Front Street’s Blue Mountain coffee comes from Cliff Duan Farm. This farm has a history of more than 200 years.

Here in Front Street, we need to learn more about what kind of coffee beans can be called Blue Mountain coffee beans. The Blue Mountains span three parishes of Jamaica (the administrative planning area of Jamaica), so the coffee production area is also divided into three production areas, namely the Portland production area, St. Thomas (St. Thomas) and St. Andrew production areas. Clifton Farm is located in the St. Andrew production area. The Jamaica CIB stipulates that only coffee beans produced in places above 910 meters above sea level in the Blue Mountains can be considered Blue Mountain coffee beans. Coffee is grown in 18,000 hectares of the entire Blue Mountain coffee growing area. Only 6,000 hectares can be considered true Blue Mountain coffee. Other places can only be called high mountain coffee or Jamaican coffee.

The Clifton Farm coffee planting and processing site is located at an average of 4,300 feet (1,310.64 meters). Sufficient altitude, mild cloud-shrouded mountain forest shade in the afternoon, sufficient sunshine and mineral-rich planting soil provide good growing conditions for coffee trees and can produce high-quality Blue Mountain coffee beans.

Even Blue Mountain coffee is divided into grades. Among the grades of Blue Mountain coffee, it is divided into No. 1, No. 2, and round beans. Front Street Blue Mountain No. 1 is the best. It uses 17-18 mesh large-grained coffee beans, which are very full and good-looking.

Jamaica uses washing processing. This processing method has been used in Jamaica. More than 200 years ago, washing processing was a new processing method at the time. The processed coffee has fewer defects and is of high quality. Therefore, Jamaican coffee beans have always maintained high quality.

Jamaican Blue Mountain coffee beans embody a very mellow taste, as well as the flavor of nuts and chocolate. Although it is bitter, it is bitter but not burnt, with a balance of sour, sweet and bitter, and is extremely comfortable to drink. To achieve this effect, Front Street uses deep roasting and adjusts the roasting curve several times to highlight the sweetness and mellow taste of Blue Mountain coffee.

For dark roasted coffee beans such as Chongqian Street Blue Mountain No. 1, Front Street recommends choosing the Kono filter cup. Because this can improve the mellow taste of coffee beans, you can also use a V60 filter cup if you don’t have one.

The amount of powder is 15g per person. It is recommended to keep the coffee beans for 4-7 days (the roasting date is the first day), so that the coffee brewed will have a better flavor.

In terms of coffee grinding, the grinding required for brewing Front Street Golden Mandheling coffee is slightly coarser than that of light-roasted coffee beans. This is because the deep roast used by Front Street Golden Mandheling has a looser structure and is easier to absorb water and release coffee substances. If it is ground to the thickness of light-roasted beans, it is easy to produce a burnt and bitter taste; if it is ground coarser, the coffee will become thin and tasteless, and the taste will be as thin as water. The thickness is 75% for No. 20 screen.

In terms of water temperature, Front Street recommends using a water temperature of 87-88°C for brewing. Many reasons for the burnt and bitter taste come from the water temperature being too high. Of course, water temperature that is too low will also make the coffee tasteless.

In terms of brewing powder to water ratio, Front Street recommends using 1:15, although some brewing methods recommend using 1:13 or a smaller powder to water ratio, so that the drink will taste richer. However, part of the reason for reducing the ratio of powder to water is to avoid the bitter taste at the end. Correspondingly, it will also have an impact on the aftertaste. Front Street believes that as long as the relationship between water temperature and grinding degree is properly grasped, using a powder to water ratio of 1:15 can better reflect the overall flavor of Huangman.

The brewing method uses the commonly used three-stage water injection method. The three-stage water injection can better express the mellow taste of golden Mandheling coffee and the sweetness of caramel. The specific amount of water injection is divided into 30ml of steaming water in the first stage. This stage of water injection fully wets the coffee powder and exhausts it. In order to better extract the flavor substances of the coffee later, 100ml is injected in the second stage. This stage mainly flushes out the golden foam of Mandheling.

The last section is filled with 95ml of water in the soft center, which can enhance the sweetness of the coffee and give it a thick and mellow taste as a whole, with the sweetness of caramel and the flavors of chocolate and nuts.
