Because Bingbok, which is purified milk, is often shared on Front Street recently, many friends are curious about the difference between milk coffee made with this kind of milk and that made with regular fresh milk. If you explain it simply, the taste of milk will be richer, and the overall taste will be thicker.

But just saying that, Front Street believes that friends who have never tasted them will have difficulty in correctly imagining their texture, so you might as well actually make a cup of milk coffee made with purified milk to experience their texture and taste.
In addition to purchasing Ice Bock online, you can also make it yourself offline, which is very simple! With just two simple steps, we can make a high-concentration milk. So now Front Street will share with you how to make purified milk~

The Making of Ice Bock
As Front Street said before, it's very well made! often! simple! one! ! ! ! There are only two steps in total. The first step is to put a bottle of fresh milk in the refrigerator!

The second step is to take out the milk and defrost it, it’s that simple~

Why is it so simple? I believe everyone knows that the so-called icebock refers to milk with less water, more protein, lactose, fat and other nutrients and higher concentration. If we want to make such a high-concentration milk, we need to remove part of the water in the milk. Freezing milk and then thawing it removes the moisture from the milk.
Because the freezing point of water is 0°C, and the freezing points of other substances in milk are lower than water, this causes the water in the milk to freeze first when freezing, while other substances such as proteins and fats remain liquid and will gradually freeze as the temperature drops. When thawing, proteins, fats and other substances will melt before water because they have lower freezing points.

In other words, other substances in the milk will thaw faster than the water. We only need to remove the water before it is completely thawed to extract part of the water in the milk and complete the purification of the milk. This is the purpose of purification achieved by utilizing the difference in freezing points of different substances, also known as the "freezing purification method". Many other liquids besides milk can also be purified in this way.

So to what specific extent does the purification have to be completed? In fact, it all works, it depends on the milk concentration you want. The more that is thawed, the lower the concentration will be. Generally, the amount of defrosted milk in Front Street is about one-third of the original amount. For example, a bottle of milk of about 900ml will defrost 300ml, and its concentration will be half higher than the original. (Different freezing and thawing methods will produce different concentrations, so Front Street can only give a rough idea here)
At such a concentration, it tastes just right. The taste and texture of the milk are significantly improved, but there is no obvious salty taste. When using it to make milk coffee, you don’t need to adjust the parameters too much, and the taste is not easy to get greasy.

After we successfully obtain the purified milk, we can start making purified milk coffee! Among all the milk coffees, Dirty is the easiest to make! Because as Front Street has always introduced, since the milk and coffee in Dirty are separated rather than integrated, the taste and texture of the milk will not have a big impact on the coffee. Therefore, when making Dirty with purified milk, we can directly replace it with equal amounts~
Make Dirty with Ice Bock
For example, the original ratio used by Front Street to make Dirty was 1:4, 40ml of espresso paired with 160ml of fresh milk. When we replace the fresh milk with iceberg, we can also use the same 1:4 ratio, with 40ml of espresso paired with 160ml of iceberg.

When making icebock dirty, it is best to use medium-dark roasted blended beans or SOE single-origin beans, because they have a richer caramel-like aroma and a rich flavor that can form a clear contrast with the sweet milk and have a long aftertaste. If you are looking for stability and cost-effectiveness, buy Front Street Classic Blend and Front Street Dark Cocoa Basic Blend. They are not only rich in oil, but also have rich aromas of butter and roasted chestnuts;

If you like the unique aroma of single-origin beans, we recommend Front Street Queen’s Estate SOE and Front Street Sumatra·Front Street PWN Golden Mandheling SOE. They will have rich caramel and chocolate aromas when extracted, which can form a more vivid contrast with purified milk;

If you want less contrast and a fresher coffee taste, you can choose medium or medium-light coffee beans for making. For example, the Front Street Strawberry Candy Espresso, Front Street Oiran SOE, etc. in the Front Street Bean Menu, which are specially roasted for Italian style, can extract a cup of espresso with a strong fruity flavor. The Dirty made with them and purified milk has a unique flavor~

If you use purified milk to make other milk coffee...
But if you want to use purified milk to make milk coffee other than dirty, such as latte, Australian white, kabob, etc., you need to pay attention to adjusting the proportion! Why? Because these milk coffees need to blend milk and coffee, and the taste of purified milk itself will be much stronger than that of fresh milk. If we use the same proportion to make these milk coffees, the taste of milk will easily cover up the taste of coffee!

Take Front Street as an example. When Front Street uses the classic blend of Front Street to make latte, the ratio is 1:5, the concentration is 40ml (20g powder extracts 40ml coffee liquid in 30 seconds), and the fresh milk is 200ml. The latte produced is mellow and fragrant, with a balanced taste (coffee and milk) and outstanding flavor;
But if the milk is replaced with purified milk and the same proportion is used, the latte produced will become mainly milky, supplemented by coffee flavor, and then the flavor performance will be slightly inferior. At the same time, it will be easy to get tired of drinking because the milky flavor is too strong and the mouthfeel is too thick.

In order to prevent this from happening, we need to adjust the proportion. After testing on the front street, it is most suitable to make a latte by reducing the amount of milk by 20ml on the original basis, that is, using a ratio of 1:4.5.
40ml uses the concentrate made by Front Street's classic blend as the base, and then beats 180ml of milk for blending. Finally, we get a delicious cup of ultra-thick latte made from purified milk! Compared with the original, the taste of coffee will no longer be masked, but purified milk will give the coffee a more mellow taste, and the milk aroma will be more prominent, which is very good.

Of course, in addition to this, we can also choose to increase the concentration of the coffee, such as using more powder to extract the same liquid weight. However, doing so will not only increase the overall flavor concentration, increase our burden when tasting, and make it easier to get bored, but it will also be more troublesome and costly to adjust parameters.
So when we use purified milk to make milk coffee, it is best to adjust the ratio of coffee and milk, especially starting from the milk side. Whether it's latte, Australian white, or cappuccino, any milk coffee that requires the fusion of milk and coffee.
