The iced Pour over(V60) coffee I shared with you in the past is the Japanese method of Pour over(V60) iced coffee, which is essentially hot coffee and ice cooling. In this article, Front Street is going to introduce iced Pour over(V60) coffee made with ice water, so don’t blink!
Can ice water also be used to make coffee?
The brewing time for a normal cup of Pour over(V60) coffee is only 2-3 minutes. Only high-temperature hot water can be used to extract the flavor of coffee in such a short time. It seems unrealistic to use ice water to wash it. Just look at the ice drip cold brew, which is based on hours.

However, this time we are going to deeply dissect the principle of coffee releasing substances. Basically, what we understand as the hand-brew extraction mode is a brewing method derived from a series of brewing theories and practices. For example, someone tells you that using this water temperature, this grinding degree, and this water injection method can brew good-tasting coffee, and in fact, it can indeed brew good-tasting coffee.
But if you carefully analyze the relationships, such as the relationship between grinding degree and water temperature, and the impact of various water injection methods on the taste of coffee, you will be able to find other delicious brewing methods (the road to success is not unique).

Returning to the issue of making coffee with ice water, although the extraction efficiency of ice water is far less than that of hot water, friends who have understood the relationship between the extraction factors of hand-made coffee should understand that the water temperature is not higher, the grinding degree is not finer, and everything has a reasonable point.
Please take a look at FrontStreet Coffee’s ice water coffee brewing plan and analysis below.
First, our goal is to use ice water to make a cup of ice-cold and delicious Pour over(V60) coffee. As for the choice of beans, Front Street chose Costa Rica Strawberry Candy coffee beans. This coffee bean has performed very well in past ice hand brewing and cold brewing. The light rose fragrance and the sour and sweet strawberry gummy look very comfortable and delicious.

The second step is to choose a filter cup for brewing. Because the extraction efficiency of ice water is low and the coffee powder will accumulate, Front Street chose the Kalita wave flat-bottomed 3-hole cake filter cup. The reason why a flat bottom is better than a tapered one is that it will not block the water outlet hole, and this filter cup itself drains water slowly, which fully meets the requirements.

The next step is to choose the grinding degree of the coffee powder, mainly considering two factors, whether it will cause siltation and blockage, and whether it will easily lead to insufficient extraction. After many tests and adjustments, Front Street decided to use a No. 20 sieve to pass 90% grinding degree, EK43s scale 7.
To prepare to start brewing, we also need two handles for the kettle (one for hot water and one for the ice-water mixture) and a spoon for stirring (to prevent clogging).

①Put the filter paper on the rack, pour in 20g of coffee powder, inject 35ml of hot water at 96°C to moisten all the coffee powder, and steam for 1 minute and 30 seconds.

After many verifications, 35ml of water is just enough to moisten all the coffee powder and the minimum amount of water is dripped into the lower pot. The longer steaming is also to improve the subsequent extraction efficiency.
② Then use a hand kettle filled with ice water to inject water. Inject 100ml of ice water in a circle with a large flow of water, and use the impact of the water column to make the powder layer tumble.

③When the water level drops to 1/2, continue to inject 100ml of water, and then use a small spoon to stir the powder layer to prevent the fine powder from blocking the drain. End the extraction when all the coffee liquid flows into the lower pot, which takes 4 minutes and 20 seconds.

The freshly brewed coffee is very cold. When you taste it, the blueberry fruit flavor is very strong and the taste is full without wateriness. It is very refreshing and comfortable to drink in summer.

Can soda water be used to make coffee?
The friends from Front Street, who have always been fond of killing, decided not to waste this opportunity to experiment and decided to use soda water as the ice water source to make iced coffee to see how it tasted.

Barista double the joy
The brewing method and parameters are basically the same as above, and the ice water is replaced with ice soda water. The steaming water is still ordinary hot water. There is nothing special at the end of the steaming process until a large number of bubbles burst out when soda water is used to make coffee.

The powder layer was also lifted higher than before, and the inside of the coffee powder was also made very fluffy by the bubbles of soda water. Finally, when the coffee liquid flowed into the lower pot, the coffee powder layer lost its support and collapsed.
Coffee brewed with soda water will have a bitter taste of soda water, and all the bubbles will dissipate when the coffee is brewed, so you will not feel the bubbles when drinking coffee.
