Nowadays, more and more people have the habit of drinking coffee every day. But for people who don’t work in coffee shops, how can they drink coffee at any time? At this time, the barista at FrontStreet Coffee brought out the ear-hanging coffee bags! Today, Front Street is going to share the current season of Front Street CoffeeHanging ear coffee——The story behind Brazilian Red Bourbon coffee beans and the tips for brewing in ear-hanging bags.

Brazil is the world's largest coffee producer. Coffee is mostly produced in plains or plateau savanna climate zones, with an average annual temperature of about 20°C. The excellent climate and mostly flat geographical conditions allow Brazil to plant coffee on a large scale, and use machines to harvest coffee cherries. As you can imagine, the yield is naturally amazing.

|The impact of dry weather in 2020 on Brazilian coffee production in 2021 and even 2022
In addition to the impact of the COVID-19 epidemic on Brazil's coffee sales in 2020, Brazil's dry weather this year has greatly reduced the production of Brazilian Arabica coffee beans. Brazil has the opportunity to repeat the drought disaster of 2014. According to financial network and foreign media reports, Judith Ganes, a well-known soft commodity expert who has been reading various articles and pictures about Brazil’s drought on the Internet, went to Brazil for field investigation in December and stayed in Minas Gerais, Brazil’s largest coffee-producing area, for seven days.

Ganis pointed out that although it is not yet possible to estimate the specific production of Brazilian Arabica coffee next year, in the estates I visited, some places may be affected by 30%, some places may be 50%, and some places may be as high as 100% (Editor's note: The damage does not refer to a direct reduction in production, but the planting area affected by drought). At the same time, Ganis also said: "I have been in the coffee industry for more than 30 years, and the situation of some of the estates shocked me. I have never seen it so bad." The yield reduction effect caused by drought is not only for 2021, but may also affect 2022."

During the seven-day trip, except for the two coffee-growing areas of Morgiana and Cerrado, the situation was slightly better, because these places have complete irrigation systems and timely pruning of branches and leaves. The expected yield reduction is only between 10% and 30%, and a large part of this is due to the low output in the year.

Brazilian Cerato coffee region
The coffee beans used by FrontStreet Coffee to make Brazilian hanging ear coffee come from the Cerrado coffee production area in Brazil. Not all coffee grown on the prairie is called Cerrado coffee. The only coffee that can be called Cerrado coffee is in the area with an altitude of 1100-1300m. This is the essence of the Cerrado prairie. With high altitude and fertile soil, Front Street believes that the coffee beans produced in this area are sweet, rich and have no earthy smell.

Affected by the drought, Rio de Janeiro-based Coffee New Selection said: "We think coffee futures prices will rise in the first half of next year as the outlook for subdued production and optimism about vaccinations boost coffee demand. It may return to a range of $1.40 to $1.50 per pound from about $1.23 now." But despite this, FrontStreet Coffee'sSeasonal hanging ear coffeeAnd the price of Brazilian coffee beans from FrontStreet Coffee will still remain at the original price. I hope more friends will learn about Brazilian coffee beans.

|Brazilian coffee bean variety-Red Bourbon

The Bourbon species is a secondary species resulting from the mutation of Typica. Together with Typica, it is the oldest existing coffee species. The green fruits will appear bright red when ripe. Compared with Typica, the leaves of Bourbon are wider and the growth is denser. Although the fruit yield is higher than Typica, the harvest period is also 2 years. It is also a low-yielding variety, but it has a high-quality taste, like the sourness of red wine, with a sweet aftertaste.

Coffee bean particles are larger in shape, uniform in size, uniform in color and shiny. To facilitate harvesting, farmers will prune coffee trees to no more than 150 centimeters. After the red bourbon coffee tree blooms and bears fruit, the color of the coffee fruit changes from: green > to light yellow > to light orange > to mature red > to mature dark red, so it is also called "red bourbon species". In fact, red bourbon is what we generally call bourbon species. Bourbon species grown at high altitudes usually have a better aroma and brighter acidity, and even taste like red wine.

|Brazilian semi-dry processing

The semi-sun treatment method is a method between sun exposure and water washing. It can be further divided into two categories: peeling sun treatment and honey treatment. The two types of processing methods are basically very similar. They both remove the outer skin of the coffee cherries as in the washing process, but skip the "pool fermentation and water rinsing" process of the washing process and directly expose them to the sun. Although the methods seem to be similar, there is one important difference that results in two very different flavors and is worth explaining separately.

This treatment method uses much less water than the washing method, and part of the method is similar to washing (removing the peel and pulp), and part of it is similar to sun-drying (without fermentation in the tank), so it is also called the semi-washed method. The introduction of the semi-sun treatment method does not mean that it is used in all Brazilian production areas. Cerrado with lower aroma and humidity is still mainly processed by the sun. Semi-sun treatment is a supporting role in Cerrado. However, the red bourbon from the Cerrado region purchased by FrontStreet Coffee uses the semi-sun treatment.
