The charm of Pour over(V60) coffee is that the same coffee fruit grown in different production areas can have completely different flavors in the cup. Since there is no interference from milk and high-pressure extraction in hand brewing, the terroir characteristics of the production area are fully amplified. Understanding the production area means understanding the flavor language of Pour over(V60) coffee. Ethiopia is the origin of coffee, and it is also a production area that hand brewing enthusiasts cannot avoid. Yirgacheffe is the starting point for many people to drink specialty coffee. The aroma of citrus, berries and flowers is bright and soft, and the acidity is like the sweetness and sourness of the fruit itself rather than the irritating acidity. Oiran is another style. The tropical fruit aroma is extremely prominent. The aroma of strawberry, passion fruit, jackfruit and even lychee is rich in layers, with obvious sweetness, and the entrance is smooth and full of juice. These two types of beans represent different directions of sun-dried and washed beans in Ethiopia. Sun-dried beans have a strong fruity aroma, while washed beans are clean and clear. Each has its fans. Kenyan production areas take the bright and acidic route. Kenyan washed beans have the core characteristics of cherry tomatoes, ebony sour aroma and full juice feeling. They use SL28 and SL34 varieties. The 72-hour double washing and fermentation process stimulates the fruity aroma, and is lightly roasted to retain the lively acidity. The mouth is as full as freshly squeezed juice, with a balance of sour and sweet, and highly recognizable. For those who like bright fruit acidity, Kenya is a must-try region. The Panama region is famous for its Geisha variety. Jade Manor Red Label Geisha has an elegant jasmine fragrance, delicate flavors like citrus, bergamot and black tea, with a clean and transparent taste and a long aftertaste. The price of Geisha is higher than that of ordinary specialty beans, but its unique aroma makes it the ultimate pursuit of many coffee lovers. The charm of Gesha is that it doesn't taste like traditional "coffee", but more like a cup of floral tea. The production areas in Central and South America take the route of nuts and chocolate. Brazilian Queen's Manor has very low acidity, rich aroma of nuts and cocoa, obvious caramel sweetness, and a smooth and warm entrance. It is suitable for hand brewing or Italian style. Colombian Ceja follows the double anaerobic sun-drying route. The juice of passion fruit, blueberry and grape is outstanding, and the bright fruit acid is refreshing and soft. It is a representative of the fruity aroma in the production areas of Central and South America. The Indonesian production area is the home of mellow hand brews. Mandheling adopts a dark roasting process, which has very low acidity, rich aroma of herbs and dark chocolate, and rich layers. It is suitable for friends who like a heavy taste. Papua New Guinea's Bird of Paradise is known as the "Little Blue Mountain" because its flavor and texture are close to those of the Blue Mountains. The Typica variety is grown in volcanic soil and has a clean and pure taste with outstanding sweetness. Choosing a production area is like choosing a taste preference. If you like floral and fruity aromas, go to Ethiopia and Kenya. If you like nutty sweetness, go to Brazil and Colombia. If you like mellow taste, go to Indonesia and the Papua New Guinea Highlands. If you like floral and tea-like aromas, go to Panama Gesha. There is no good or bad, only whether it suits your taste buds or not.

For beginners who want to start brewing by hand, it is recommended to start with washed Ethiopian beans. The acidity is soft and bright, and it is highly receptive. If you want to explore more flavors after drinking for a while, you can try sun-dried Oiran or Kenyan cherry tomatoes, which have a more fruity aroma. Later, you can challenge the tea taste and floral aroma of Gesha, or the mellow herbaceous aroma of Mandheling. Exploring production areas is an endless road of flavor. Every time you change a production area, it is like opening a new door to taste.
