of the customers who come to Qian Street to drink coffee ask if the store sells hanging ear coffee. It can be imagined that the market for hanging ear coffee is very broad.
2. Can ear-mounted coffee be brewed multiple times?
Hanging ear coffee is also like agricultural products. Agricultural products pay attention to freshness, while coffee pays attention to the best flavor, which is the best tasting period of coffee. Therefore, Front Street generally recommends that everyone try to drink coffee during the best tasting period, otherwise the taste of hanging ear coffee will gradually change over time. You may ask, can ear-mounted coffee be brewed multiple times?

Front Street also found that many people compare instant coffee and hanging coffee. Compared with instant coffee and hanging coffee, instant coffee is much simpler than hanging coffee. There is no need to consider the water temperature. Just use boiling water to dissolve it directly. But everyone must be aware that instant coffee is a dry coffee extract obtained by evaporating the water in the coffee extract, so the taste is relatively simple, usually with obvious bitterness or sweetness, and contains a large amount of saccharin and creamer.

The coffee powder used in hanging ear coffee is ground from freshly roasted coffee beans, and real black coffee is extracted through drip filtering. The brewing methods of instant coffee and ear-mounted coffee are different. For ear-mounted coffee, you cannot pour out the coffee powder like instant coffee, otherwise a cup of coffee will be full of coffee grounds. How to drink it will greatly affect the taste of the coffee, and this brewing method is also wrong. Therefore, Front Street recommends that everyone must understand the brewing method before brewing ear-mounted coffee.
Generally speaking, hanging ear coffee cannot be brewed for the second time, because the flavor substances that can be extracted from coffee are only 3%, and other flavor substances are difficult to extract. Generally speaking, coffee can only be extracted once. Front Street has tried before to find out whether hanging ear coffee can be extracted for the second or even third time. Front Street found that after the first extraction of coffee, the subsequent coffee basically loses its flavor.

In fact, a small bag of hanging coffee usually contains 10 grams of powder, and 10 grams of powder can generally only be brewed once. When you cycle the brewing, you may find that the coffee taste is still very strong, and you should still be able to drink it. In fact, this is not the case, because when you brew coffee for a long time, the longer the coffee is brewed, the more caffeine is released. This is because the coffee has been over-extracted. Over-extraction will release the bitterness and astringency in the coffee, and the best flavor of the coffee is basically gone. Even if this coffee is in its best tasting period, brewing it multiple times will dilute the best flavor of the coffee. Therefore, Front Street generally does not recommend that customers repeatedly brew the same type of hanging coffee.
Even though this hanging ear coffee is still in the coffee appreciation period, Front Street does not recommend that you brew the same coffee multiple times, because the hanging ear coffee itself is an instant coffee. You can brew a fragrant black coffee anytime and anywhere, and you can perfectly taste the sour, sweet, bitter and mellow aroma in the coffee. The flavor of hanging ear coffee that has been brewed many times is basically lost.

3. How to choose a hanging ear coffee that suits you
Of course, when drinking coffee, you have to drink the coffee flavor you like. Some people may like the lemon and citrus notes of Ethiopian Gacheffe, some like the mellow taste of Indonesian Mandheling, or the rich floral aroma and fruit juice-like taste of Panama Geisha. These are all very good choices. But Front Street has a premise on this basis, that is, the hanging ear coffee you buy must be fresh and just in the best tasting period of the coffee. Otherwise, no matter how delicious the coffee is, you will not be able to truly taste a delicious coffee. Generally experienced baristas and even coffee lovers can even tell how long the coffee has been stored by the smell, but ordinary coffee lovers like us still honestly identify whether the coffee is fresh through the following methods.

1. Look at the production date
First of all, when buying coffee beans, first check the roasting date on the packaging of the coffee beans. The roasting date indicates the date marked on the coffee beans from the time they were released from the oven. We often say that to check whether the coffee beans are fresh or not, we generally look at the roasting date rather than the shelf life.
2. Check the tasting period of the packaging bag
The packaging of coffee beans will be equipped with a breather valve to release the carbon dioxide inside the coffee packaging to prevent the packaging bag from swelling and exploding. Front Street's ear-hanging coffee does not have a ventilation valve, because although the ventilation valve can be squeezed to smell the coffee aroma, when squeezed, it will release the aroma of the coffee and shorten the life of the coffee. Therefore, even if the ear-hanging bag is equipped with a ventilation valve, it will only increase the cost of the ear-hanging coffee, but it will not extend its best tasting period.

Front Street also recommends that you don’t buy a few months’ worth of coffee at once just because you’ll get a discount if you buy too much coffee. The emphasis on coffee is freshness. If you buy so much coffee and don’t finish it, the best tasting period will be passed, and the brewed coffee will definitely not taste that good.
3. Choose your favorite coffee flavor
Hanging ear coffee is a simplified Pour over(V60) coffee, so just like Pour over(V60) coffee, what ultimately determines the flavor of the coffee is the coffee beans in the hanging ear coffee. Hanging coffee can be a single product or a blended coffee. However, the hanging ear coffee sold on Qian Street is generally a single-origin coffee, and there are relatively few blended coffees. Generally, the flavor of coffee will be indicated on the packaging of hanging ear coffee, such as jasmine, citrus, lemon, cream, and other terms describing the flavor of coffee. Generally, they describe the flavor tendency of hanging ear coffee.

