Aeropress looks like a syringe. If you don’t understand it carefully, you really don’t think it is a coffee brewing device. But if you understand it carefully, you will find that there are competitions dedicated to brewing with Aeropress. What kind of magical instrument is this?

Anatomy Aeropress
Like many of the appliances introduced in the previous street, the structure of the Aeropress can be simply broken down into three parts: the pot body, the filter cover, and the piston cylinder. Of course, there is also a special round filter paper, Aeropress stirring rod, and funnel. It combines the immersion extraction method of a French press, the filter paper filtration of Pour over(V60) coffee, and the pressure extraction of an espresso machine. Its working principle is to stir and mix coffee powder with hot water, then use a pressure cylinder to squeeze the air through the filter cover to extract coffee with clean flavor.

AeroPress usage tutorial
It is worth noting that the Aeropress coffee making method can be divided into positive pressure and reverse pressure. Positive pressure means placing the AeroPress pot directly on the cup, adding ground coffee powder and a certain proportion of hot water, stirring, inserting the piston cylinder and pressing down to extract.

For counter-pressure, place the piston cylinder on the pot first, turn it upside down, add coffee powder and hot water, stir it, press the filter cover, and then put it back for squeezing and extraction.

The coffee beans used in the demonstration are Front Street Brazilian Queen Estate, which is a medium-dark roasted yellow bourbon variety with a distinct aroma of roasted peanuts, rich oiliness and nutty aftertaste. Since the extraction process is very short, the grinding size of Aeropress is usually finer than that of Pour over(V60) coffee. Front Street will control the pass rate of No. 20 standard sieve to 85%, which is the thickness of powdered sugar, and the water temperature is 90°C.

positive pressure method
①First, press the round filter paper on the filter cover and moisten it with water;

②Press the filter cover onto the pot body and place the front side on top of the filter cup;

③Place the funnel and pour in 15 grams of ground coffee powder;

④ Start timing, pour hot water, and the water level reaches the "④" mark on the body of the pot;

⑤Use a stir stick to slightly stir the coffee powder in the pot so that all the coffee is moistened with water.

⑥Press the upper piston cylinder. Because positive pressure will cause coffee to drip into the lower pot, stir and press the upper cylinder quickly after filling the water. After pressing the cylinder, the dripping will stop because the inside is sealed.

⑦After 1 minute, start squeezing the piston cylinder, and the coffee liquid is pressed to the lower pot due to the squeezing effect. The time after the squeezing is completed is 1 minute and 20 seconds.

Back pressure method
①Assemble the pot body and piston, press the piston cylinder to the mark "④", and place it upside down on the table.

②Place the funnel and pour in 15 grams of coffee powder.

③Start the timer and then fill in hot water until it is full.

④Use a stir stick to stir the coffee powder evenly until a golden liquid surface appears.

⑤Press the filter cover, flip the pot body over the filter cup, do this quickly to prevent the coffee liquid from overflowing.

⑥After 1 minute, start squeezing the piston cylinder, and the coffee liquid is squeezed into the filter cup. The time after squeezing is completed is 1 minute and 20 seconds.

Of these two methods, the front street prefers the counter-pressure method, because the counter-pressure method is easier to use and has high stability. When the positive pressure is filled with water, the water will also drip into the lower pot, so it is more difficult to master.
