In recent years, as Starbucks hasflat whiteDue to its promotion, many friends who originally drank latte and cappuccino also started to drink flat white. Some friends who came to the Front Street store first asked about Fuli Bai, then asked about Ao Rui Bai, then asked about Ao Bai Coffee, and finally asked directly for flat white. Does anyone know that this is obviously the same kind of coffee? Why are there so many different names?

This type of coffee, originally called Flat White, was originally introduced from Australia. In 2000, Starbucks entered the Australian coffee market, but still lost to the local Australian brand Gloria, and finally withdrew from the Australian market in 2008. When Galleria Coffee entered the Chinese market in 2014, Starbucks needed to make its own Flat White popular before Galleria could make Flat White a success.

In this way, Starbucks launched "Fu Rui White" in 2015 and vigorously promoted it.

Origin History

According to the information searched on Front Street, the use of flat white to describe coffee can be traced back to a British movie in 1962.Danger by My Side. In this movie, flat white is used to describe poor coffee quality, which is completely different from the flat white we understand today.

Currently, there are two countries arguing over the origin of flat white, one is Australia and the other is New Zealand.

And aboutflat whiteThe earliest written records can be traced back to the mid-1980s.

In May 1983, in a magazine called Sydney Cafe, Miller's Treat Cafe mentioned flat white coffee on their menu.

In April 1984, a local Sydney newspaper article lampooned the popularity of the latte, writing: "Caffea latte translates to flat white."

In 1985, Alan Preston of a Sydney cafe called Moors Espresso Bar added the drink to their permanent menu, claiming that he introduced the idea to Sydney from his native Queensland in the 20th century

Queensland cafes in the 1960s and 1970s often served "White Coffee & flat"

In January 1985, a sign was posted in the cafeteria of Parliament House in Canberra stating "flat white only" because seasonal problems prevented the milk from forming foam.

【New Zealand】

The idea behind the flat white originated in New Zealand from Derek Townsend and Darrell Ahlers of Auckland's DKD Cafe, who claimed the coffee could serve as an alternative to an Italian latte. It has also been stated that the Australian style flat white originated from a failed cappuccino in 1989 at the Bodega Bar on Willis Street in Wellington, New Zealand. At that time, a barista named Fraser McInnes tried to make a cup of cappuccino using low-fat milk that was difficult to froth. Due to insufficient milk foam, it could not be called Cappuccino, so he named this cup of coffee Flat White.

Front Street mentioned earlier that the origin of Australian-style white coffee Flat White is controversial, and the production methods of the two controversial origin countries are also different.

Among them, Australians tend to use one shot of espresso when making Australian white coffee; New Zealanders use double shots of espresso when making Australian white coffee.

[How to make Australian white coffee at FrontStreet Coffee]

This time we use the Front Street classic Italian blended coffee, which is a recipe composed of three origins: Brazil, Indonesia, and Vietnam. It uses deep roasting, which can highlight the mellow aroma of the coffee to the greatest extent, and also allows everyone to easily extract the rich and dense coffee crema. It is very suitable for making American style diluted with water or latte with milk.

The extraction parameters for making espresso at FrontStreet Coffee are as follows:

Pressure: 9bar
Temperature: 90.5~96 degrees
Time: 20~30 sec
Pink to water ratio: 1:1.7~1:2
Powder amount: 12g (single espresso) 20g (double espresso)
Extraction concentration volume: 20ml (single portion) 40ml (double portion)

FrontStreet Coffee chooses whole-fat fresh milk when it comes to milk. The temperature of the whipped milk is between 50 and 60 degrees (the temperature is low and the lactose in the milk cannot be stimulated; if the temperature is high, the protein in the milk is destroyed and the taste will feel slag). The thickness of the milk foam is 3 mm.

What is espresso?

The original name of espresso is ristretto. The word ristretto comes from restrict and narrow, which literally means to limit the flow rate. In other words, ristretto has a slower flow rate than ordinary espresso.

Espresso is made by passing high-pressure and extremely hot water through finely ground dry coffee powder for an extraction time of 25 to 30 seconds to produce a strong and rich coffee drink.

The making process of espresso and ristretto are almost the same. The amount of powder, water temperature, and pressure used are exactly the same, but the liquid output and usage time are different.

Extraction parameters for espresso made by FrontStreet Coffee: 20 grams of coffee powder, extraction of 35 grams of coffee liquid, 27 seconds

After many experiments at FrontStreet Coffee, we learned that no matter what the extraction method is, the sour substances with light molecular weight are first extracted from coffee, followed by sweetness, and finally the bitter substances with heavier molecular weight. Therefore, espresso coffee has more pronounced acidity and sweetness and less bitterness than espresso coffee.

The flavor extracted from FrontStreet Coffee's espresso coffee is mainly dark chocolate and roasted hazelnut, which has both...creamAs smooth as wine, with low acidity, balanced taste and long-lasting aroma. The espresso coffee can extract the flavor of heavy molecular weight, and the overall taste shows the aftertaste of dark chocolate, caramel, and maple sugar.Mellow and solid, full of flavor.

What is the difference between Australian white coffee, latte and cappuccino?

Front Street understands that when searching for the differences between the three on the Internet, many people only discuss the thickness of the milk foam between them. However, this is not the case. The thickness of the milk foam only affects the taste of the coffee to a certain extent, but it does not affect the taste of the coffee. The key to determining the different tastes of the three is the ratio of coffee to milk.

In fact, the difference between the three can be divided based on the richness of the coffee aroma: Australian White > Kabu > Latte; and another classification can be made based on the thickness of the milk foam: Kabu > Latte > Australian White. Flat White's requirement for milk is to remove the loose milk foam on the surface, leaving only the more delicate part in the middle.

Flat White, Starbucks calls "Fulibai", COSTA is called "Chun Yi Bai", and Luckin is called "Au Rui Bai". The name can be changed, but the essence is Flat White. For those who want to taste the flavor of coffee but don’t want it to be too strong, FrontStreet Coffee recommends trying Flat White.
