If you come to Front Street and want to drink a cup of fragrant and bitter coffee, Front Street will serve you Front Street Mandheling Coffee. Heqianjieblue mountain coffeeSame,MandhelingThis name has long been famous in the coffee circle. Behind these three words, there is such an interesting story.
So what is the relationship between these two things??
This starts from the Japanese occupation of Indonesia during World War II. At that time, a Japanese soldier went to a local cafe and drank a cup of extremely fragrant coffee, so he asked the shopkeeper the name of the coffee. The shopkeeper mistakenly thought that the Japanese soldier asked him where he was from, so the shopkeeper replied: Mandaining. After the war, the Japanese soldier recalled the drink he had in IndonesiaMandheling coffee, and found a local coffee shopper in Indonesia to help him transport 15 tons to Japan. When someone asked for his name, the Japanese soldier mistakenly said Mandailing instead of Mandehling.
It was because of this double misunderstanding that the word Mandheling appeared, and also because Mandheling coffee was so popular in Japan.MandhelingThis is how his name spread. And that coffee merchant is the now-famous Pwani Coffee Company (PWN). As for PWN Company, Front Street will introduce it to you in detail in the following articles.

Now let us first understand what isMandheling coffee.
Front Street Mandheling coffee is an Arabica coffee originating from the Mandheling area near Bukit Barisan Mountain in North Sumatra. Front Street Mandheling coffee has high body, low acidity and a slightly herbal flavor.

It is said that historically, the Mantelin coffee plantation originated from the forced cultivation system introduced by the government of the Dutch East Indies. In 1835, the Dutch brought coffee seeds from Java and attempted to cultivate them on land in Sumatra. With the help of the Dutch East Indies government, coffee was subsequently spread to several regions in North Sumatra. Mandheling usually refers to Typica or other varieties of coffee beans grown in the mountains around Tobahu. Depending on the region, the green bean merchants are different, so these names are used to distinguish different regions of Mandheling.

There are five types of Mandheling coffee on Front Street., respectively: Front Street Sumatra Wahana Estate Sun-Dried Mandheling, Front Street Lindong Mandheling, Front Street Vintage Mandheling, Front Street Aceh Sumatra Tiger Mandheling, and Front Street Golden Mandheling. So what's the difference between them?

[Front Street Sumatra Wahana Manor Sunshine Mandheling]
This is a Typica coffee bean produced in Wahana Manor in Sumatra, Indonesia. Wahana Manor was built in 2005 and is located near LeaMungkur Village in Sidikalang District in northern Sumatra, Indonesia. Sidikalang has been one of Indonesia's famous coffee-producing areas since ancient times. Vahana Estate has about 30 hectares of coffee nurseries. Mandheling coffee gives the impression of a strong bitter aroma, but this front street sun-dried Mandheling has its own unique style, bringing more sour and sweet flavors of preserved fruits.

【Lindong Mandheling on Front Street】
Front Street Lindong Mandheling is produced in the Lindung Mountains in north-central Sumatra, near the southwest of Lake Toba. High-quality Lam Dong is distinguished from other Sumatran coffees by its fresh taste and brighter acidity. Mandheling coffee beans have larger particles and harder beans. Because they have more defects, they need to be carefully selected during the coffee processing process. Mandhelings in the Lindong area have also begun to be subdivided. In recent years, some Mandhelings named after regions have begun to appear on the market. The significance of the Lintong area has also been narrowed down to the production area near Lintonghuta.
【Front Street Aged Mandheling】
The most famous Indonesian aged beans are Mandheling and Java Old Brown. The so-called aged Mandheling means that after the coffee beans have been processed to a certain extent and stored for a long time, the sour and astringent components of the coffee beans are precipitated and converted into sugar, and the flavor becomes more rounded.
Front Street Aged Mandheling has a wonderfully sweet taste, perfect for single shot or espresso.

[Front Street Aceh Sumatran Tiger Mandheling]
The varieties of Front Street Indonesian Tiger Mandheling are mainly Kadura, Typica and Sidikalong. Only those Mandhelings with a defect rate of more than 17 meshes and less than 4% can be called Tiger Mandheling. Front Street Tiger Mandheling is produced in the Indonesian Sumatran Tiger Manor, which is located in the Gayo Mountains in the north of Aceh Province, Sumatra, across Indonesia on both sides of the equator. Front Street Tiger Mandheling has a balanced taste, high cleanliness, and obvious flavors of cream, dark chocolate and nuts.

【Front StreetGolden Mandheling】
Front Street Golden Mandheling is produced in the Lindong region in northern Sumatra, Indonesia. It is a relatively high-grade Mandheling, which is processed with more delicate techniques.Mandheling coffee, the coffee beans are picked purely by hand.
The specification of Front Street PWN Golden Mandheling is more than 18 mesh, with less than 3 defective beans (300g green bean sample). It belongs to the highest grade G1 grade, the color is dark green, and it is a flat bean with a neat shape. After rigorous screening of Front Street PWN Golden Mandheling, FrontStreet Coffee found that it not only lacks the earthy smell unique to ordinary Mandheling, but also tastes cleaner and more translucent, and has a stronger sweetness.

