Before learning about brewing, many people think that brewing coffee by hand is difficult. They feel that there are many constraints and precautions, such as how many grams of coffee powder, how fine to grind it, how many milliliters of water, water temperature, brewing method... In fact, if you are enjoying it by yourself at home, Front Street feels that there is no need to be too entangled, and there is no need to use competition standards. As long as you copy a standard template, and slowly find out the taste that suits you, you can easily make a cup of satisfactory coffee.

Considering that it is a hot summer, I believe everyone prefers refreshing cold drinks to hot coffee. So today Front Street will use ice hand brewing as an example to explain its brewing ideas and processes in detail. I hope everyone can achieve coffee freedom.

What does Pour over(V60) coffee mean?

The so-called Pour over(V60) coffee refers to a method of brewing coffee by manually controlling the water flow. It is a type of drip coffee. In the process, auxiliary equipment such as filter cups, filter paper, and electronic scales are used. In addition, since Pour over(V60) coffee is suitable for various types of coffee beans, and can better and more easily display the taste of coffee itself, and the brewing scene is not limited, Pour over(V60) coffee has quickly become popular since the concept of specialty coffee became popular.

At the Front Street store, all single-origin coffee beans can be Pour over(V60), with cold and hot options. If hot hand-brewing is used, the coffee powder and hot water will be extracted at a ratio of 1:15. When the customer chooses the ice hand-brewing method, Front Street will control the powder-to-water ratio at 1:10, and then add 5 times the amount of ice cubes to help cool down and dilute the coffee.

How to make Pour over(V60) iced coffee quickly and deliciously?

Compared with other coffee brewing methods, making Pour over(V60) coffee usually requires you to complete a series of actions yourself, including weighing coffee beans, grinding, folding filter paper, moistening the filter cup, pouring powder, boiling water, filling water, shaking the coffee liquid, etc. The existence of these steps makes the making of this cup of coffee full of ritual. Without further ado, let’s get into the official brewing process.

1、Choose your favorite fresh coffee beans.

We all know that there are many types of coffee beans to choose from, mainly divided into two categories: "sour" and "bitter". According to the degree of roasting, they can be classified into three types: light roast, medium roast, and dark roast.

For customers who like floral and fruity black coffee, it is recommended to give priority to light to medium roasts. We would recommend Front Street Fruit Dingding, Front Street Sun-dried Oiran, Front Street Panama Flower Butterfly, etc. If you like a balanced taste, baristas will often choose medium roast types, such as Front Street Strawberry. There are several single products such as Sugar, Front Street Diamond Mountain, and Front Street Bird of Paradise; for friends who cannot tolerate sourness at all, you can try medium to dark roasts. It is recommended to start with Front Street Queen's Estate, Front Street Golden Mandheling, and Front Street Whelan, which can taste aromas such as chocolate nuts.

The so-called "fresh coffee" refers to coffee that is within the tasting period. The flavor description of each Front Street Coffee is based on freshly roasted beans. If the coffee beans are stored for more than a month, the aroma is likely to have been lost, making it difficult to restore during brewing. Front Street also knows the importance of freshness, so it will ensure that only freshly roasted coffee beans within 5 days are shipped, so that everyone can enjoy the most complete tasting period when they receive it.

2. Prepare materials

In addition to a pack of freshly roasted coffee beans, if we want to brew delicious coffee, we also need to prepare an electronic scale with a timing function, a hand brewing pot, a filter cup, filter paper, a grinder, a thermometer, and a sharing pot.

The thermometer is used to measure the temperature of hot water. Water temperature and grinding degree play a similar role. The higher the water temperature, the higher the coffee extraction efficiency, the easier it is to release various substances and the higher the concentration. If you use hot water close to boiling for brewing, it is easy to extract unpleasant bitter substances. Therefore, when brewing medium-dark roasted coffee beans, Front Street will use different brewing parameters from light-roasted coffee beans. Therefore, Front Street recommends using 87-90℃ for medium-dark roasted coffee beans, while light-roasted coffee requires a higher water temperature to stimulate the aroma, so 91-93℃ is used.

3、grind beans

The grinder plays a very important role in Pour over(V60) coffee. The thickness and uniformity of the coffee powder will directly affect the taste of a cup of Pour over(V60) coffee. If the coffee powder is too coarse, it will be easily under-extracted and the taste will be bland; if it is too fine, it will be easily over-extracted and the taste will be bitter. Front Street uses a tool to adjust the grinding degree - China's No. 20 0.85mm standard sieve. For medium-light roasted coffee beans, Front Street always uses a 75-80% sieving rate, which corresponds to the medium-to-fine sugar thickness; for medium-dark roasted coffee beans, Front Street uses 70-75%, which is the coarse sugar level.

This iced Pour over(V60) coffee demonstration used Front Street Flower Butterfly, which is a washed and processed Geisha blend coffee. It is medium-light roasted and has fresh citrus, white floral aroma, green tea and rounded caramel flavor. In addition to Pour over(V60) coffee, it is also suitable for making cold brew and other coffees. In order to highlight the delicate floral and fruity aroma of the coffee, Front Street uses fine sugar grinding, which corresponds to the 22-grid scale of the hand-cranked grinder C40 and the 9.5-grid scale of the electric grinder EK43s.

4、Brewing parameter settings

For ice hand punch, Front Street has compiled a universal formula: Powder amount + 10 times hot water + 5 times ice cubes = iced Pour over(V60) coffee.

Amount of powder: 15g

10 times hot water: 150 grams

5 times the amount of ice: 75 grams

Water temperature: 92°C

Grinding degree: No. 20 screen pass rate 83% (EK43s scale 9, C40 scale 22)

Filter bowl: Hario V60

Technique: three-stage

First, put 75g of ice cubes into the lower pot, then pour 15g of ground coffee powder into the filter cup and pat it flat. In the first section, we inject 30g of hot water in a small circle from the center outward with a small flow of 3 to 4ml/s and steam for 30 seconds; after 30 seconds, inject the second section of 60g of water in the same way. Be careful not to raise the liquid level too high, which may easily cause insufficient coffee extraction; when the coffee liquid is about to dry up, pour all the remaining 60g of hot water at a flow rate of 3ml/s to ensure that the extraction time falls within 1 minute 50 seconds to 2 minutes.

The washed flower butterfly brewed in this way tastes like a rich fruity flavor like lemon and grapefruit, and also highlights the sweet aroma of nuts. It has a light taste and a balance of sweet and sour. However, since there will be a small amount of crushed ice remaining after brewing, if you don’t want the coffee to be further diluted, you can drink it as soon as possible while the ice is in use.
