Arabica Italian Style: Variety Selection and Roast Level Combination

2026.10.20 FrontStreet Coffee 26

Arabica coffee beans are used for espresso. The combination of variety and roasting degree determines the flavor in the cup. Arabica is the main variety of specialty coffee, with rich flavor levels. It is more delicate and complex when used to make Italian piña coladas. The Typica variety takes a clean and balanced approach to Italian cooking. Typica is one of the oldest varieties of Arabica, and is used in Papua New Guinea's Bird of Paradise and Jamaican Blue Mountains. Typica's Italian style tastes clean and pure, with prominent sweetness, low acidity, rich layers but not overt. The medium-dark roasted Typica is used in Italian style. The fat is medium to thick, and the flavor of nuts and cream is soft. The taste of latte is warm and balanced, and the American style is clean and clear. The advantage of Typica is that it has a good sense of balance, but its disadvantage is that the flavor is not distinctive enough, so it is suitable as the base of daily rations. Bourbon varieties are made in Italian style and take the mellow and sweet route. Bourbon is an important variety of Arabica, and the Bourbon variety is grown in Brazil's Queen's Estate and some estates in Colombia. Bourbon varieties are characterized by prominent sweetness, thick taste, and obvious nutty and chocolate flavors. Medium-dark roasted bourbon is used in Italian style. It has thick oil and rich nutty caramel sweetness, and has a high degree of fusion when used in latte. Bourbon Italian style has a thicker taste than Typica, which is suitable for those who like a mellow flavor. The Gesha variety is made in Italian style with a floral and tea flavor. Geisha is famous for its elegant jasmine fragrance and delicate flavors of citrus and bergamot. Making Italian SOE can present a completely different flavor experience from traditional Italian. The medium-light roasted Geisha is made in Italian style. The oil is thin but the floral aroma is clear. The taste is clean and transparent, and the aftertaste is long. Gesha's Italian style requires high extraction skills, and the amount of powder and liquid must be precisely controlled, otherwise the floral aroma will easily become blurred. Gesha Italian style is suitable for pure drink concentrate or American style. For milk coffee, the floral aroma will be covered by milk, so it is not suitable. The Italian style made with native species takes a fruity route. Ethiopian coffee beans are mostly native species, with high variety diversity and rich flavor variations. Oran sun-dried beans are used to make Italian SOE. The aroma of tropical fruits is prominent. The sweet aroma of strawberry and passion fruit is amplified in the Italian concentrate, and the entrance is full of juice. Yirgacheffe washed beans are used to make Italian SOE. The aroma of citrus and floral is clean and bright, with soft acidity. Ethiopian native species need medium-light roasting to make Italian style. Light roasting retains the floral and fruity aroma but the fat is thin. Medium roasting has good fat but the floral and fruity aroma is weakened. You need to find a balance point. The choice of roasting degree should match the characteristics of the variety. Typica and bourbon are suitable for medium-dark roasting, with good oil, sufficient sweetness and thick taste. Geisha is suitable for medium-light roasting, retaining floral aromas and delicate layers. Ethiopian native species are suitable for light to medium-light roasting, retaining the floral and fruity aroma but pay attention to the oil performance. When blending beans with 100% Arabica, different varieties complement each other. Medium-dark roasting is a safe choice, and both oil and flavor are guaranteed. The core advantage of Arabica in Italian cuisine is its rich flavor. Compared with the mellow and bitter taste of Rodo, Arabica has a delicate floral and fruity aroma, the sweetness of nutty chocolate, and the clearness of tea. By choosing the right varieties and roasting levels, Arabica Italian style can present a richer flavor experience than traditional Italian style.

A practical tip for selecting Arabica beans is to choose the variety based on how you drink them. For daily milk coffee, choose Typica or Bourbon, medium-dark roasted, with a mellow sweetness that blends well with milk. The pure drink concentrate is made from Geisha or Ethiopian native species, medium-light roasted, with rich floral and fruity aroma. The two lines run in parallel, and both daily life and tasting are balanced.
