Mandheling, I believe everyone has heard the legend about the origin of the name of this coffee:

[Mandheling originally refers to the name of a tribe in Indonesia. There is also a story about how it became the name of coffee beans by accident. When Japanese soldiers returned to Japan after colonizing Indonesia, they were obsessed with the delicious local coffee, so they used their trade friends to ask locals to help collect high-quality coffee beans, including this Mandheling. The Japanese liked this coffee bean very much, so they asked for the name. The locals mistakenly thought they were asking where they were from, so they blurted out "Mandailing". The Japanese mistakenly said "Mandailing" as "Mandehling"; Due to this double misunderstanding, Mandheling became the name of a coffee bean. 】

There are many types of Mandheling, and there are many ways to classify them. Basically, all Arabica coffee produced in North Sumatra can be called Mandheling. FrontStreet Coffee PWN Golden Mandheling is one of the best. FrontStreet Coffee PWN Gold Mandheling coffee beans are a top-quality coffee selected by Indonesian green bean company Pawani. PWN Golden Mandheling is a trademark, a brand that is built to be the top coffee brand in Indonesia. For this reason, Pawani also searches for and purchases high-quality coffee beans everywhere on Sumatra.

Production area: North Sumatra, Aceh, Mount Gayoo
Altitude: 1100-1600m
Variety: Ateng
Processing method: wet planing
Grade: G1 three times hand-selected

Mount Acehgayo is at the northernmost tip of Sumatra. The coffee cultivation in Mount Gayoo is mainly around the town of Takegon and the hillside land next to Lake Tawa. The average height in the production area is between 1100 and 1600 meters. The quality of its coffee has always been excellent. However, due to the previous political instability, the coffee in this area was difficult to export. In recent years, the situation has been peaceful, and coffee planting in Aceh has also been developed, and the quality is better than that in Lindong.

Compared to other Mandhelings,Golden MandhelingThere will be a stronger sweetness and sucrose aroma. Although everyone knows that only PWN's Mandheling would call it Golden Mandheling, but in fact PWN’s annual output is not large, so a large part of the large-grained golden mandheling is not from PWN. If you are not sure, you might as well ask the seller to provide the certificate attached to the PWN beans to find out.

The new season’s FrontStreet Coffee PWN Golden Mandheling’s coffee variety is “Ateng”. This seems to be a very unfamiliar coffee variety. In fact, the local names for coffee varieties in Indonesia are different. For example, the Tim Tim in Indonesia is what we call Timor. Ateng is the localized name of Catimor in Indonesia. Ateng is a variety that is very suitable for cultivation and flavor development in the Aceh region.

Mandheling coffee in Indonesia generally uses the wet planing method to process green coffee beans. The wet planing method is also called the wet hulling method. Wet Hulling, also known as Giling Basah in the local language, is a traditional Indonesian coffee processing method. Judging from the names alone, wet planing and wet processing (washed processing) are very similar. However, the cupping flavors of these two processing methods are completely different. Coffee processed by wet planing is usually mellow and strong, with a very distinctive personality.

Peeling/beating
Like the washing process, coffee berries need to be processed as soon as possible after picking. In Indonesia, coffee berries are usually peeled and pulped independently at small farmers' homes. This step will remove the skin and part of the pulp of the coffee berries.

Clean
The peeled coffee beans are soaked in water for 1 to 2 hours and the beans are rubbed together to remove some of the pectin.

dry
After soaking, the coffee beans are dried for the first time independently at the farmer's home. At this time, the moisture content of the coffee beans will drop to between 20% and 35%.

collect
After the first drying, the coffee beans are sent to the market for sale. At this time, the pectin layer of the coffee beans has not yet solidified and is in a sticky state. The coffee beans will be purchased, collected and sent to a processing plant for further processing.

dry
The coffee beans collected and sent to the processing plant will be dried for a second time. This step will reduce the moisture content of the coffee beans to about 18%.

