We all know that different coffee beans have different grinding degrees. When making Pour over(V60) coffee, you need to grind the coffee beans into powder before brewing. Therefore, every coffee shop will have an electric grinder, but the price of the electric grinder is also relatively expensive, so many coffee lovers will consider a manual grinder. So how to use a manual grinder? In this article, FrontStreet Coffee will talk to you about manual grinders.

First of all, the handle of the manual grinder consists of 5 parts: the thickness adjustment screw, the inspection fixing ring, the A-shaped thickness adjustment fixing screw, the handle and the main fixing screw. Depending on the type, in some models, in order to adjust the thickness adjustment screw, the above parts need to be separated and disassembled, and then reassembled for use after adjustment. There are also models that can directly adjust the thickness adjustment screw. If you turn the thickness adjustment screw clockwise, you can grind finer coffee; if you turn it counterclockwise, you can grind coarser particles.
Especially if you want to use a rotary-wing electric grinder to grind even coffee particles, the key is to shake the grinder up and down to grind! It is important to confirm the grinding process and appearance while grinding the coffee into the desired size and thickness. However, if you become proficient to a certain extent, you can tell the thickness of the particles by the sound when shaking. Not this voice, not this sound. Maybe it sounds like advertising copy, but in fact the finer the grain, the softer the sound.
1. Unscrew the metal nut on the top of the hand grinder coffee machine
2. Remove the crank handle from the hand grinder coffee machine
3. Remove the fixed metal card above the hand grinding fineness adjustment screw.

4. Pinch the fixed column in the middle of the hand grinder coffee machine with your left hand so that it cannot rotate left and right. Turn the thickness adjustment nut with your right hand. If you turn it downwards, the grinding degree will become finer. If you turn it upward, the grinding degree will become coarser. During this process, you should put on the rotating handle from time to time and take some coffee beans to grind and observe whether the thickness meets the needs.
5. Reinstall the handle and retighten the nut on it.
After adjusting the grinding thickness, you can grind the beans. Manual grinders are used for most Pour over(V60) coffee, but they are not suitable for espresso. Espresso requires an espresso grinder, and the grinding degree of espresso will be very fine. The grinding of Pour over(V60) coffee will be coarser than that of espresso. It depends on the beans you brew.

FrontStreet Coffee generally uses a medium grinding degree for Pour over(V60) coffee, a coarser grinding degree for siphon pots, and the coarsest grinding degree for brewing in French press pots. FrontStreet Coffee also summarized relevant rules, such as the standard sieve pass rate of FrontStreet Coffee grinding thickness:
Ice drip>Hand brew Psiphon 80% > Mocha American drip filter 75-80% > Cupping 70-75% > French press 65-70%.
For example, when FrontStreet Coffee gets a new bean, it needs to determine the grinding degree of the bean. FrontStreet Coffee will use a 0.80mm standard sieve, and coffee particles smaller than 0.80 will pass through this small hole. We will first weigh and grind 10 grams of coffee beans, then put the ground coffee powder into the upper layer of the entire sieve. After repeated shaking, coffee particles smaller than 0.80mm will be sieved into the lower layer. At this time, we will weigh the coffee powder in the lower layer. For example, FrontStreet Coffee recommends that the grinding degree of Pour over(V60) coffee be medium to fine, and the pass rate of the screen is about 80%, that is, 10 grams of coffee beans can obtain about 8 grams of coffee powder. The grinding speed at the beginning is the grinding speed of hand grinding.

If the coffee powder is less than 8 grams, it means the grinding degree is too coarse, and you can adjust it a little finer; if the coffee powder filtered out is more than 8 grams, it means the grinding degree is too fine, and you need to adjust it a little coarser.
You may find it a bit troublesome, but once you get familiar with it, you will slowly get started! Hand-brewed coffee is a very detailed front-line job. The ratio of coffee powder to water, grinding degree, water temperature, and extraction parameters will all affect the flavor of the coffee. Therefore, the flavor of the coffee brewed by each barista is a little different, or the flavor of the coffee beans brewed at home will be different every time.

Therefore, in the process of slowly researching, FrontStreet Coffee will record and summarize the grinding degree, water temperature, and brewing time of each coffee bean. As for the ratio of coffee powder to water, FrontStreet Coffee's hand brewing ratio is recommended to be in the range of 1:14 to 1:18. The current ratio used by FrontStreet Coffee is 1:15, that is, 15 grams of coffee powder is injected into 225 grams of water. Because if the ratio is high, the flavor will be bland, and if the ratio is low, the flavor will be strong.

There is also the water temperature, which is also an important element that affects hand washing. The higher the water temperature, the more flavor can be extracted. Similarly, the lower the water temperature, the less efficient it is in extracting the flavor of coffee. FrontStreet Coffee will choose a water temperature of 90 degrees Celsius when brewing lightly roasted coffee beans, while it will choose a water temperature of 88 degrees Celsius for darker roasted coffee beans. Extraction time refers to the time from when the coffee powder comes into contact with water to when the filter cup is removed. The longer the contact time between powder and water, the more substances will be extracted. If the contact time between powder and water is short, the taste will be bland. The brewing/extraction time of FrontStreet Coffee is about 2 minutes.

Having said so much, it’s time to put it into practice. FrontStreet Coffee uses Panama’s Diamond Mountain coffee beans to explain it to everyone.

Front Street brewing parameters are: using Hario V60 filter cup, 90°C water temperature, 15 grams of powder volume, and 1:15 powder to water ratio. The hand brewing technique adopts Qian Street's simplest three-stage method. In the first stage, 30g of water is first used to fully moisten the powder layer into a "burger" shape and steamed for 30 seconds. Then the second stage of brewing is carried out. In the second stage, the water is injected to 125g at the timer of 54s. Then stop and wait until the water level drops to 2/3 of the powder layer before injecting the third stage (this stage of brewing is to extract the sweet and sour flavor substances in the coffee powder); in the third stage, inject water to 225g at the timer 1'40", and the total extraction time is 2'10". After the coffee extraction is complete, shake gently and wait until the coffee liquid is fully even before tasting.

Diamond Mountain, which comes from Jade Manor in the Panama production area, has berry acidity, citrus, and chocolate flavors, with rich layers and a smooth taste. Front Street believes that the Panamanian washed process has a clean and balanced taste, with bright acidity but no loss of caramel aroma.
