Black coffee|Why is iced drip coffee more expensive than American Pour over(V60) coffee? How is iced drip coffee made? Is it time-consuming to make a cup of iced drip coffee?

Black coffee generally refers to pure coffee with nothing added except water. American style, pour-over, ice-drip, etc. are all members of black coffee. Because they do not add any ingredients that can affect the taste of coffee, such as milk, cream, sugar, etc., the taste of coffee can be displayed more purely.
I believe it is not difficult for everyone to find that the price of ice dripping in these black coffees is often on the high side. If a cafe sells ice drippings, its price will most likely be higher than American and Pour over(V60) ones. For example, the Front Street store is a good example. Even if they use the same type of beans for production, the price of Bingdi is higher than that of American and Pour over(V60) products.

This has made many customers and friends curious: "Why is the price of the same coffee beans produced with ice dripping higher than that of other categories?"

There are two reasons! The first one is because compared to other black coffees, the production of ice-drip coffee takes longer and the process is more cumbersome!

Longer production time and more cumbersome production processes
Regardless of the type of black coffee, their production requires the use of water as a solvent to dissolve the flavor substances in the coffee. The temperature of the water will determine the speed of dissolution! in"How much water is used to make the best coffee?"Front Street mentioned in this tweet that the kinetic energy of water molecules is affected by temperature. When the water temperature is higher, the faster the water dissolves flavor substances, and vice versa.
Most black coffees such as Pour over(V60) and American-style coffee are extracted using hot water, so their preparation time does not take long and can be finished in a few minutes. Ice drip coffee is completely different. It is a type of cold brew coffee that is extracted using very low temperature ice water. However, because the water temperature is too low, the extraction efficiency is very low, so the extraction time often takes up to several hours.

图片

At this time, a professional ice dripping bottle is usually used.(You can also use it without it), through the control of the drip speed valve, the ice water drips slowly in the form of water droplets, thereby extending the overall extraction time and allowing the coffee to obtain a complete extraction.
Take Front Street's ice-drip production as an example: Front Street generally uses 60g of coffee powder when making ice-drip coffee, and the parameters are a powder-to-liquid ratio of 1:10, and the dripping frequency of ice water is about 7 to 8 drops per 10 seconds. Under such parameters, the entire extraction process usually takes about 5 to 8 hours.

After the extraction is completed, the ice-drip coffee cannot be drunk immediately because it still needs to be fermented to develop the flavor. So we need to pour the filtered ice-drip coffee into a sealed bottle and put it in the refrigerator for "low-temperature maturation". Usually Front Street will ferment it in the refrigerator for more than 8 hours to ensure that the ice drops can ferment the unique wine aroma/fermentation. When the fermentation is completed, we can officially start enjoying the delicious ice-drip coffee!

From the ice-drip production shared by Front Street, I believe it is not difficult for everyone to see that the production process of ice-drip coffee is very cumbersome and time-consuming. A rough calculation shows that it takes more than 13 hours to make a 600ml pot of ice-drip coffee, which is considered a relatively fast speed.
The standard for Front Street's ice-drip coffee is 200ml of ice-drip coffee plus 1 to 2 ice cubes. In other words, the 600ml coffee that has gone through "a lot of hard work" can only produce 3 cups. Whether it's Pour over(V60) coffee or Americano coffee, the longest it takes for them to produce three cups is about ten minutes. In comparison, the time cost of making ice-drip coffee is dozens of times higher.

higher material costs
But more often than not, the price of iced drip coffee is mainly due to the cost of materials. Still using the above example, Front Street used 60g of coffee powder to make 600ml of ice-drip coffee liquid, but the final quantity that could be produced was only 3 cups. If this 60g of coffee powder is placed on a Pour over(V60) coffee product, it can produce 4 cups, because the standard for Pour over(V60) coffee is 15g of powder for one pot.

Since a cup of iced drip coffee uses more powder and costs more, its price is usually higher than other black coffees. To sum up, everyone knows why iced drip coffee is more expensive most of the time. Not only because its material cost is higher, but also because it takes longer to make~
