The coffee grown here is very different from that in neighboring Ethiopia.

Production area information

Kenya's climate and geographical conditions provide unique conditions for the growth of high-quality coffee beans. It is located in eastern Africa, with the equator running through the middle and the East African Rift Valley running from north to south. It borders Somalia to the east, Tanzania to the south, Uganda to the west, Ethiopia and Sudan to the north, and the Indian Ocean to the southeast, with a coastline of 536 kilometers. There are many plateaus in the territory, with an average altitude of 1,500 meters. The central Mount Kirinyaga (Mount Kenya) is 5,199 meters above sea level and has snow on the top. It is the second highest peak in Africa. The entire territory is located in the tropical monsoon zone, but due to its high terrain, it has a savanna climate with large seasonal differences in precipitation.

The coastal areas are hot and humid, while the plateau has a mild climate. The highest temperature throughout the year is 22-26°C and the lowest is 10-14°C. Kenyan coffee beans are the local pillar industry. Kenyan coffee is mostly grown at an altitude of 1,500--2,100 meters and is harvested twice a year. Its main feature is a distinctive fruity aroma, and the common fruity aroma is citrus. Kenyan coffee has multi-layered flavors and acidity of juice, perfect grapefruit and wine flavors, and moderate body content. It is the favorite single product of many coffee industry insiders.

SASINI Manor is located in the KIAMBU production area, at an altitude of 1,500 to 2,000 meters. The scenery here is beautiful, the climate is pleasant, the sunshine is abundant, and the soil is fertile, acidic red soil. The soil is loose and deep, so it has good drainage and the pH value of the water is between 5.5 and 6.5.

SL-28 were two of the most highly regarded varieties produced by Scott Laboratories in Kenya in the 1930s. The Scott Laboratory no longer exists but is now the National Agricultural Laboratory, part of the Kenya Agriculture and Livestock Research Organization. Both varieties are Bourbon-derived varieties, although from different lineages: SL-28 was developed from a drought-resistant variety originally grown in Tanganyika, part of modern-day Tanzania; it is generally considered to be of the highest quality, but does not yield as much as other commercial Arabica varieties. This SL variant all exhibits bronze-colored young leaves.

Introduction to treatment method

The beans purchased from Front Street are processed by washing.

The Kenyan washing process adopts a repetitive process of washing after fermentation. On the day of harvest, the best quality coffee cherries are selected, peeled and fermented. The fermentation time is 24 hours, and then washed with clean river water after 24 hours. Then, it is fermented with clean river water for 24 hours again, and then washed. This cycle is repeated three times to reach 72 hours, so it is called the Kenyan 72-hour fermentation and washing method, or K72 for short. This processing method allows the coffee beans to ferment at low temperatures for a long time, giving the beans a brighter, cleaner yet fuller flavor!

Front Street Coffee (FrontStreet Coffee) Roasting analysis   Due to the high altitude, this rich Kenyan coffee has hard bean quality. It initially climbs with a higher temperature rise, turning to the yellow point in about 5 minutes, then lowers the firepower to enter the Menard reaction, and when it reaches 166 degrees, lowers the firepower again to extend the Menard reaction time. When the first burst begins, the heat absorption is strong, so it is recommended to maintain heat during this stage to prevent stagnation. First crack takes more time to develop, which helps reduce acidity and develop flavor.  Roasting machine Yangjia 800N (baking capacity 300 grams)

Put the pot into the pot at a furnace temperature of 170°C, fire power 100, and open the damper 3; the temperature recovery point is 1'42'. When the oven temperature is 140°C, open the damper to 3.5 and the firepower remains unchanged. When the oven temperature is 149°C, the bean surface turns yellow, the grassy smell disappears completely, and it enters the dehydration stage;

 7'14''Dehydration is completed. The firepower and damper remain unchanged. 7'30''Wrinkles and black spots appear on the surface of the beans, and the smell of toast turns to coffee, which is the prelude to the first crack. At this time, pay attention to the sound of the first crack. At 8'20`, the first explosion started, the damper was opened to 4, and the firepower was reduced to 50. After the first explosion, the development time is 1'50''. When it reaches 188℃, the firepower is reduced to 30, the temperature rise is evened out, and the pot is placed at 193.3℃.
