In recent years, cold brew coffee, Iced coffee is deeply loved by coffee consumers! Especially in summer, the ice drip/cold brew coffee in coffee shops can become the "king of ice coffees" in the store! One is that it has a taste that cannot be replicated by iced Pour over(V60) coffee/iced Americano, and the other is that it takes a long time to make and many of them are limited every day. Although it takes a long time to make, the two coffees are not difficult to make. In this article, FrontStreet Coffee will teach you how to make ice drippings at home/cold brew coffee。

Although they are both iced coffee, they have completely different extraction principles from Pour over(V60) coffee/American coffee. Hand-brewed coffee/Americano usually uses high-temperature hot water to quickly extract the soluble substances in the coffee particles. This extraction method has an unfriendly disadvantage, that is, it is easy to extract the bitter taste of coffee. If the water temperature/water injection size/grinding degree are not controlled well, and the extraction time is long, the coffee will not be so balanced and clean.

Low-temperature extraction can solve this problem very well, so the substances that cause the bitterness of coffee are difficult to release at low temperatures, because only the sweet and sour substances in the coffee can be extracted. The disadvantage is that because there is no heat to drive the movement of water molecules, the coffee extraction time often takes 6-12 hours. So having a drink is really annoying.

However, good food often takes time to “cook,” so it’s worth the wait! Then why does it have to be separated even though it’s the same low-temperature extraction?cold brew coffeeWhat about the two types of iced drip coffee? The reason is that the former extracts the flavor of coffee through steeping, and the tools used for production only require clean and sealable containers; the latter extracts the flavor of coffee through dripping, and a special coffee ice dripper is required for production.

Ice drip coffeeUse a mixture of ice water below 5 degrees C, let the ice melt naturally, and then control the speed of the ice water dripping into the coffee powder through the valve. The ice water drips into the coffee powder and slowly dissolves the coffee flavor, and the extraction liquid leaks out bit by bit. The complete extraction time is about 6 to 8 hours. In order to obtain a better taste, 8-12 hours of refrigerated fermentation time is required.

cold brew coffeeSame principle as cold brew tea. In the same extraction process, first grind the coffee beans, pour them into cold water, and soak them in a low-temperature environment for at least 12 hours. Then filter out the coffee bean powder before drinking. Because it is soaked and extracted, there is no need to refrigerate and ferment after filtering.

Of the two types of coffee extracted at low temperatures, the flavor of iced drip coffee will be richer and the overall level will be more delicate. The taste of cold brew coffee will be fuller, and both coffees have their own charming features. Therefore, if you don’t want too much trouble at home, you can try cold brew coffee; if conditions permit, you can buy an ice drip pot to make ice drip coffee.

How to make cold brew coffee: Front Street recommends using a powder to water ratio of 1:13 to make cold brew coffee. Grind the coffee to the thickness of fine sugar, then add ice water at a ratio of 1g powder to 13g water, and then stir to soak the coffee powder in the water. Then seal the container, put it in the refrigerator and let it sit for 8-12 hours, then filter out the coffee grounds and drink it.

How to make ice-drip coffee: FrontStreet Coffee recommends 1:13, but it is a powder-to-liquid ratio, that is, 1g of powder-drip filtered out 10g of coffee liquid. Grind the coffee to a thickness as fine as granulated sugar and put it into the container of coffee powder in the ice drip pot. Then smooth the surface of the powder layer and lay a round filter paper of appropriate size to ensure that when the water drops fall on the surface of the coffee powder layer, it can be evenly distributed without gathering in the middle.

Then use the pot to make a mixture of ice and water in a ratio of 1:1. If you can adjust the speed of water dripping, adjust it to a speed of 7 drops in 10 seconds. After filtering out the appropriate proportion of coffee liquid, put it into a clean, oil-free and sealable container and refrigerate it for 8-12 hours before tasting.

Why does ice-drip coffee need to be refrigerated and fermented? In fact, this step is not so much called fermentation as it is an oxidation process. Just like freshly roasted coffee beans, about 2% of the weight is carbon dioxide, and these large amounts of carbon dioxide are emitted with the storage environment, equipment or methods, making the pressure in the packaging higher than one atmosphere. The pressure helps the fusion of aromatic substances and oils, allowing all the aromatic substances inside the coffee beans to reach a state where they can be easily extracted.
