What is cold brew coffee?

Cold brew coffee is Cold Brew Coffee, also known as cold brew coffee, ice brew coffee, and cold brew coffee. Put the ground coffee powder into room temperature water, soak and extract it for 12 hours, then filter the coffee grounds and the coffee liquid obtained is cold brew coffee.

The reason why cold brew coffee is so popular is that it does not require any skills to make, and there are no water injection techniques or water temperature requirements. For coffee drinkers who find Pour over(V60) coffee cumbersome, cold brew coffee is like an angel. One bottle and one coffee powder for one night, you can drink iced coffee with a full and mellow taste when you wake up.

Unlike Pour over(V60) coffee, which uses hot water and high temperature to extract coffee, the bitter substances extracted at low temperature are much less. By extending the extraction time and fully infiltrating the coffee powder, it is easier to extract small-molecule flavor substances, such as floral and fruity aromas. Coffee extracted by immersion has a smoother and more mellow taste, rich aroma, and easier to perceive sweetness.

From Front Street’s point of view, cold brew is good everywhere, but it takes a long time to make, so I suggest you soak it before going to bed at night, and then you can enjoy the amazing iced coffee the next day! !

How to make cold brew coffee?

Front Street recommends that the ratio of powder to water for making cold brew coffee is 1:13. For example: add 40g of coffee to 520g of ice water (don’t pour the ice cubes in too~) for extraction.

After adding ice water, stir thoroughly with a stir stick/spoon and put it in the refrigerator to soak for 12-24 hours. After extraction, use filter paper or fine mesh to filter out the coffee grounds before drinking.

Be careful not to grind the coffee powder used for cold brew too finely! It is recommended that the pass rate of a standard screen with a grinding thickness of 0.85mm is about 80-85%. Although low-temperature extraction can reduce the appearance of bitter substances, it is not 100%.

If the grind is too fine, the sweet and sour substances in the coffee powder will be quickly extracted, and the mellow substances will be released. An appropriate amount of mellow substances can increase the body of coffee, but if soaked for a long time, a woody taste will begin to appear, reducing the overall cleanliness of the coffee.

Moreover, if the coffee is ground too finely, there will be no movement of hot molecules during the extraction process, and agglomeration will easily occur between the coffee particles, causing the coffee to be extracted unevenly. Therefore, coffee powder with the thickness of fine granulated sugar is more suitable for making cold brew coffee.

Many coffee lovers once said that cold brew coffee is great after being placed in the refrigerator for 7 days before drinking! Theoretically, the longer the cold brew coffee is left, the stronger the fermentation flavor of the coffee will be.

but! When this fermented flavor is strong, it will cover up the taste of coffee. For those who don’t like too strong fermented flavor, Front Street does not recommend trying it easily! The best time to taste cold brew coffee is 2-3 days after filtering the coffee grounds. It is worth noting that it is recommended to add an appropriate amount of ice cubes when drinking. On the one hand, it is to maintain a low temperature. On the other hand, after the coffee is diluted, the layers will be pulled apart and more different flavors will appear. It highlights the fermentation flavor, which will be more intense after warming up, and the ice will taste better.

The origins of cold brew coffee

Many people know that cold brew coffee should be because of Starbucks, but cold brew coffee was not pioneered by Starbucks. However, Starbucks did promote cold brew coffee and made more people like cold brew coffee.

The earliest cold brew coffee is said to have been invented by the Dutch. In the 1600s, because hot coffee could not be drunk at sea, sailors could only soak coffee powder in cold water and found that it tasted pretty good. According to Front Street, cold brew coffee was very popular in Western countries, especially in the mid-19th century. Cold brew coffee spread throughout the world, from Britain to Japan to the United States. Various cold brew espresso coffees emerged in endlessly, especially in the military.

In the 1960s, Todd Simpson traveled to Peru, tasted Peruvian cold brew coffee and became obsessed with it. Soon after he designed and released what is now the world-famous Toddy Cold Brewing System. Starbucks uses the Toddy cold drink system and introduces cold brew coffee to the world.

Choosing coffee beans is all based on personal preference. There are no strict requirements on what beans to use, as long as you like it. However, because the bitter/mellow substances in the coffee beans are not easily released during low-temperature extraction, FrontStreet Coffee recommends that you use coffee beans with a sour and sweet taste~
