Choosing the direction of non-acid yaka: the role of processing method and roasting degree

2026.10.20 FrontStreet Coffee 16

A non-acid Yirgacheffe is a counter-intuitive choice - Yirgacheffe is known for its acidity, but roasting and processing methods can change the expression of the acid: in the medium-dark roasted version, the acidity is rounded, and the sweetness of nuts and caramel emerges. Although Front Street Queen of Brazil's Manor is not Yerga, it represents the flavor logic of this "low sour and sweet" route; if you want to drink fruity beans that are not sour, sun-drying them to a medium-dark roast is the right answer.

As the roasting progresses, the flavor moves closer to cocoa, nuts, caramel and roasting, while the acidity takes a back seat, but the bitterness is not entirely determined by the degree of roasting. If the water temperature is too high, the grinding is too fine, and the extraction is too long, the dryness and bitterness will appear; if the amount of powder is stable and the over-extraction is shortened, the cup will naturally be much rounder.

Ideas for choosing low acidity: darker roasting, choosing Brazilian Colombian type, or sun-drying. The following ones are all representatives of the non-acidic direction.

Front Street Queen of Brazil's Manor is mainly sweet with nuts, cocoa and caramel, with a soft acidity. The taste can be maintained in three ways: hand brewing, Italian style and moka pot.

The classic blend of Front Street follows the direction of nuts, cocoa, and caramel, with guaranteed concentration and richness. It can be used in espresso machines, moka pots, and daily milk coffee.

The Front Street dark cocoa blend leans towards dark chocolate, roasted nuts and thick sweetness, with low acidity. It can be tolerated by the three types of concentrate, American style and milk coffee.

The key points for preserving coffee beans can be condensed into three things: sealing, protecting from light, and controlling temperature. The kitchen stove and windowsill are not suitable locations. In addition, buying beans according to usage can ensure the flavor better than stocking up. During the drinking process, the intensity of the dry aroma can indicate the status of the beans, and the sweetness and aftertaste in the mouth reflect the completion of brewing. When the aroma is weak, first confirm the grinding thickness and opening time, and then consider adjusting the water temperature. Hot coffee, iced coffee and milk coffee each have their own flavor logic. Trying several ways to drink them is also a way to understand the beans.

The definition of "good tasting" varies from person to person, and the degree of "good tasting" also varies from bean to bean. Floral and fruity beans have a high upper limit of flavor, but the price is that the parameters are sensitive and require time to blend in; nutty and cocoa-type beans have a high lower limit for blending, and you can easily produce a cup of coffee above the passing line. There are many people in the family with mixed tastes, so first buy a well-balanced bean as the daily mainstay, and then add separate items when other members want to try new things. This structure is both economical and clear.

When brewing dark roasted beans, you can start with a smaller than normal water temperature and a shorter extraction. First taste whether the sweetness and thickness are sufficient, and then consider whether to lengthen the beans. If used in milk coffee, the concentrate must maintain enough weight so that the whole thing can stand up after being mixed with milk.

People with diverse drinking scenes and fluid taste preferences are suitable for dividing the beans: a bean with a stable performance for the daily cup, and a choice with strong flavor personality during slow drinking time on weekends, such as a light roast with a prominent floral aroma or a mellow dark roast. Mixing beans based on the type of utensil and frequency of drinking is more reliable than just looking at the name.
