The tasting period refers to the best tasting time after coffee beans are roasted. During this period, because there is not much obstruction from carbon dioxide, and the flavor of the coffee has not been lost a lot, soWe can brew the richest coffee and get the most complete flavor experience.

But did you know that in addition to coffee beans, freshly ground and brewed coffee also has the best time to enjoy it? In fact, just like coffee beans, because the aroma of coffee is volatile, after brewing it, we need to drink it before the aroma evaporates to get the most complete experience. But unlike coffee beans, coffee is also affected by temperature.
As Front Street often shares, the temperature of coffee affects our taste buds. At different temperatures, we perceive different flavors differently. There are checks and balances between flavors. When the intensity of the flavors changes, the drinking experience will be very different.

图片

Not only that, changes in temperature will also have a certain impact on some substances in the coffee, causing changes in the taste. So when the coffee is brewed, Front Street recommends that everyone drink it as early as possible.
But many times we cannot finish the coffee quickly, so some friends are curious: "How long is the best time to finish the brewed coffee?"

图片

So today Front Street will do an experiment to see how long it takes to finish the brewed coffee!

Brewing experiment
In this experiment, two beans with different roasting degrees will be brewed, and then tasted at different times and temperatures to see the difference between the coffee in different states and the best time to drink it.
Similarly, the beans used in this experiment are still one dark roasted coffee bean and one light roasted coffee bean. They are Front Street Sumatra and PWN Golden Mandheling in Front Street Doudan.(left)andFront Street Yirgacheffe Guo Ding Ding(right)。The brewing parameters are as follows:

图片

Amount of powder used: 15g
Grinding degree: 75%~80% screening rate of No. 20 screen
Pink to water ratio: 1:15
Brewing water temperature: 92°C(light roast)/88°C(Dark Roast)
Brewing method: three-stage (30ml+120ml+75ml)
Brewing time: 2 minutes

I won’t go into too much detail about the brewing process here, let’s go straight to the tasting and sharing!
When it is first brewed, the temperature of the coffee is in the range of 60~65°C.The aroma of diced fruit is very prominent. Just by getting closer, you can capture the aroma of flowers and lemon. The taste is very balanced and smooth. The flavors captured include white floral, lemon, apricot, berry, and oolong tea;
Golden Mandheling also has a very prominent aroma, balanced taste, and a very mellow taste. Then the flavor has the aroma of chocolate, nuts, caramel, the sweetness of cream, and the aftertaste of some spices.

图片

After 10 minutes, the temperature of the coffee dropped to the 50~55°C range. The experience between the two is not much different from the previous ones. Both have outstanding aroma and smooth taste. It's just that the sour taste of the fruit has begun to increase slightly.
At the 20th minute after brewing, the temperature dropped to the 45~50°C range, and the coffee began to change significantly. When you get closer, it doesn't have the rich aroma as before, and you can also see caked oil on the surface, and the taste is not as smooth. Although the flavor aspect is also outstanding, it is not as obvious as before.

图片

At the 30th minute, the temperature of the coffee dropped to the range of 40~45°C. The aroma and taste are the same as the former, without much change. What starts to change is the taste of coffee. The sourness of the diced fruit begins to become obvious, and it is difficult to capture the floral aroma when drinking it. The flavor is more of sweet and sour fruits such as lemon, apricot, and berry. The bitterness of the Golden Mandheling is also obvious, and the flavor is dark chocolate, nuts, cream, and caramel.
At the 40th minute, the temperature of the coffee dropped to the range of 37~40°C. The performance of the two cups of coffee was identical. It had completely lost its tangy aroma, and the taste was also slightly inferior and not as smooth. Although the bitterness and sourness of the two cups of coffee did not increase further, there was no longer much flavor expression.
By the 50th minute, the temperature of the two cups of coffee had not changed. But the flavor, texture, aroma, and taste are no longer outstanding. Although it's not unpleasant to drink, it's not great either. So we can think that after the coffee is brewed, it is already ready for 50 minutes.Appreciation periodExtreme(under normal placement)。

图片

To sum up, we can know that under normal circumstances, it is best to drink coffee within 50 minutes after it is brewed, so that we can ensure a high-quality tasting experience throughout the process.
Then maybe at this time, many friends who have not paid attention to Front Street before will be curious. Since the coffee does not taste so good after it is cooled down, can it regain its delicious taste after heating it?

图片

The answer is naturally no! Front Street has shared many related articles before and conducted many experiments. The final results are all without exception. Although the taste of coffee can become more balanced after heating, because its aroma has evaporated, reheated coffee cannot return to the deliciousness when it was brewed.
If you want to extend the "tasting period" of your brewed coffee, Front Street Club recommends it to you."Just one trick to keep your coffee fragrant for a long time"In this article, Front Street shared that by "capping" or putting in a thermos bottle, the evaporation rate of the aroma and the temperature drop can be reduced, so that the aroma of the coffee can be retained for a longer period of time and the appreciation period can be extended~
