Front Street has always been a fan of Mandheling coffee, and at the Front Street Dongshankou store, coffee from Africa and Ethiopia is the most popular among friends, such as washed Yirgacheffe, sun-dried Oiran, Gesha Village, etc.
When it comes to the difference in coffee flavor between Mandheling and Oiran, Front Street believes that it is the obvious coffee flavor.Mandheling coffeeIt is the most mellow coffee in the world, and it can also be said to be the coffee that everyone thinks is bitter. It has a fragrant aroma, rich taste, strong taste, and a slight taste of chocolate and syrup. AndOiran coffeeBelonging to Ethiopian coffee, Ethiopian coffee has obvious floral and fruity notes.Oiran coffeeIt also has obvious flavors of tropical fruits, such as mango, jackfruit, floral aroma, and honey. It is like a cup of fruit tea, or it can be said to be what everyone thinks of as sour coffee. Therefore, Front Street said that there is a clear difference in the taste of Mandheling and Oiran coffee.

The Dutch first introduced Arabica saplings to Ceylon and Indonesia in the 17th century AD. Ceylon is now Sri Lanka. In 1877, a massive disaster struck the Indonesian islands. Coffee rust has killed nearly all coffee trees. As a last resort, people had to give up the Arabica that had been cultivated for many years. They introduced robusta coffee trees from Africa, which are highly resistant to disease.

Today, Indonesia is a big country producing coffee. The main producing areas are Java, Sumatra and Sulawesi. Robusta accounts for 90% of the total output of various products. The Sumatran Mandheling belongs to the rare Arabica species. These coffee trees are planted on hillsides between 750 meters and 1,500 meters above sea level. The unique and mysterious Sumatra gives Mandheling coffee a lot of substance.

Indonesia is the largest archipelagic country in the world. It introduced Arabica tree coffee cultivation as early as the 18th century during the Dutch rule. The main production areas are located in Sumatra, Java and Sulawesi. The southeast of Sumatra and Java face each other across the Sunda Strait, the north faces the Malay Peninsula across the Strait of Malacca, the east faces Borneo across the Karimata Strait, and the west faces the Indian Ocean.
Characteristics of Lin Dong Mandheling
Lintong Mandheling is produced in the Lintong Mountains in north-central Sumatra, near Lake Toba. FrontStreet Coffee's entry-level beans from the Mandheling production area in Indonesia come from here. Lin Dong Mandheling also uses a unique wet planing method, which creates its characteristics of low sourness and high alcohol content. There is Lam Tung Mandheling Coffee andGolden Mandheling Coffee。

Mandheling is located in the LINTONG area in the north of Indonesia's SUMATRA Island. Ancient fruit trees are planted in the shade. The ancient shade trees can maintain humidity and increase soil fertility and are rich in organic matter. Machines are rarely used to remove the shells of Sumatran beans. This is different from Central and South America in the unique semi-aqueous method of Indonesian coffee beans, called Giling Basah, which is the wet planing method. Coffee beans treated with Giling Basah have particularly low acidity and a thick body.
Mandheling coffee beansThe particles are larger and the beans are harder. Its cultivation process is prone to defects, and it generally undergoes extremely strict manual selection after harvest. If the control process is not strict, it can easily lead to uneven quality. In addition, differences in baking procedures will directly affect its taste. Therefore, it has become the most controversial item. Before Blue Mountain Coffee was discovered, Mandheling was considered the best coffee. The mellowness of Mandheling gives people a masculine feeling. It has a moderate sour taste and a strong aroma. It has a bitter taste and a strong body. It is courageous to duel and has the spirit of an American western cowboy.

Mandheling coffee bean wet soaking method
Indonesia has high temperatures and humidity all year round, lacks long-term sunlight, and the humidity is as high as 70-90% all year round. Therefore, it is obviously unrealistic to rely on pure sunlight for processing. For Sumatra, where the weather is changeable, even if the coffee beans are washed, it is difficult to spare a week of sunshine for drying, so the humidity The planing method came into being. After the previous washing process, the coffee beans with the sheepskin are exposed to the sun for 1-2 days, so that the moisture content of the coffee beans reaches 30-50%, and then the sheepskin is removed for sun drying. This can speed up the drying speed of the coffee beans and greatly shorten the drying time.

