Hand-brewed coffee is drip brewing coffee. By using a coffee filter cup with filter paper/other filter media to block the coffee grounds, a cup of clean and clear coffee liquid is finally presented. Hand brewing generally uses single-origin coffee beans, but there are so many types on the market. How do we quickly choose the one that suits us?

The simplest way is to start from the flavor of the coffee. Friends who don’t like bitterness can give priority to medium-light roasted coffee beans:

1. Fresh floral aroma: Front Street Rwanda Red Bourbon - berry, floral, citrus, nut

2. Strawberries with cream: Front Street Oiran - dried strawberries, guava, citrus, tropical fruits

3. Jasmine Green Tea: Front Street Poquette Gesha – jasmine, green tea, lemon, honey

4. Citrus lemon: Front Street Dingding - berry, citrus, tea flavor, yellow lemon

5. Mixed juice: Front Street Kenya - cherry tomatoes, ebony, pear, blackberry
Going back to what was mentioned at the beginning of the article: When you are sitting at the bar and watching the barista brew a pot of coffee, but no matter how you brew it, the coffee tastes not good. Do you think that you need to change the barista's hands to make Pour over(V60) coffee... Is this really the case? Of course not! When you are learning about the various water injection methods used by various masters, have you ever carefully looked at their brewing parameters?
The powder-to-water ratio, water temperature, grinding degree, and extraction time are all intertwined. If one of them changes, the final taste of the coffee will be different. Here, Front Street briefly summarizes the impact of the four factors on coffee extraction.
"Powder to water ratio" refers to the ratio of coffee beans to the amount of water injected. The larger the ratio of powder to water, the lighter the coffee taste. The smaller the ratio of powder to water, the richer the coffee taste. Therefore, in order to ensure the accuracy of the ratio when brewing, be sure to use an electronic scale as an auxiliary tool~

After a long period of brewing comparison, Front Street used a powder to water ratio of 1:15 for brewing when other parameters were appropriate and the same every time. The concentration of the coffee extracted and the presentation of the flavor will be just right. If the final taste is too strong/light, you need to consider whether the grinding degree, water temperature, and extraction time are suitable for the brewing object.
"Grinding degree" refers to the degree to which coffee beans are ground. The finer the coffee grounds, the stronger the flavor, and the coarser the coffee grounds, the lighter the flavor. There is currently no uniform standard for the scale of coffee bean grinders on the market. The grinding thickness of coffee beans will also vary depending on the degree of roasting.

Medium-lightly roasted coffee beans have a small structural density and are resistant to extraction, so they are brewed with a grinding thickness (the size of fine sugar) with a 0.85mm Chinese No. 20 standard sieve with a passing rate of 75%-80%; medium-dark roasted coffee beans have a high structural density and are not resistant to extraction, so they are brewed with a 0.85mm Chinese No. 20 standard sieve with a grinding thickness (coarse sugar size) with a passing rate of 68%-73%.
"Brew water temperature" refers to the temperature of the water injected during the brewing process. The higher the water temperature, the stronger the flavor, and the lower the water temperature, the lighter the flavor. With the above-mentioned grinding recommended by Front Street, medium-light roasted coffee beans that are resistant to extraction can be extracted at 90-93 degrees Celsius, while medium-dark roasted coffee beans that are not resistant to extraction can be extracted at 87-89 degrees Celsius.

"Extraction time" refers to the time from the beginning of water injection to the end of extraction when the filter cup is removed. This time also represents the gouache contact time. The longer the time, the stronger the flavor, and the shorter the time, the lighter the flavor. Since each factor is interrelated, there is no fixed standard for extraction time, but according to Front Street’s brewing experience: (generally) the optimal total extraction time for 15g of coffee powder is between 1 minute and 50 seconds to 2 minutes and 20 seconds.
How does water injection method affect coffee extraction?
In fact, the brewing technique is to change the amount of water injected/Increase the number of water injection steps to extend or slow down the coffee extraction time. Generally speaking, different brewing methods will be matched with specific brewing parameters. For novices, the more important thing is how to use them.15gcoffee powder1points50seconds-2points20Extract the right flavor compounds in seconds. Front Street has always recommended everyone to use the three-stage extraction method because under the appropriate parameters, the three-stage extraction can more fully extract the pleasant flavor substances in the front and middle sections, and can also properly extract the bitter flavor substances in the back section to increase the body of the coffee.