Peeling/wet planing
After the second drying, the coffee beans are put into a coffee shelling machine for wet planing. This process removes the pectin and parchment of the coffee. The difference from other processing methods is that the wet planing method will remove the parchment layer before the coffee beans are finally dried, while the washing process will retain the parchment layer for drying until the parchment layer is removed before export and transportation.

Drying & Warehousing
Finally, the coffee beans will be sent to the drying field again for final drying. This step will reduce the moisture content of the coffee beans to 11%. The dried coffee beans are bagged and stored in warehouses waiting for export.

The wet planing method can be said to be a unique coffee processing method in Indonesia that is adapted to local conditions. One of the reasons why the quality of Golden Mandheling is guaranteed is that three manual screenings are performed after the processing is completed to ensure that the number of defects in the green beans is reduced as much as possible and the particles are full and uniform in size.

FrontStreet Coffee roastingPWN Golden Mandheling Coffee Bean Analysis
FrontStreet Coffee (FrontStreet Coffee) PWN Golden Mandheling has a high-quality herbal aroma, a stronger caramel sweetness, a relatively calm and elegant fruity acidity, rich sweetness, and a mellow, wild spice flavor. Generally, Lindong Mandheling is best roasted after the second crack, which can effectively reduce the foreign flavor, but Golden Mandheling has good transparency and sweetness when baked before the second crack, and the baking interpretation space is wider.

Bring the oven temperature to 200°C and put it into the pot. Open the damper to 3. After 1 minute, adjust the heat to 160°C with the damper unchanged. Bake to 5°40° and the temperature is 148°C. The surface of the beans will turn yellow and the grassy smell will completely disappear. Dehydration is completed. Adjust the heat to 140 and adjust the damper to 4;

At 9'40'', ugly wrinkles and black spots appear on the bean surface, and the smell of toast obviously changes to the aroma of coffee. It can be defined as the prelude to the first crack. At this time, you should listen clearly to the explosion point. The sound will start to explode at 9'54'', turn down the firepower to 60, fully open the damper (be very careful when adjusting the firepower, not so low that there is no popping sound), and cook at 204.5℃.

Recommendations for brewing FrontStreet Coffee PWN Gold Mandheling coffee beans
This brewing highlights the mellow, clean and fragrant characteristics of Golden Mandheling, using a KONO filter cup (this filter cup was invented to imitate flannel to brew thick coffee. Using this filter cup can increase the body of the coffee). For medium-dark roasted coffee, choose medium-coarse grinding (70% passes through No. 20 standard sieve). The ratio of powder to water is 1:15, the amount of powder is 20 grams of coffee powder, and the water temperature is 88°C. Tips: Lowering the powder-to-water ratio can make the coffee taste richer.

Front Street recommends using freshly roasted coffee beans for brewing, so that you can maximize the rich flavor of the coffee. The coffee beans shipped by FrontStreet Coffee are all roasted within 5 days, because FrontStreet knows that the freshness of coffee beans has a great impact on the flavor. The purpose of Front Street Roasting is "freshly roasted and good coffee", so that every customer who orders receives the freshest coffee. The bean-growing period of coffee is about 4-7 days, so the flavor is at its best when customers get it.

Brewing process: Pour the coffee powder slowly, try to make it as flat as possible during the pouring process, and avoid shaking the filter cup (because shaking will make the distance between the coffee powder smaller, which is not conducive to steaming and exhausting). Pour 40g of water in a small circle in the middle of the first section and steam for 30 seconds. The coffee powder layer will slowly expand and form a "burger".

Inject 120g of water in a circle from the center of the second section to the outside. The water injection height should be as close to the powder layer as possible. Move slowly to avoid over-stirring. Inject 100g in the last stage, and wait until all the coffee liquid in the filter cup flows into the lower pot to complete the extraction. Extraction time is 2 minutes.
