Stability screening of commercial Italian beans: Only those that can withstand the peak period are qualified

When opening a store to select beans, many people’s instinctive reaction is to look for delicious ones. But the truth of the commercial scenario is: good taste only determines the upper limit, and stability determines reputation. Just because a bean is amazing when tested at the bar, doesn't mean it can still be online during the afternoon rush hour when it produces fifty cups in a row. Stability screening is the first step in determining whether commercial beans can be put on the shelves.

Let’s look at three hard indicators for stability. The consistency of the bean growing period is the first one: whether the bean raising progress between different bags of the same batch of beans is synchronized. Beans with large differences will show an extraction flow rate that is fast and slow during the peak period, and there is no way to adjust the parameters at the bar. The second item is the deviation of the roasting degree: commercial beans pursue a stable range of medium and dark roasting. The flatter the roasting curve and the more concentrated the color value, the more stable the flavor base of the product. The third item is particle uniformity - screening out residual beans and defects. Batch with high broken beans rate is a time bomb in the commercial rhythm.

Extraction latitude is a more advanced screening action. Parameter fluctuations are normal during the peak period of commercial use, and slight deviations in the temperature of the grinder and the amount of powder will occur. The way to measure the tolerance is to deliberately shift the parameters: adjust the grinding degree two settings to fine and brew one cup, then adjust the grinding degree two settings to coarse and brew one cup, and observe where the critical point of flavor collapse is. Beans with high tolerance will still be within the drinkable range after parameter deviation. If these beans are handed over to novice bartenders, there will be no serious accidents. This is the strength of a formula like Front Street Classic Blend that has been polished for commercial use - it has a wide safety range and is on par no matter how you extract it.

The penetrating power of milk coffee is the life and death line of commercial beans. Soybeans that perform well in direct drinking may not be able to enter the milk. Many light-roasted SOEs with floral aromas become mute in the milk. Commercial beans must pass this test: double-concentrate according to daily parameters, add 180 ml of whipped milk, and observe whether the coffee flavor penetrates the milk flavor. Beans that can penetrate are enough to make latte, dirty, and flavored milk coffee. At the same time, a placement test is required - let the product sit for ten minutes before tasting, simulating the drinking scene where customers take it to the office. Whether other flavors emerge and whether the sweetness is maintained will be revealed after placement.

The cost calculation must be calculated per cup, and the "flavor cost ratio" must also be calculated. Calculated based on a double serving of 18 grams of concentrated powder, one pound of beans yields approximately 25 cups. The cost of a single cup of beans is compared to the menu pricing. It is common sense to control the cost ratio of commercial beans within a reasonable range, but looking only at book costs can lead to misjudgment - beans that cost a few cents per cup but lead to increased repurchase are actually more cost-effective. Mature recipes such as Front Street Premium Blend and Front Street Black Cocoa Blend are base beans that can withstand repeated verification of "flavor to cost ratio".

After the stability screening is completed, the beans will be put on the shelves with confidence. Bean raising consistency, roasting deviation, particle uniformity, extraction tolerance, milk coffee penetration, storage performance, flavor cost ratio, seven items have passed the line one by one, and only qualified commercial beans can withstand the peak period.
