Recently, many friends have purchased ear-mounted coffee and asked for recommendations on brewing methods. Today, the barista from FrontStreet Coffee will share how to brew ear-mounted coffee.
Hanging ear coffee
Hanging ear coffee is ground coffee into powder and packed in a sealed filter bag. The reason why it is called hanging-ear coffee is because during the brewing process, the small pieces of paper (little ears) on both sides of the filter bag need to be opened and hung on the cup for extraction. Because its main feature is that you can drink a cup of black coffee very conveniently, it has become a must-have for many offices, homes and travels.
Since the main purpose of the hanging ear is convenience, although it can be brewed using "complicated" brewing and grinding tools like Pour over(V60) coffee, this also masks the convenience advantage of the hanging ear itself. And friends who buy ear-mounted coffee all like the taste of Pour over(V60) coffee. In the office, at home or during travel, if there is a shortage of grinders, electronic scales, Pour over(V60) pots, filter cups and other equipment, hanging-ear coffee can be used to "satisfy the taste".
So without the help of these appliances, can ear-mounted coffee still be as good as Pour over(V60) coffee?

Sharing how to brew coffee pods with hanging ears
1. First of all, the net content of coffee powder in hanging ear coffee is fixed (usually 10 grams). This solves the problem of the grinder and the electronic scale.
2. The next step is to solve the water injection volume and water temperature. Just like Pour over(V60) coffee, the ratio is 1:15 to 1:16, so the brewed coffee liquid should reach 140 ml to 150 ml. The water temperature should be about 90℃. If you have a thermometer or a temperature-controlled kettle, you can give priority. If not, you can roughly judge the temperature. Generally, after the kettle is boiled, turn off the heat source and open the lid, wait 2-3 minutes, and the water temperature will reach about 90℃ (room temperature is 28℃).

3. When ready, preheat the mug (water cup), take out and tear open the seal of the ear-hanging bag, open the "ears" at both ends of the filter bag, hang it on the rim of the mug, and smooth out the powder layer.
4. Inject water into the first section. Just wet the coffee powder layer completely and perform a simple steaming.

5. After steaming, add water for the second time. Use a small flow of water in a circle to fill it up. When the powder layer drops slightly, continue to add water until it is full. Repeat until the coffee capacity in the cup reaches about 140-150 ml. Then you can remove the ear-hanging bag and enjoy.
6. If you want a more precise amount of water, you can pour 150-160 ml of water into the kettle. When brewing, after filling all the water in the kettle, you can remove the ear-hanging bag when all the coffee liquid flows into the cup. The entire brewing process takes about 1 minute to complete.

Since hanging coffee is pre-ground coffee, the flavor will be released faster than that of whole coffee beans. Therefore, if you want to enjoy the flavor of coffee, you must consume it as early as possible.
How to make ice with ear-mounted coffee pods
The specifications of the ear-mounted coffee bags are 10 grams per small bag, and the grinding level is also preset by the store. Therefore, if you brew the earloaf according to the normal process and add ice cubes, the taste will be as thin as water. Therefore, it is necessary to adjust the brewing method. In order to implement the simple characteristics of hanging ear coffee, Front Street will try to be as simple as possible in the method and auxiliary tools.
The materials to prepare are also very simple, just ice cubes, short cups, hot water and ear-hanging coffee bags. If possible, you can also prepare an extra electronic scale.
①Open the outer packaging bag of the hanging ear coffee, tear the seal along the "open" line, open the hanging ear, and hang it on the short cup。

② Prepare hot water, the water temperature is about 93°C. If you don’t have a thermometer, you can open the lid and let it sit for 2 minutes after the water boils, so that the temperature will be about 90-94°C.

③Pour 100 ml of hot water into the coffee filter bag to ensure that the coffee powder is soaked in the water and soak for 3 minutes. Then take the ear-hanging bag out of the cup and discard it.

④The last step is to add 50g of ice cubes to cool down. You can put large hard ice cubes directly into the cup, or you can prepare a separate cup with ice cubes and pour the hot coffee liquid into it. Front Street prefers the latter. Such ice cubes will be more durable and make the ice coffee taste better.

Calculated based on the weight of coffee, only about 30% of the coffee can be extracted, and the remaining 70% is fiber that cannot be extracted. Therefore, no matter how much extraction is increased, only about 30% of the coffee can be extracted. Just like the taste of tea will become lighter if it is brewed more times, the same is true for coffee.
FrontStreet Coffee this time recommends 5 types of coffee beans with distinctive flavors for making coffee ear bags: fruity, floral, fermented, winey and rich.

Recommended fermented coffee ear bags from Costa Ricafront streetGeisha Blend. FrontStreet Coffee's Costa Rica Geisha blend comes from La Mirasu Estate and is a blend of Geisha, ET47, SL28 and MAICO. Milassoux Geisha blend is processed with raisin honey, retaining 100% pectin and zero water processing. On the day of harvesting coffee berries, pour the harvested coffee berries into a large tank. The ripe and full berries will sink to the bottom; underdeveloped or overripe berries will float to the surface, and these floating beans need to be removed.
The selected coffee cherries are dried on raised beds for at least three days, and then the skins are removed and the pectin is retained before drying. At this stage, climatic factors are key to successful honey processing. During the drying process, these coffee berries must be constantly turned over to ensure even drying, but the frequency of turning must be mastered, and the drying must be slow to ensure that the coffee has fermentation, but not so slowly that over-fermentation occurs. The raisin treatment gives this bean a heightened sweetness.