Of all the single-origin coffees, Mandheling has the ugliest appearance. However, coffee friends say that the less beautiful the Sumatran coffee beans are, the better they taste. Manwuning coffee is recognized as the richest coffee in the world.
Mandheling coffee varieties
Indonesia has a very long history of growing coffee beans. In the past, Arabica was grown. Due to leaf embroidery disease, 90% of the coffee beans exported from Indonesia are Robusta coffee beans, and only 10% are Arabica coffee beans. The variety of Lindong Mandheling coffee on Front Street is TimTim Ateng, and the variety of Golden Mandheling coffee is: Ateng. In fact, timtim is Timor, an Arabica variety with Robusta ancestry, while Ateng is Catimor, a cross between Catura and Catimor. That variety is just the local name.

Ethiopian wine region
Ethiopian coffee beans are generally named after their place of origin, and "Oiran" is actually produced in the Hambella producing area in the Guji producing area of Ethiopia. Hambella is located in Guji, the largest coffee-producing area in Ethiopia, and is administratively affiliated with Oromia State. The Guji production area was once part of the Sidamo production area, but in 2010 it was separated into a new production area by the Ethiopian Commodity Exchange (ECX). The most famous coffee beans in the Guji producing area areOiran coffee beansNone other than the one that won the 2017 TOH (Ethiopia National Taste of Harvest Competition) with its outstanding strawberry cream flavor, and is a well-deserved winner. But not all coffee beans produced in Hambera can be called "Oiran". Only the sun-dried coffee beans from the "Buku Abel" processing plant can be called Oiran.

The flavor of coffee in each coffee producing area is different. Front Street, the coffee producing country in Ethiopia, has purchased more than a dozen bottles, and Oiran coffee is the representative coffee of the Sidamo producing area and is also a popular single-origin bean in Front Street.
Oiran coffee
Oiran coffee beans are actually the Chinese literal translation of English Hambella coffee beans. They are the products of the 2017 TOH green bean competition (the Taste Of Harvest) was the last green bean from the Hambera production area in Sidamo. It stood out with its strong aroma of strawberry and cream. A mediocre Ethiopian sun-dried coffee bean from Hambera defeated the ever-victorious Geisha and won the championship in the Ethiopian TOH sun-drying category with a high score of 88.21. This made the name "Oran" worthy of the name and deeply rooted in the hearts of the people. This high-quality coffee bean from Hambera began to be known to the Chinese people as the "Oran".

Oiran's 2017 TOH tanning group championship has become well-known in China. It was discovered and promoted by the founder of Beijing Hongshun, who created his own coffee brand LeBunna (Hongshun Coffee) in Ethiopia. Of course, it would be a pity if such a wonderful name was short-lived, so in the future, Hongshun continued to introduce coffee beans from the "Buku Abel" processing plant in the Hambera production area, and called them Oiran 2.0, Oiran 3.0, and Oiran 3.1 to distinguish the previous Oiran coffee and represent different batches or production seasons. At this time, Oiran coffee still maintains certain characteristics, that is, it was purchased and imported from Hongshun, and the production area is still locked at the "Buku Abel" processing plant in Humbera. Of course, as an agricultural product, the flavor of coffee will vary from year to year.
Oiran coffee bean varieties
Because there are so many varieties in Ethiopia, it is like a natural gene bank of Arabica. On the one hand, there are many varieties and it is difficult to identify and classify them. On the other hand, the Ethiopian government is unwilling to disclose the information of these varieties out of protection considerations, so they are collectively called Ethiopian native species Heirloom, which means heirloom.

