After entering the summer solstice, the most popular topic in the enthusiast exchange group is #ICECoffee is delicious this way. Everyone shares their experience of making iced coffee with each other every day. This article combines the opinions of some enthusiasts and compiled some tips on making iced Pour over(V60) coffee, iced drip coffee, and cold brew coffee taste better!

Since ice cubes are needed to make Pour over(V60) iced coffee, the ice cubes will continuously dilute the concentration of the coffee during the dissolving process. If you are still brewing iced coffee with a hot hand brewing ratio of 1:15 powder to water at this time, then it will appear that the coffee with just the right concentration will turn into a coffee with a distinct watery feel and a vague flavor after adding ice cubes.

Therefore, when making iced Pour over(V60) coffee, you need to consider how to brew it so that the powder-to-liquid ratio of the total weight of coffee powder and (coffee liquid + ice cubes) reaches 1:15. If you use 15g coffee powder to make iced Pour over(V60) coffee, the total amount of coffee liquid after adding ice cubes needs to reach 225g (15g powder * 15 times water).
The ratio of powder to water used to make iced Pour over(V60) coffee at Front Street is 1:10, that is, 15g of powder is injected with 150g of water (15g of powder * 10 times water). During the steaming process, the powder layer will absorb about 25g to 30g of water, and the final coffee liquid weighs about 120g to 125g. Then we subtract 120g-125g of the total amount of coffee liquid from the total weight of 225g to find that 100-105g of ice cubes need to be added.

Since the extraction time of brewing iced coffee will be faster than that of hot hand brewing, the grinding size can be a little finer than when brewing hot hand brewing (just a little is enough to release the flavor substances faster). Front Street recommends: medium-light roasted coffee beans can be ground with a Chinese standard No. 20 sieve pass rate of about 80%, and medium-dark roasted coffee beans can be ground with a Chinese standard No. 20 sieve pass rate of about 73%. If there is no way to make fine adjustments, you can use the grinding degree of hot hand brewing, and then increase the water by 1-2°C for brewing.

"It's so troublesome to calculate! I always use stainless steel ice cubes!" One enthusiast shared this experience. He extracted the coffee according to the hot hand brewing parameters and then added stainless steel ice cubes to cool down. Unlike wine, the concentration of coffee can be adjusted by the ratio of brewed powder to water, so it is also feasible to add stainless steel ice cubes after brewing~

Besides the long brewing time, there are other reasons why people love cold brew coffee. No production skills are required, just a bottle and a bag of beans in one night, and you can drink iced coffee with a full and mellow taste when you wake up. Unlike Pour over(V60) coffee, which uses hot water and high temperature to extract coffee, the bitter substances extracted at low temperature are much less. By extending the extraction time and fully infiltrating the coffee powder, it is easier to extract small-molecule flavor substances, such as floral and fruity aromas. Coffee extracted by immersion has a smoother and more mellow taste, rich aroma, and easier to perceive sweetness.

Front Street recommends that the ratio of powder to water for making cold brew coffee is 1:15. For example: add 300g of room temperature water and 150g of ice to 30g of coffee, stir thoroughly and put it in the refrigerator to soak for 12-24 hours. After extraction, use filter paper or fine mesh to filter out the coffee grounds before drinking.

One thing to note is that the coffee powder used for cold brewing should not be ground too fine! It is recommended that the pass rate of a standard screen with a grinding thickness of 0.85mm is about 80-85%. Although low-temperature extraction can reduce the appearance of bitter substances, it is not 100%. If the grind is too fine, the sweet and sour substances in the coffee powder will be quickly extracted, and the mellow substances will be released. An appropriate amount of mellow substances can increase the body of coffee, but if soaked for a long time, a woody taste will begin to appear, reducing the overall cleanliness of the coffee.

"After brewing cold brew coffee, put it in the refrigerator for 7 days before drinking it! It's great!" One fan shared this experience. Is that so? Theoretically, the longer the cold brew coffee is left, the stronger the fermentation flavor will be. However, when the fermentation flavor is strong, it will cover up the taste of the coffee. For those who don’t like too strong fermentation flavor, Front Street does not recommend trying it easily. The best tasting time for cold brew coffee is 2-3 days after filtering the coffee grounds, and the storage time is recommended to be no more than 7 days.

The production of ice-drip coffee combines drip extraction and low-temperature extraction. The equipment and steps for making ice-drip coffee are more complicated than ice Pour over(V60) and cold-brewed coffee. Ice-drip coffee requires the use of "drops" for extraction, so the water must be kept dripping. In order to achieve the purpose of dripping, the production of ice-drip coffee requires a special ice-drip coffee pot. The extracted coffee will taste cleaner than cold brewed coffee, and the flavor will be more layered and cleaner than iced Pour over(V60) coffee.

Front Street recommends that the ratio of powder to water for making ice-drip coffee is 1:13. Perform ice-drip extraction according to the recommended powder loading amount in the ice drip pot instructions, and then extract coffee liquid with 13 times the powder loading amount. For ice-drip coffee, it is recommended that the standard sieve with a grinding thickness of 0.85mm has a passing rate of about 85%, so that the ice-drip coffee extracted will be rich, full and layered.

The ratio of the ice-water mixture used for extraction is 1:1, the valve controls the flow rate at 7 drops every 10 seconds, and the entire extraction time lasts approximately 6-8 hours. One thing to note here: the ice-drip coffee after extraction will be put into a bottle and chilled for 12 hours before drinking. Because the freshly extracted ice-drip coffee has no taste, only sweet and sour but lacks mellowness, so after the extraction is completed, it must be placed in the refrigerator for 12 hours of low-temperature fermentation, which will give the ice-drip coffee an aromatic fermentation aroma and the original flavor will become richer (provided that the container containing the ice-drip coffee must be clean!)

Ice-drip coffee is different from cold brew coffee in that it does not taste better after being stored for two days. On the contrary, if the iced drip coffee is stored for more than 5 days, it will develop a rancid and sour taste, making it difficult to swallow. Therefore, the best tasting time for ice-drip coffee is within 3 days after 12 hours of low-temperature fermentation, and the storage time is recommended to be no more than 5 days.