For example, Front Street has a red fruit coffee from Brazil, which has the unique flavors of nuts, chocolate, cream and peanuts of Brazilian coffee. There is also a Panamanian Butterfly Coffee. This Butterfly Coffee is a blend of beans, with 70% high-quality Geisha blood, and a small amount of Cardura and Carduai. When brewed, it has a particularly strong floral aroma, with citrus, floral, honey, and very sweet taste. There are also coffee from Kenya, such as cherry tomatoes, fresh acidity, etc., which are very suitable for making hanging ear coffee.
Some customers on the front street choose their own hanging coffee based on the coffee processing method. There are many processing methods for coffee beans. In Brazil, the sun-drying method is often used to process coffee beans. The sun-drying method can retain more of the flavor of the coffee beans and increase the aroma and sweetness of the coffee beans. For example, the reason why the sweetness of the Queen's Manor in Brazil is relatively high is due to the sun-drying method. There are also water-washed coffees, such as Ethiopian coffee, which uses water-washed coffee. The taste is very clean, with obvious lemon and citrus notes and a faint jasmine fragrance. There is also the honey processing method of Costa Rica. For example, the Costa Rica Musician series on the front street uses the raisin honey processing method. The selected coffee fruits are dried like raisins, and then shelled and the processed coffee beans are dried. Therefore, the coffee beans from Costa Rica have a mellower taste and sweeter taste.

Of course, all of the above are very suitable for making ear-hanging coffee. There are also some coffees that use special processing methods that are made into hanging ear coffee, which is also very popular, such as the Honduras sherry coffee on the front street, which is delicately washed and then fermented in whiskey barrels. The coffee beans produced by this processing method have a strong aroma of fermented wine, and Honduras The same is true for Lychee Orchid coffee beans, but the Lychee Orchid coffee beans are put into brandy barrels, so the flavor will be very different from Sherry coffee. The aroma of this Lychee Orchid coffee beans will be biased toward brandy, with a bit of tropical fruit lychee flavor, making it a hanging ear coffee. It is also a good choice.
4. How to brew a delicious and fragrant hanging ear coffee
At this point, I believe you have a rough idea of your taste. Next, you need to know how to brew a delicious cup of coffee. Before starting with this foundation, Front Street suggests that you also learn about the following grinding sizes for ear-mounted coffee. For example, the coarser the coffee powder, the lower the extraction efficiency, and vice versa. However, the thickness of coffee powder also has its own sweetness. Coffee powder that is too thick will lead to under-extraction and it will feel like drinking water. Coffee powder that is too fine will lead to over-extraction, making the coffee powder difficult to swallow. Front Street has repeatedly explored the grinding speed of ear-mounted coffee, and finally adopted medium-fine grinding as the grinding speed for ear-mounted coffee bags, which is more conducive to brewing richly aromatic coffee.

Front Street believes that hanging ear coffee is equivalent to a simplified hand brewing, and there will be certain requirements for brewing time, temperature and water volume. The water temperature of hanging ear coffee is more particular, and is determined according to the flavor and roasting degree of different production areas. If the roasting degree is deep, it is best to use a water temperature of 88 degrees for Front Street hanging ear coffee, and for a light roasting, it is best to use a water temperature of 90 degrees to 92 degrees. However, friends don’t have to worry about not being able to identify the degree of roasting of coffee. Front Street’s public account has released relevant knowledge and brewing methods about ear-hook coffee, so you can buy it with confidence.
In addition, Front Street will share with you the brewing method of hanging ear coffee.
The brewing process of hanging ear coffee
1 warm cup -
Prepare the cup and pour some hot water into it to warm it. The function is to prevent the brewed coffee from cooling down too quickly. The flavor of the coffee will continue to change as the temperature drops. If the temperature drops too quickly, many different tastes will be missed.

2. Water temperature -
First we need to prepare enough boiling hot water, because the temperature of the water is high enough to release more aromatic substances in the coffee powder. When brewing coffee by hand, Front Street recommends brewing it at a water temperature of 86 to 93 degrees Celsius. If the temperature is only about 80 degrees, the brewed coffee will tend to be tasteless, while boiling water will easily extract a burnt and bitter taste. Therefore, Front Street will open the boiling water and let it sit at room temperature for 1 to 2 minutes, allowing the water temperature to drop slightly to about 90 degrees Celsius.

Three hanging coffee-
First, shake the ear-hanging bag slightly to let the coffee powder fall down to avoid scattering the coffee powder when tearing it open. Then pour out the hot water in the cup. After tearing off the seal on the ear-hanging bag, open the paper hanging ears on both sides, shake it to make the coffee powder flat, and finally hang it to the rim of the cup.

Four pre-wet-
The amount of water injected for the first time should be just enough to soak the coffee powder. Too much or too little will affect the flavor. Then wait 20 seconds for the coffee powder to completely absorb the water. The strength of the coffee can be adjusted with the pre-wet time, extending to 40 seconds can result in stronger coffee.

Five water injection-
For the second time, water can be poured into the filter paper until it is 80% full. It is best to use a slender water stream. After the water flow reaches the pre-wetted height, you can continue to fill it up to 80% full until 150 to 180cc is quenched. Once the quenching is completed, there is no need to wait for all the water in the filter paper to flow out, just throw it away.