Bought from Qian StreetFront Street Golden MandhelingProduced by PWN Company, it comes from Lake Tawa in the Gaio Mountains in northwest Sumatra. The Japanese have been very interested in this coffee bean since they discovered Mandheling. In the process of cooperating with local green bean merchants, a strict screening system was established. After the processed green beans were screened by density and color separation, the beans were manually picked four times. In the end, golden Mandheling was presented with the same color and uniform bean shape. PWN has set such a high standard for gold Mandheling, which means that the price of PWN gold Mandheling on Front Street is destined to be higher than ordinary Mandheling.
But what’s going on when there are some golden Mandheling coffee beans on the market, but they are not labeled as being from PWN? In fact, this is the case. In order to raise the price, some green coffee beans sellers who sell Golden Mandheling select particles above 18 mesh from the same G1 grade Golden Mandheling coffee beans for sale. Some will even use 3 picks to make the appearance as close as possible to PWN Gold Mandheling. Even if they look similar, they are only superficial and the taste cannot deceive people. Front Street bought several coffee beans also called "Golden Mandheling" and conducted a blind test. The baristas on Front Street can identify Front Street PWN Golden Mandheling. That is because the cleanliness of Front Street PWN Golden Mandheling is unmatched by other "Golden Mandhelings".

Why is it called Golden Mandheling? It is said that when the green beans are processed, Mandheling emits a golden luster under the sunlight, so it is named Golden Mandheling.
However, it was not a Japanese company that registered Golden Mandheling as a trademark, but PWN (Pawani Coffee Company), which cooperated with Japanese companies in the early days to export Mandheling green beans.
Since PWN Company has registered the English name "Golden Mandheling" as the company's trademark, only the Golden Mandheling coffee produced by PWN Company is the true Front Street Golden Mandheling. You can identify the authentic Front Street Golden Mandheling based on the green bean sack with the PWN logo and a certificate of origin signed by the PWN company. Front Street displays these two logos in the Dongshankou store.

The unique processing method of Mandheling coffee - wet planing method
Anyone who drinks Mandheling coffee regularly should know that Mandheling’s signature flavor profile (low acid, mellow and intense) is inseparable from his processing method. The emergence of the wet planing method is because Indonesia’s annual humidity is between 70% and 90%, and annual rainfall is high. In order to pursue greater economic returns, Indonesian farmers created the giling Basah (Wet Hulled) treatment method. The processing process is faster than other processing methods, but this processing method will make the beans easier to be squeezed, forming small gaps. This is what we call horseshoe beans or sheep's feet beans.

With the development of Indonesia's economy, more and more processing stations or manors have sufficient funds to invest in the development of processing technology. However, most Mandheling coffee is processed using the wet planing method. Traditional Sumatran people call this processing method [Giling Basah】。

After the coffee fruits are harvested and sorted, the peels are removed, and then placed in a pool and fermented with water for 24 to 36 hours to remove part of the pectin. The wet green coffee beans are evenly spread and dried until they are semi-dry and semi-wet. The parchment is removed, and the green coffee beans are completely exposed before being sun-dried. When the moisture content of green coffee beans drops to 10% to 12%, they will be properly bagged and stored.
Front Street Golden Mandheling Coffeebean seeds
The new Front Street Golden Mandheling coffee bean of Front Street is Ateng, which is the common name of Katim coffee among the local people in Sumen, Indonesia. Ateng takes its name from the Aceh Tenggah area.

In fact, as early as 1658, the Netherlands transplanted the descendants of the European Typica mother plant to Sri Lanka, but unfortunately the planting failed. Later, in 1699, the Netherlands transplanted the coffee trees from Malaba in eastern India to Java. This trial planting was successful, and Typica grew steadily in Java. In 1718, the Netherlands transplanted the Typica coffee trees that had been successfully planted in Java to Sumatra and Sulawesi. After more than a century of reproduction, just as Indonesia's Typica was at its peak, a leaf rust disease at the end of the 19th century swept most of Indonesia's Typica, and later a more disease-resistant variety, Robusta, had to be introduced.
Brewing recommendations
The recommended brewing parameters for FrontStreet Coffee are: Kono filter cup, 86°C water temperature, 15 grams of powder, 1:15 powder to water ratio, grinding degree BG#6K (Chinese standard No. 20 screen pass rate 70-75%
Readers who often read articles related to FrontStreet Coffee should know that the water temperature and filter cup used are different between light roasted coffee beans and dark roasted coffee beans. The water temperature is low because you do not want to extract too much impurities. When FrontStreet Coffee chooses dark roasting, too many aromatic substances have been released. If you continue to use the water temperature of light roasting for extraction, it will lead to over-extraction. The reason why FrontStreet Coffee chose the Kono filter cup is because the flow rate of the V60 filter cup is too fast and under low water temperature conditions, it is easy to under-extract. The Kono filter cup has few ribs and is located at the low end. The filter paper is close to the filter cup, which can limit the air flow, increase the contact time between water and coffee powder, allow the coffee powder to be fully extracted, and enhance the mellow taste.

Brewing method
FrontStreet Coffee adopts segmented extraction. Use 30 grams of water to steam for 30 seconds. When the water level drops to 125 grams, continue to pour water until the powder bed is exposed. Stop pouring water until the water level drops to 225 grams. When the water level drops and the powder bed is exposed, remove the filter cup. (Steaming starts timing) The extraction time is 2'00'.