Oiran coffee beans sun processing method
Hambera is located in Ethiopia's largest coffee-producing area, Guji, and is administratively affiliated with Oromia State. Hambera faces Yirgacheffe Kochil across the mountains in the west, and is adjacent to the shakiso, Uraga and Kercha sub-producing areas of Guji in the north, south and south respectively. It is the highest coffee sub-producing area in Ethiopia and has reddish-brown soil rich in humus. The altitude is 2300 meters. The temperature difference between day and night is about 100 meters, which allows the coffee berries to grow slowly. The whole red berries are picked and processed with exquisite sun-drying. The thickness is limited to 2 to 3 layers. According to the color change after drying, manual selection is carried out twice a day on the 1st to 3rd day of drying, and 10% is selected each time. After that, it is turned every three hours, and the coffee beans are covered at noon and night, and wrapped in thick plastic sheets to avoid rain and dew to accurately control the degree of fermentation. The whole process lasts for 21 days, creating the unique flavor of Oiran.

Front Street Mandheling coffee bean roasting ideas and brewing parameters:
Front Street believes that the high-quality flavor of Mandheling coffee lies in the balance of sour, sweet and bitter, and high body. For roasting, Front Street chose medium-dark roasting, which can highlight the nutty, pine, and herbal flavors of the coffee beans. Using the KONO filter cup will give you a better body. The water temperature is 88°C, the water-to-powder ratio is 1:15, the powder amount is 15g, and the grinding degree is (China No. 20 standard screen pass rate 75%).

Brew flavor description
[PWN Golden Mandheling Coffee Bean Flavor]: The overall coffee level is varied, mellow and clean, with rich nutty and caramel aroma, with chocolate flavor, long-lasting aftertaste and high balance.
[Lindong Mandheling coffee bean flavor]: The entrance has a rich herbal aroma, dark chocolate, caramel, and a sweet aftertaste.
Front Street roasted Oiran coffee beans and brewing parameters:
FrontStreet Coffee noticed that the green beans of Oiran coffee have a fermented wine aroma of coffee flowers, which is completely different from the grassy aroma of ordinary green beans. Moreover, the green beans of Oiran coffee come in different sizes, and have more pointed heads and tails (Ethiopia Heirloon is a native species in Ethiopia). The moisture content is good, about 11%, but it is not the kind of SHB with high hardness. Beans, due to their high density and hardness, the dehydration time is extended in the early stage, and the temperature is raised before the first crack, so as to preserve the loss of small molecular aromatic substances such as floral aroma. Front Street chose light roasting. In terms of brewing, in order to make Oiran coffee more layered and rich in taste, Front Street chose to use a V60 filter cup. The body of the V60 filter cup has diversion ribs connecting the top and bottom and a large round hole in the center, which speeds up the flow rate of water falling. The spiral-shaped exhaust groove design lengthens the water flow path and increases the contact time between coffee powder and hot water. Each stream of water flows along the groove to the center of the filter cup. The pressure on the coffee powder is concentrated, and the extracted coffee has a richer layered texture.

Filter cup: Hario V60, water temperature: 90°C, powder amount: 15 grams, powder to water ratio: 1:15, grinding degree: medium to fine grinding (Chinese standard No. 20 screen pass rate 80%)

Front Street Brewing Coffee Suggestions:
Regarding coffee brewing, Front Street has always believed that the freshness of coffee beans has a great relationship with the flavor of coffee. Therefore, the coffee beans shipped by Front Street Coffee are all roasted within 5 days. The purpose of Front Street Roasting is "freshly roasted and good coffee", so that every customer who orders receives the freshest coffee. The bean-growing period of coffee is about 4-7 days, so the flavor is at its best when customers get it.
For those who need to grind the coffee beans, Front Street would like to remind you that if the coffee beans are ground in advance, there is no need to raise the beans. Because during the transportation process, the pressure generated by the carbon dioxide in the packaging can also make the coffee flavor mellower, so you can make a cup of coffee immediately after receiving the coffee powder. But the coffee powder needs to be brewed in time, because the coffee powder oxidizes quickly when exposed to air, which means that the flavor of the coffee will dissipate relatively quickly, and the flavor of the coffee will not be so good. Therefore, Front Street recommends buying whole beans and grinding them freshly, so that you can better taste the flavor of the coffee.

For those who do not like bitter taste, they may prefer Ethiopian coffee; for those who do not like sour taste, they may prefer the taste of Mandheling or Brazilian coffee. In fact, Front Street believes that each type of coffee beans has its own unique flavor, and as long as you like it, it will be the best tasting.
