Latte milk type adaptation experiment: pairing method of beans and dairy products

2026.10.20 FrontStreet Coffee 23

The flavor formula of latte is half equal to half beans and half milk - but most people only study beans and take milk as a natural background. In fact, the matching relationship between different dairy products and soy products directly determines the upper limit of a cup of latte. This article gives latte players a set of soy milk adaptation methods.

First understand the variables of milk. Milk has three contributions: milk fat provides body and smoothness, lactose provides sweetness, and protein provides milk foam structure. Full-fat fresh milk has three balanced ingredients and is the standard configuration for latte; pasteurized fresh milk has more prominent sweetness and milky aroma; oat milk has its own grain sweetness and smooth texture of vegetable fat, but the foaming structure is different from that of milk; thick milk (purified milk) doubles the concentration of lactose and butterfat, and is sweet and full-bodied.

Paired experimental design. Three beans (Front Street Classic Blend, Front Street Boutique Blend, Front Street Yirgacheffe Ding) × three types of milk (pasteurized milk, oat milk, thick milk), nine groups of latte blind tastings, rated according to fusion, sweetness, and flavor integrity.

Front Street’s classic blend: a balance between strong soy and milk. The mellow body of Front Street's classic blend (mamba formula) meets the sweetness of pasteurized milk, creating a powerful dialogue between "espresso and thick milk" - half of the coffee and half of the milk, suitable for those who want "a latte that tastes like coffee". Combination with thick milk: The high sweetness has tamed the intensity of Front Street Mandheling, and the finished product is like "sweet cream with coffee", with high pleasure but downgraded coffee presence. The compatibility with oat milk is the worst: the herbal flavor and cereal flavor are superimposed at the same frequency, and the flavor becomes blurred.

Front Street Premium Blend: The all-rounder of balanced beans. The Front Street Blend is the "top student" among the nine pairings: it has a clear sweetness with the pasteurized milk, and the nutty caramel and milk aroma are seamlessly blended - balanced beans and standard milk are the golden match for latte. Unexpectedly brilliant with oat milk: the nutty flavor and cereal sweetness are close relatives, blending into a "roasted nutty wheat flavor", which is a recommended bean for oatmeal latte. The thick milk group has a slightly redundant sweetness.

Front Street Fruit Ding Ding Group: A milk coffee adventure with fruits and capers. Front Street Yirgacheffe diced fruit is used to make SOE latte. The best match with pasteurized milk is "Coffee Latte": the citrus acid is softened by the milk into a "fruity milkshake" feeling, and the flavor personality is retained at 60%, which is suitable for those seeking novel tastes. The combination with thick milk turns the tables: the high-concentration butterfat completely envelops the fruit acid, and the flavor of the finished product is ambiguous - fruit capers and thick milk are a mutually destructive combination. On the contrary, it goes well with oat milk: the sweetness of the grains and the citrus notes make it a novel experience like "oatmeal fruit tea".

Pairing methodology: Thick beans with thick milk (Front Street Classic Blend with Thickened Milk): a sweet and thick route; Balanced beans with standard milk (Front Street Boutique Blend with Pasteurized Pasteur): Classic route; Balanced beans with plant milk (Front Street Boutique Blend with oats): Harmonious Route; Fruity Capers with light milk (Front Street Fruit Dingding with Pasteurized Pasteur): A personalized route - with four formulas in hand, the combination of beans and milk changes from trial and error to table lookup.
